Ways To Soften Cashews For Vegan Alfredo Sauce

BEST VEGAN ALFREDO | Dairy-free Pasta Sauce

Soaking cashews allows you to blend them up into any creamy dairy substitute. Otherwise, you might end up with a gritty sauce. There are several ways to do it, and the results are identical. Depending on how much lead time you have, you can do any of the following:

  • Soak them in cold water for at least four or up to 24 hours.
  • Soak them in boiling water for 30 minutes.
  • Soak them in actively simmering water on the stovetop for 10 minutes.

What Pasta Goes With Vegan Alfredo Sauce

I find that wider, thicker pastas like fettuccine, tagliatelle, papperdelle, and linguine go best with this dairy-free alfredo sauce. The thick sauce needs a long, thick pasta that it can cling to.

You can also use pasta shapes that help hold the rich, creamy vegan alfredo sauce in. Pastas such as fusilli and rotini could work.

Can I Add Other Ingredients To Lactose Free Fettuccine Alfredo

Of course! Some of our favorite ingredients we like to add to our lactose free fettuccine Alfredo are vegetables. Fresh sautéed peas or mushrooms taste great in Alfredo, and so does broccoli, but you can also throw in nearly any veggie you like. If you enjoy meat, also try tossing in chicken, bacon, or ham. Honestly, your options are almost endless thanks to the sauce!

How To Make Dairy

Step 1 – If you havent already, start by preparing the alfredo sauce. Set aside. Prepare pasta according to package instructions. When pasta is cooked, reserve one cup of cooking water before draining . Drain and set aside while you finish the rest.

Step 2 -While pasta is cooking, slice the mushrooms and cut the chicken. Add mushrooms to a very large skillet and cook over medium-high until they start to soften, about 3 to 5 minutes, stirring often . Remove from skillet and set aside.

Step 3 – In the same skillet, add olive oil and chicken pieces. Season with salt. Cook for about 5 to 7 minutes or until chicken is cooked through.

Step 4 – Reduce heat to very low heat. Return mushrooms to the skillet. Add alfredo sauce and mix with chicken and mushrooms.

Step 5 – Add linguine and ¼ cup reserved pasta water. Mix again gently until all the pasta is well coated with the sauce and chicken + mushrooms are well distributed. If necessary, add more pasta water, a little at a time until you reach the perfect consistency . I recommend using tongs to mix the pasta with the sauce.

Step 6 – Turn off the heat, taste, adjust seasonings if needed and serve immediately with chopped parsley.

A Note For Hesitant Coconut Flavor Friends

I am not a huge fan of the taste of coconut. I am just not. I didnt grow up with a lot of coconut flavored anything, and no matter how hard I try, I just cant get used to it. I cant drink it on its own, and I rarely cook with coconut oil other than baking because I dont like the finished taste!

I promise the coconut flavor is completely masked by *all* that butter and garlic. When you get that garlic super fragrant and use amazing butter, the alfredo sauce simply tastes likecreamy, garlicy, amazing alfredo sauce!

In order to make this vegan Alfredo sauce recipe, the first thing you want to do is to soak your raw cashews. In order to do this, you can place in a jar and cover with water for 6-8 hours or overnight. Another option you have is to boil the cashews for 30 minutes. Lastly, if you have a very high powdered blender, like a Vitamix, you dont need to soak in water at all for this recipe.

Once your cashews are ready, you are going to place all the ingredients into a high powdered blender or food processors. Blend until you have a smooth and creamy consistency. If the dairy free Alfredo sauce recipe is too thick, drizzle a little more unsweetened dairy free milk inside until you have reached your desired consistency. Remember, this is supposed to be a thicker sauce as you really want it to coat and stick to those favorite pasta noodles of yours.

Once you have your sauce ready, pour it onto hot pasta noodles or place into an air tight container for up to 1 week and place in fridge until ready to use. This dairy free Alfredo sauce will thicken upon being in refrigerator.
