Taste: Tough the basil shreds were visible to the eye, they were undetectable to the taste buds. Unfortunately, this sauce was lacking the authentic flavor its packaging foreshadowed.
Eat This, Not That! Verdict:
Considering the rustic labeling and Italian name that translates to “antique kitchen,” I expected this sauce to boast more pronounced Mediterranean flavors. Rather than getting a refreshing whiff of tomato and basil, my nostrils were hit with an unpalatable dish detergent scent. My colleague also affirmed that the taste is almost Windex-like. What in the world? To say the least, I was confused.
Another Brooklynite Victoria Has Been Producing Red Sauce Since 1929
Victoria uses a 90-minute kettle-cooking process a direct challenge to mainstream manufacturers that use heat-transfer tubes to flash cook their sauces that results in a beautiful texture of whole tomatoes broken down in their own juices until irregularly lumpy.
Without puree, the base was a little on the waterier side, but the coarse tomatoes were plentiful enough that it wasn’t runny.
As with the sauce from Carbone and Rao’s, I could see some oil floating, but I more noticed the diced onions, tomato seeds, and smaller pieces of basil, which were dark and fine.
It tasted clean and fresh, sweet at first, then suddenly sharp before it tapered off into sweet again a lovely ride.
Unfortunately, this journey ended early when the sauce was served warm. The flavor considerably lightened up and became fleeting and shallow.
The basil remained detectable, distributing well and evenly across the pasta in its tiny pieces, but the tomato lost a lot of its freshness.
It just wasn’t very assertive, even though the water didn’t separate as much as expected. Not devoid of personality but in need of a partner, this would pair well with high-quality or fresh pasta.

Mezzetta Napa Valley Homemade Marinara
Moving on to store-bought marinara sauces that look a little nicer, we have Mezzetta Napa Valley Homemade Sauce. The sauce comes in a good-looking jar with a fancy label, winning points for looks, while even the name of the brand evokes an Italian essence. But that doesn’t mean the sauce is good. In fact, it’s bland, overly salty, and feels like a rip-off, considering the higher price.
One review of the pasta sauce was precise in its criticism, calling Mezzetta’s stuff “flavorless.” Another described it as downright “horrible,” while quite a few complained about the overwhelming salt content of this jarred marinara sauce. So basically, not only will the Mezzetta Napa Valley Homemade Sauce have a pretty poor flavor, but it will also likely be way too salty for your palate, seriously letting you down. So, next time you’re grocery shopping, just skip this purchase.

Aldi Specially Selected Premium Marinara
In terms of money-saving groceries, Aldi is a pretty great store to shop at. Nothing is too expensive, and there are a ton of options. The store brand of marinara sauce there, too, is pretty impressive. Aldi’s Specially Selected Premium Marinara isn’t the absolute best premade sauce on the market, to be fair, but it might just surprise you anyway.
According to one review of Aldi’s sauce, it’s decent overall, though “a little on the bland side.” But there’s also a bit of a culinary conspiracy theory that says the Aldi sauce is actually the same as Rao’s Marinara sauce, meaning you’d be getting an especially good deal on an amazing store-bought sauce if you buy the Aldi brand. Appearance & Consistency: Though the general consistency was light, albeit with sporadic tomato lumps, this sauce was jam-packed with spices by the looks of it. Not to mention, the fresh carrots added some crunchiness, which I can predict will work well in a slew of recipes.
Taste: Despite being the lowest in sodium of all our test panelists, The Silver Palate didn’t disappoint my taste buds. Sure, it wasn’t as umami-packed as some of the other picks, but it did boast unexpected fresh flavors and hearty spices.
Eat This, Not That! Verdict:
This pick is lacking sodium, but that doesn’t mean it’s not rife with flavor. Instead of relying on the heart-harming stuff, The Silver Palate’s marinara takes advantage of quality ingredients, such as imported San Marzano tomatoes and EVOO, to lend the sauce its complexity. This surprisingly delicious sauce proves that you can keep the salt off your fork without compromising flavor.

Second Runner Up: Classico
Many of us on the team grew up with Classico, so it felt familiar and homey. The flavor doesn’t knock it out of the park — you likely won’t be taking secret spoonfuls straight from the jar like we were with Rao’s. But it has a comforting flavor, and is a solid choice to keep on hand in the pantry for quick, versatile meals.
While we all felt it was a good enough weeknight contender, Carrie found it a bit too sweet and Summer found the flavor unbalanced. Claudia had qualms with the texture, finding it a little soupy with very little coatability.
Emma, on the other hand, loved the chunky texture, as did I — it straddles that tough to achieve texture zone of perfectly chunky but still uniform enough to incorporate into your noodles. Lets get to it, shall we? I present the indisputable and 1,000% correct Pasta Sauce Power Rankings. The general rules are:
I got jarred sauce , bought standard marinara or the closest approximation I could find and tried to include no more than one jar per brand. There are a lot of sauces here and, just as when looking at a list of Chumbawamba members, it can become overwhelming and difficult to tell them apart. You wont really go wrong with, say, the top dozen or so sauces on this list.
I ranked these by taste and attractiveness of packaging lets face it, when youre looking for a new pasta sauce, its usually the simple/earnestly rustic label that gets your attention.
Cost is difficult to pin down and, given theres a wide variety of prices you might pay depending on the retailer, I didnt use it as a metric. That said, when something is a particularly good value, I note that in the ranking.
1. Raos Marinara
This is a little complicated, so bear with me. In December, I tweeted out a photo of Victoria marinara sauce and declared it the best on the market. That was incorrect, and we regret the error. However.
Victoria does make the best sauce, but its the premium White Linen brand, typically found at Costco, thats superior, not the standard marinara . So: Why not just put Victoria White Linen at the top of the ranking?

In Addition To Being A Sauce Maker Carbone Is A Michelin
This restaurant’s 2013 opening has made quite a mark on the New York City food scene.
Between its old-school dining experience, exclusivity hook with reservations released only once a week, mega-powered ownership, and Michelin-starred cuisine, its success is strategic and so is itssauce’s formula.
At first glance, it was considerably darker than the other sauces a deep brick with scarlet oil splotches and visibly wilted fresh basil.
It was already sweet and rich when cold, and though it uses puree, whole tomatoes are listed first in the ingredients, which was evident in its chunky texture.
There was a lingering whole-mouth feel to the sauce, with a malty, mushroom-like sense and a reminder of cheese, even though none is used in the recipe.
It immediately struck me that this is the kind of sauce you’d want to put on a thick, breaded cutlet for chicken Parmesan.
This impression got stronger after it was warmed and mixed into the pasta, to which it clung well.
The maltiness opened up to be less mushroom-like and more reminiscent of caramelized onions. It was a flavor that was hard to place and difficult to define, but not unpleasant.
There was a little tartness at the end to counterbalance the earthiness for an overall satisfying bite that would be made better only with chicken and mozzarella.
