1. Rinse all the veggies well. Slice the onions thin. Chop bell peppers, carrots, french beans and cabbage to thin juliennes. Chop garlic and chilli as well.

2. Bring water to a boil in a large pot. Then add noodles and cook them al dente. Please follow the pack for the timings.

3. Drain them to a colander and rinse under running water. This helps to remove excess starch and keeps the noodles less sticky.

4. Drain off completely. Add 1 tsp oil and toss the noodles. This prevents them from turning sticky. Set aside.

  • Make sure not to over cook the vegetables. Just give them 2-3 minutes on high heat until they are no longer raw.
  • You can add or replace vegetables of your choice. Some additional options are broccoli, mushrooms, snow peas, bean sprouts and bok choy.
  • Save some of the water the noodles are boiling in. Use this water later if the noodles get dry or you want them to be a little more saucy.

    Cook the ramen noodles according to the package directions. Do not overcook them, al dente noodles work the best. Reserve the starchy water.

    In a medium pan heat butter. Add garlic and saute for 30 seconds or until fragrant. Remember to not brown the garlic. Add the soy sauce, chutney, and brown sugar. Mix well and cook on low heat for 30 seconds. Add the cooked noodles.

    Mix well with a pair of tongs. Add the starchy water from the cooked noodles and cook for 2 to 3 minutes or until most of the water has evaporated.

    Move the noodles to one side and add an egg to the empty side of the pan. Cook the egg and then mix it with the noodles. Turn the heat off.

    Stir frying the veggies & hakka noodles will all take less than 4 to 5 mins since it is done on a high flame. So do attend the pan all the time and keep tossing or mixing with a spatula to prevent overcooking & burning.

    What You’ll Need

  • Sauces: Regular soy sauce, oyster sauce, sriracha sauce , chili garlic sauce and white vinegar.
  • Spices: Red chili flakes, brown sugar , freshly grounded black pepper, white pepper and salt.
  • Toasted sesame oil is used in this recipe not the plain sesame oil. The one made from toasted sesame seeds has a nutty aroma and flavour. You can skip it if you like but I highly recommend adding it.
  • Use either chicken stock cube or chicken powder.
  • Vegetables: Red onion is optional but it adds a nice colour. Cabbage, bell pepper , carrots, spring onion and green chilies all contribute to the flavour of these noodles.
  • Chicken can also be replaced with the protein of your choice.
  • Use Chinese noodles if you can find them, otherwise spaghetti or egg noodles are fine too.
