    Exhorresco by Burns & McCoy. Excellent, rich flavor and it uses 7 Pot Primos which seems to be rare in sauces Ive experienced. Its hot AF too!

    Red Habanero by El Yucateco. Good flavor, solid heat, and reasonable price. This is an everyday hot sauce, and I love it.

    The Last Dab by Heatonist. I bought a bottle of this when Hot Ones first started selling it, and man is it tasty. Its got a great mustard like flavor that compliments most anything. And its crazy hot.

    Dirty Dicks. Sweet, tropical, and surprisingly spicy. Its like a Hawaiian BBQ sauce mixed with hot sauce. I could easily go through a bottle of this a week.

    Original Tabasco. Maybe a controversial choice, in this day and age , but its a fucking classic. Also, I travel the world for work, and you can find it everywhere. Even countries that dont really like spicy food . Tabasco was my go to for many many years, and will always have a special place in my heart.

    How To Grow Ghost Peppers Outside

    Ghost peppers grow well when temperatures are at least 70 degrees Fahrenheit .

    You can prepare your peppers to go outside around the 8 week mark, when plants are about 4 inches tall and the last threat of frost has passed. The process of hardening off your ghost seedlings is a controlled, systematic way in which you toughen them up so they arent shocked when they go outside.

    To sum up, this is a two-week process: indoors and outdoors. During the first week, point a small fan at your seedlings for 15 minutes the first day.

    Each day, thereafter, increase the amount of time the fan runs

    For the last week, place your ghost plants in a shady, outdoor spot and leave them out for 15 minutes. Increase the amount of direct sunshine and outdoor time each day just like you did with the indoor phase. On the last day, leave your seedlings outside one whole day and night.

    The other day I arrived at the office to find a bottle on my desk. It was an old beer bottle, but inside wasnt the usual pale yellow liquid. Instead, this bottle was filled with a thick, orange liquid. This definitely wasnt beer.

    Thinking it was garbage, I was about to throw away the bottle when a colleague came over and said, You like hot sauce, dont you? Try this. And he reached over, twisted off the bottle cap and poured out a bit into a paper cup.

    I asked him if he had any tortilla chips, but he didnt. No matter you dont need chips to taste a salsa.

    First, I took a sniff of the salsa. It smelled like vinegar, lime juice and garlic. The scent was innocent enough, but there must have been some powerful juices in that bottle as while smelling it my nose started to tickle and my eyes started to water.

    Of course, if the salsa was orange, it had to have been made with habanerosone of the most fiery chiles on the Scoville scale.

    I took a swig. A few of my of my office mates looked at me in shock. Isnt it a little too early to be doing salsa shots? asked one.

    But before answering, I poured myself another taste of the habanero salsa. I needed to confirm that it was indeed as refreshing and delicious as I thought it was. And yes, it was.

    I asked him for the recipe and he obliged me. And after testing it to make sure it worked, here it is.

    In a nutshell, your cooking steps include: Chopping, Cooking, Simmering, Processing, Bottling. Done! Easy!

    The unfortunate part of this recipe is that it is best to wait a few days or even longer to let the flavors mingle and mellow slightly in the bottle. Of course you can eat it right away, but I like the flavor that much more after waiting.

    The flavor is spicy for sure, but somewhat fruity from the ghosts and savory with the tomatoes. This is one of my very favorites.

    Make your own ghost pepper hot sauce at home with this recipe, which includes plenty of chopped ghost peppers, tomatoes, vinegar and salt. Big flavor, big spice! With a pleasant blast of heat. Drizzle it over everything!

    Ghost pepper hot sauce coming at you, baby! You GOTTA have some ghost pepper sauce in the fridge for times when you need that extra bit of heat. Our ghost pepper plants werent quite as productive as our 7-pot plants this year, but we still got plenty of pods for whipping up some hot sauce.

    Hot sauces are one of my favorite foods to make. Ive become a bit fanatical about it, really. Ive come to need a big variety on hand for all the different types of meals I make. You can tell by the growing collection of Hot Sauce Recipes on the web site.

    Ive been moving into making flavors and combinations of all different sorts, but were keeping it super simple with this sauce. Sometimes simple is best.

    With only 7 ingredients, you can make this sauce in about a half an hour, not including chopping time. Most of the time is spent watching the ingredients simmer to cook down a bit and let the flavors meld.

    How Long Will This Hot Sauce Keep

    It should keep a few months easily in the fridge, or even longer. Its all about the acidity. To be technical, target level ph for shelf stable foods is below 4.6 ph, but should probably be lower for home cooks, around 4.0 or so, to account for errors. I have not measured the ph of this sauce, but I wont have it around very long anyway. If youre concerned, add more vinegar to lower the ph.

    The best ph meters that I recommend are from Thermoworks. Get yourself a ph meter from Thermoworks today. I am a happy affiliate.
