What Is A Dry Rub

A dry rub is a mixture of dried spices that is rubbed directly onto meat before cooking. Most BBQ joints in Texas will take their rub recipes to the grave. In Central Texas they will swear by a 50/50 mixture of salt and pepper, also known as âdalmation rubâ.

This particular recipe is for a sweet rub, meaning it includes sugar. Which adds a wonderful layer of sweetness that complements the meats while they cook low and slow.

This sweet rub is perfect for chicken and pork. This is a rub that I often use when smoking a pork shoulder for pulled pork, or on pork ribs.

Can A Steak Be Over Marinated

YES! If you use an acidic based marinade, you can make your steaks TOUGHER! A good rule of thumb is to leave out major acids when you are marinating a good quality steak overnight because the acids can make it tough instead of breaking down the meat fibres like its supposed to. If you are marinating for 2-4 hours, you can use lemon juice or another acid in your marinade. I dont use lemon juice or acids because I prefer to buy good quality steaks, like the T-Bone Steaks in the photos.

One of the easiest recipes to make in the slow cooker is pulled pork sandwiches! Only two ingredients and youll have dinner cooking away.

This is a classic recipe that we love serving with Slow Cooker Mac and Cheese or Root Beer Baked Beans.

I believe this recipe was the third recipe on my blog, first published in February of 2013! Though this is one of my oldest recipes and is one that stands the test of time.

Horseradish cream sauce is a great complement to prime rib, roast beef, and even steak cuts like filet mignon. It is also great for roast beef sandwiches.

You can make this recipe with jarred horseradish from the store, but it’s vastly improved if you use fresh, homemade preserved horseradish.

Horseradish cream sauce will keep for up to two weeks in the refrigerator in an airtight container.

Its Fathers Day today! Yeah. I know. I just thought Id remind you in case you forgot. Its the day to celebrate fathers everywhere!! Give them a tie, a belt, some golf related something , or some electronic gadget that makes noise? Yeah, I know, but thats what I remember getting my father on his day.

But, along with all those gifts I was lucky enough to have a father that LOVED to cook. Gee, wonder where I got it?? So, I had a barrage of kitchen related items I could easily purchase with my hard-earned stuffing envelope and filing in Moms office money. I think we got him an apron and a chefs hat once. I know I bought some mini tools like a whisk or a grater or something funny like that. Oh! And grill tools. You could always get Dad grill tools in our house.

I dont know about yours, but our Dad was always the grill master of the house. Well, master might be stretching it a little. He was the only one in the house that could grill. So, if we wanted to cook out for Fathers Day he would have to cook. Which is sort of not the point of Fathers Day.

  • How Do I Marinate Steak

    You need an oil, soy, usually Worcestershire sauce for that beefy flavour and herbs and spices. You do NOT need salt, although salting the steak with some flaked sea salt at the end of BBQ-ing is a trick I love to bring out the flavour. You mix the marinade ingredients together then place the steak in a plastic Ziploc , a plastic lidded container or even just a flat pan like my Pyrex one below. If you dont have a lid you can wrap the top with Saran Wrap. You then can leave it all day, but I like to flip the steaks every half an hour for two hours to marinate all the sides.

    How To Store This Rub:

    Store the spice mixture in an airtight container. It is still possible it will slightly harden over time due to the brown sugar, just stir or shake it to loosen up.

    For best results use the rub within 2 months.

    If making a large batch of rub and expecting to store for a period of time, you can dry out the brown sugar to help prevent lumps. To do this spread the brown sugar out on a large baking sheet. Bake at 250 for about 10 minutes. Keep an eye on the sugar to ensure itâs not toasting or burning. Remove and allow to cool, then break up any clumps.

    Or you can leave the brown sugar out on a baking sheet overnight without baking to allow it to dry out on itâs own. Doing this removes any moisture and you can add into your rubs and not worry about any clumping.

  • Dont overdo the acids and if you have good quality steak to start, you arent going to need the acids at all. Remember that if you are marinating overnight or all day, skip the acids as they can toughen up your steak and you could possibly ruin a good rib eye or T-Bone!
  • Adjust the seasonings to your liking before you pour it onto the steaks. I sometimes add more garlic if my dads coming for dinner!
  • Add in some beer or some red wine, it really makes a great marinade! Just add it in to taste.
  • You dont really need more spices than what is in this marinade, lets face it, the soy, Worcestershire and garlic are the main components that completely take over the taste. This is fast, simple and you will have the spices in your cupboard. I find that rosemary can hold its own, however and it is a great herb with steak, trust me!
  • You DO need just that tiny bit of sugar to balance out the marinade. You should always have a balance of sweet, salt and savoury for the best tasting steak marinade otherwise it tastes flat.
