How To Make Alabama White Sauce
Unlike some of my other BBQ sauce recipes that require cooking the sauce on the stovetop, this BBQ sauce is quite possibly the easiest BBQ sauce youll ever make. To begin, make sure you have the following ingredients on hand :
- Black pepper
- Cayenne pepper
Once you have all your ingredients assembled, pour them all into a bowl, grab a whisk, and whisk until everything is well combined and the sauce is nice and smooth. Thats it! No baking, boiling, or reducing here. This sauce is ready in less than 5 minutes, making it a great choice when you need something with a tangy zip but you dont have a lot of time.
You are welcome to use this sauce immediately, or place it in the fridge for a couple days to let the flavors meld. Any unused sauce can be stored in the refrigerator for up to two weeks. Make sure to keep the sauce in an airtight container, and youll be all set!
What Is White Bbq Sauce Made Of
Breaking with the tradition of making barbecue sauce from tomatoes, Alabama white sauce starts with a mayo base. I like mine extra tangy so I like to use plain Greek yogurt instead. The other ingredients are as follows.
- mayonnaise/Greek yogurt/Miracle Whip
- Worcestershire sauce
- other spices
Some recipes like to add a little sugar to balance out the tang but I dont. If you like that little added sweetness feel free to add in some honey, brown sugar, or white sugar. Just be sure to start small.
The spices are the typical ones for bbq like garlic powder, paprika, salt, and pepper. Cayenne is another one that is added but I prefer a few dashes of hot sauce.
The mustard used can be varied as well. Spicy brown is a great one to use. If you are looking for a slightly different profile, try adding Dijon or honey mustard.
If you like it hot, you can add extra hot prepared or grated horseradish but I like to use a prepared horseradish sauce. You can find it near the deli section.
How To Make Alabama White Bbq Sauce
The good news is that you probably already have these ingredients in your kitchen. Its amazing what a handful of ingredients can do!
All you need is the following:
- Onion powder
Its so easy to make. Take the ingredients, toss them in a bowl, and mix. Thats it. It is ready to go. No cooking, no blending, no nothing.
You want it to rock, make it earlier to allow some time for the flavors to come together. In fact, Id recommend it.

On the surface, the idea of a tangy hot mayonnaise may not strike the mouthwatering response of its tomato-based brethren, but one taste and I’m sure you’ll be sold.
- 1 cup apple cider vinegar
- 1/2 cup apple juice

Alabama BBQ sauce was made famous by Big Bob Gibson Bar-B-Q in Decatur, Alabama. They have massive hickory-fed pits that house their famous smoked split chickens. These chickens are slow smoked to a glorious golden brown at 350 degree F Their flavor is out of this world, but the real showstopper is the Alabama white BBQ sauce. These chickens are then dunked whole into massive vats of their homemade white BBQ sauce for a taste like you wouldnt believe.

Alabama White Sauce Recipe
There are many different kinds of BBQ sauces throughout the United States. Kansas City has its very own sweet BBQ sauce that is thick. Based as a thin vinegar sauce, belongs to North Carolina and South Carolina is famous for their mustard-based barbecue sauce.
North Carolinas vinegar based sauce with brown sugar, cayenne pepper, and a touch of ketchup makes a beautiful tasty sauce for BBQing.
Kansas Citys sweet BBQ is sweet, thick and tomatoey. It stays on the top of your meats. Great for spare ribs, because it does not soak into the meat and lets the taste of the ribs shine through.
South Carolina has the mustard BBQ sauce that is just delightful. Combined with honey, vinegar and sugar the sauce is great on meats, hamburgers, and vegetables.
One sauce you may not have heard of yet is the white and tangy BBQ sauce from Alabama.
Alabama white sauce was created by Bob Gibson, in 1925 in Decatur, Alabama. It is better known today at the Big Bob Gibson Bar-B-Q restaurant in Alabama.
This tangy Alabama white sauce takes only about 5 minutes to make. The recipe is for 4 large chicken breasts, but if you are BBQing for a crowd, you may want to double the recipe.
How To Grill Bone
When I was testing Alabama recipes, I used this white bbq sauce on bone-in grilled chicken breasts, which we served with tomato pie.
While you can absolutely grill boneless, skinless chicken breasts and have them turn out super juicy and delicious , I find that when we are doing bbq, I way prefer to go slower and use bone-in chicken.

Pulled Pork Without A Smoker
Not everyone has a smoker, but anyone can do a delicious pork shoulder right on their grill. If you have a smoker, set it up for an 8-hour smoke.
Using a long burning wood chip and charcoal, arrange the two together around the walls of your grill. Whether you have the smoker or not you will need to soak your wood chips for at least a half hour. Hickory is usually used, but there are other flavors like Apple and more.
Pick out a nice 7- or 8-pound pork shoulder and trim off any extra fat and the fat cap. Leave some fat for flavoring. Cover your pork with the Alabama White sauce.
Place your seasoned pork shoulder on the top rack of your grill. Cover and bring your grill up to 225 degrees F to 250 degrees F. Use your vents to control the temperature. Get an oven thermometer to place on the grill grates so you can check the temperature. Add more charcoal and soaked wood chips to keep the temperature and smoke going properly. Baste each time you check the temperature.
You will want the internal temperature of your pork to be 205 degrees F. When you are confident that the meat is done, use some barbecue gloves to take it off the grill instead of tongs. The tongs will pull your meat apart.
Side Dishes And Drinks For Your Bbqs
A great twist to the traditional rice dish would be rice pilaf. It is simple to make and goes great with your BBQ chicken.
You will need
- 1/2 cup of orzo pasta
- 1/2 cup diced onion
- 2 cloves of garlic, minced
- 1/2 cup uncooked white rice
- 2 cups chicken broth
Melt the butter in a skillet over a medium-low heat. Cook the orzo pasta until golden in color, a light brown, stirring constantly.
Stir in the onions until they are soft, add garlic and cook for at least 1 full minute. Mix in the chicken broth and rice. Bring to a boil over high heat. Reduce your heat to medium-low, cover, and simmer until the broth is absorbed and the rice is tender. Remove from heat and let it stand for 5 minutes. Serve after fluffing with a fork. Top it off with a spoon full of the white sauce for added flavors.

Recently, however, an interloper has crossed the border, and we find ourselves with a fifth sauce: the Alabama White Sauce.
Alabama White is, obviously, a mayonnaise-based sauce that reminds many of a simple coleslaw dressing however, there is no question that Home Teams Alabama White is popular on things other than cabbage, especially with their Smoked Chicken Wings.

White Barbecue Sauce History
Bob Gibson, of Big Bob Gibson Bar-B-Q in Decatur, Alabama, is credited with creating white barbecue sauce in 1925.
The white sauce was never really intended to accompany meats like beef brisket. Instead, it was meant to accompany chicken and turkey and to be used as a finishing sauce rather than as a basting medium while the meat is grilling.
Gibson smoked whole chickens for three hours and to keep them from drying out, he devised the white sauce to dunk them in once they came off the pit and were held for service. He thought the fat in the mayonnaise helped them to stay juicy.

- Mayonnaise to start, youll need 1 cup of mayonnaise. THIS is our favorite store-bought option.
- Apple Cider Vinegar 2 tablespoons of apple cider vinegar add some tang and acidity to the sauce.
- Brown Mustard youll also need 2 tablespoons of brown mustard.
- Honey 1 tablespoon of honey provides a touch of sweetness.
- Lemon Juice just like the apple cider vinegar, 1 tablespoon of lemon juice adds acidity and tang, while also brightening everything up a bit.
- Horseradish 2 teaspoons of prepared horseradish adds a touch of spice to the finished sauce.
- Spices and Seasonings to add more flavor, youll need a ½ teaspoon of onion powder, a ½ teaspoon of garlic powder, a ½ teaspoon of salt, a ¼ teaspoon of black pepper, and to top it all off, a ½ teaspoon of cayenne pepper.

If I Use This As A Marinade Or For Basting Do I Need Any Other Seasonings Or Dry Rubs
This sauce contains everything you need in my opinion. Maybe thats why its considered an all-purpose sauce in Alabama. But if you prefer extra seasoning check out my BBQ spice rub and Steak seasoning.
If you prefer a more traditional bbq sauce thats fine. I personally love a mustard based sauce from South Carolina. Mostly because it is tangy and not overly sweet like other tomato based sauces.
