Serve up our Bacon Alfredo Penne Pasta for a flavorful entrée at tonight’s dinner. Our creamy Bacon Alfredo Penne Pasta is made with whole wheat pasta, bacon crumbles, roasted red peppers and Neufchatel cheese.

Yield 6 servings, 1 cup each

Number Of Ingredients 9

3 cups whole wheat penne pasta, uncooked
1 Tbsp. oil
2 Tbsp. chopped fresh parsley, divided
1 cup CLASSICO Light Creamy Alfredo Pasta Sauce
1 jar roasted red peppers, finely chopped
4 slices cooked OSCAR MAYER Bacon, crumbled
2 oz. PHILADELPHIA Neufchatel Cheese, cubed
1/4 tsp. chipotle chile pepper powder

Steps:

  • Cook pasta as directed on package, omitting salt drain.
  • Heat oil in Dutch oven or large deep skillet on medium heat. Add garlic cook and stir 1 min.
  • Reserve 1 Tbsp. parsley for later use. Add remaining parsley to skillet along with all remaining ingredients cook 3 to 5 min. or until Neufchatel is completely melted and pasta sauce mixture is heated through, stirring frequently.
  • Add pasta cook and stir 2 to 3 min. or until heated through. Sprinkle with remaining parsley.

Roasted Red Pepper Alfredo

Alfredo is a fixture on most Italian restaurant menus, but it is so much better to make it at home:

  • First, its a heck of lot cheaper I checked out the price at a popular and, in my opinion, completely depressing and sad, Italian restaurant and they charge around $12.00! For one serving! Thats ridiculous!
  • The scarier thing is that they boast that their alfredo sauce is made fresh each morning. Um, each morning? Most people order Alfredo for dinner do you want to order a $12.00 pasta dinner dressed in a butter and cream sauce thats been sitting around all day? I think Ill pass on that.

So lets make it at home, shall we?

Oh, and lets not just make plain old alfredo sauce lets get creative and add in some roasted red peppers. So perfect for February, dont you think?

A couple notes on this

A chunky alfredo sauce does not compute with me In order to preserve the creamy smoothness we all love about alfredo I recommend taking that extra step and strain the pureed roasted red peppers.

You will be tempted to skip it and if you do you may be sad when you realize the final product is not as smooth and creamy as it could be. I dont want you to be sad, so just take the extra couple of minutes to practice your straining skills.

I know we all hate using extra dishes, but a smooth red pepper puree will not make your sauce all wonky. Nobody wants a wonky sauce. Or maybe some people do, but I dont and Im guessing you dont either? Okay, moving on

Roasted Red Pepper And Garlic Alfredo Sauce

  • Once the peppers and garlic are roasted and chopped into fine pieces, blend them together with some sauteed onion. I use my Ninja Blender, but you could also use a food processor. This will mostly puree the vegetables and will leave you with a slight texture that I love.
  • Next add some chicken or vegetable broth, heavy cream and nonfat milk along with salt, pepper and fresh herbs like parsley or basil. Be sure to taste and adjust the seasonings at this point. I want to note that at the time I didnt have an immersion blender, but if you have one, you could skip the blending step and just puree everything together with the liquid ingredients.
  • For the final touch, remove from the heat and stir in some freshly grated Parmesan cheese. Toss in some cooked fettuccine and garnish with fresh Parmesan and chopped parsley.

    Creamy Roasted Red Pepper Pasta Alfredo

    A creamy and flavorful pasta dish, its hard to believe it is Weight Watchers friendly! Who says you cant have pasta Alfredo when dieting? This is one delicious pasta recipe!

    Ingredients

    • 8 oz Ronzoni Smart Taste Pasta, dry
    • 1 cup Classico Light Alfredo Sauce
    • 1/2 cup plain, non-fat Greek yogurt
    • 2 large red bell peppers, seeded and sliced into strips
    • 1 8oz package mushroom slices
    • 2 garlic cloves, sliced

    Instructions

  • Preheat oven to 425 degrees.
  • Spray a baking sheet with non-stick cooking spray, and place red pepper strips on it , and allow to cook for about 20 minutes, and then add in the mushroom slices and garlic slices and return to oven.
  • Continue cooking until the skins on the peppers begin to blacken well, about another 10 minutes or so. Transfer red pepper strips to a sealed Tupperware container and let sit until strips cool. Set aside mushrooms & garlic.
  • Meanwhile, prepare pasta according to package instructions.
  • When pasta is ready, drain and transfer to a large pot.
  • Peel skin off cooled red pepper strips and add into pasta. Heat jarred alfredo sauce in a medium sized sauce pan, and add in mushrooms and garlic to it.Heat until warmed through and hot, about 5-8 minutes.
  • Stir in Alfredo sauce, yogurt into pasta and peper mix and add salt and pepper to taste. Mix well, to combine. Serve immediately.

    How To Roast Garlic

    Since garlic is my all time favorite flavor, I decided to use roasted garlic for the sauce too. The method is super easy but does take about an hour. There are 4 super simple steps.

  • Cut off the tops of the heads of garlic
  • Drizzle them with olive oil.
  • Wrap them in foil.
  • Roast in the oven at 425 degrees.
  • You could leave this roasting step out if youre not a fan of garlic, or if you want a heavier garlic flavor, use a tablespoon of fresh minced instead. The roasting though brings out the sweetness which is so divine.

    Here’s what you need: bacon, shrimp, salt, black pepper, medium yellow onion, medium tomato, garlic, heavy cream, fettuccine, grated parmesan cheese, fresh parlsey

    1 lb shrimp, peeled and deveined
    1 teaspoon salt
    ½ medium yellow onion, diced
    1 medium tomato, diced
    1 cup grated parmesan cheese
    ½ cup fresh parlsey, chopped

    Steps:

    • In a large pot, cook the bacon over medium heat until crispy.
    • Add the shrimp, salt, and pepper and cook until the shrimp is pink and opaque. Remove the shrimp and bacon from the pot, leaving any fat from cooking the bacon behind.
    • Add the onions, tomatoes, and garlic to the pot and cook until the garlic is starting to brown.
    • Add the cream and bring to a boil.
    • Once the cream is boiling, add the fettuccine. Return the shrimp and bacon to the pan, along with the Parmesan cheese and parsley. Stir until the cheese melts and the sauce coats the shrimp and pasta nicely.

    1 1/2 cups heavy cream
    1/2 cup unsalted butter
    3/4-1 cup parmesan cheese, grated, fresh not canned
    3 tablespoons roasted garlic, pureed
    1 dash black pepper
    1/2 lb bacon, cooked & crumbled
    parsley, for color
    • Cook linguine until just barely tender, then drain, rinse, and set aside.
    • Melt butter in a skillet over medium-low heat.
    • Add cream cheese to the melted butter and stir until melted.
    • Slowly stir in the heavy cream then add remaining ingredients while continuing to stir until well blended.
    • The longer you stir and simmer, the thicker the sauce will become the preference is yours.
    • Toss sauce with the linguine, sprinkle parsley over the top and serve warm.
