Secret Aardvark Habanero Hot Sauce

Billed as a Tex-Mex and Caribbean hybrid, this sauce has a base of habaneros and roasted tomatoes, but the flavor is rounded out with mustard, turmeric, “spices,” and…I don’t know…magic? Advocates of the Aardvark say it goes well with anything: burgers, eggs, pizza, etc. Suzanne on Amazon called it “Incredible! Really yummy, smokey, with a hint of citrus flavor.” Made in Portland, Oregon, it’s become nearly as ubiquitous on restaurant tables there as ketchup.

Our Top 10 Favorite Southern Hot Sauces

Whether you stash one in your bag , keep one on the table in an unnecessarily fancy decorative holder, or store in the console of your truck, Southerners never stray far from their beloved bottles of hot sauce. It has been our time-honored secret weapon to help out a helping of under-seasoned collards or to add vinegary verve to fried chicken. Such devotion often leads to fierce allegiances. Are you a Tabasco traditionalist? Do you crave Crystal? Or have you joined up with the hot sauce revolution for a new-school brand? Your hot sauce of choice can indeed become an extension of your personality. While our staff can’t agree on just one, these are the bottles we regularly reach for.

  • Tabasco Sauce: Avery Island, LABottled in 1868In the same way “Coke” is a catch-all word for any number of sodas in the South, Tabasco is synonymous with hot sauce. One of the oldest brands still in production today, the company continues to operate from Avery Island, Louisiana, a junglescape paradise where Edmund McIlhenny first sewed his special pepper seeds from Central America, which was named after an indigenous Mexican word for “a place where the soil is humid.” While Tabasco has expanded its line to include Chipotle, Jalapeno, and Habanero versions, we prefer the original recipe, still aged in white oak barrels with white wine vinegar.

    New Orleans

New Orleans Bbq Shrimp With Jalapeo Grits

    RUBY REBELLE ® Bourbon Cayenne

This recipe makes the top 5 of all time in my opinion. Its spicy, salty, creamy and vinegary all in one bite. We tried to take this off the menu at the restaurant and I received sternly worded letters from guests asking me why I would do such a thing. It is back on the menu and will probably never leave.

NOTE: For me, hot sauce is always Crystal brand hot sauce. I just think it is the best. Not too hot with tons of flavor. You can use Franks as well. But not Tabasco or sriracha. They are very different.
