The first step to making a Buffalo Wild Wings copycat recipe was to investigate the ingredients the restaurant uses in the real-deal dish. Luckily, that was pretty easy for this recipe because the company sells their wing sauce on Amazon and we were able to take a peek at the ingredients list on the label. All we had to do was play around with the quantities until it tasted just right.

The ingredients list started with vinegar, red cayenne peppers, oil, xanthan gum, spices, garlic, and natural and artificial flavors. Thats almost all the ingredients in a bottle of Franks Red Hot Buffalo Wings Sauce, so we used that as the base of our Buffalo Wild Wings sauce. After the chicken is breaded, refrigerate for at least 20 minutes to give it a crispy coating. Now make the sauce. To do this, combine the cornstarch and rice wine vinegar in a small bowl until the cornstarch is dissolved, and then add this mixture to the rest of the ingredients in a small saucepan over medium to low heat, stirring frequently until the mixture boils. After that, remove it from the heat and set aside.

My issues

This isnt really an issue with the recipe itself but you may run into this at the grocery store. It was a little difficult to find the chili garlic sauce. Finding the sauce is definitely not impossible, I just needed to go to the right place in my grocery store. The sambal is not on the aisle with the rest of the sauces/condiments, its in the ethnic foods section. I feel like chili garlic sauce is common these days. I would compare it to sriracha, which is readily available in the regular sauce section so I didnt expect the runaround.

I used the sauce like I would a buffalo wing sauce but that wasnt really the best idea. I put it on cauliflower because Ive made buffalo cauliflower in the past. My thought was that since they use it at Buffalo Wild Wings it would be just fine. Actually, no! If you dont plan to use it on something thats breaded or fried, use it as a dipping sauce.

Take the suggestion! The cauliflower didnt turn out terrible but it wouldve been much better if I had just followed the suggestion.

It didnt take us long to settle on our method: No batter. We found several threads on Reddit from former employees who confirmed the bone-in wings dont have any coating on them. Instead, we used canola oil for our tests, and we thought our wings turned out just fine. If you have beef tallow on hand, go for it! Otherwise, you could also use any other high-temperature neutral cooking oil, like avocado oil or vegetable oil.

    Heat about three inches of oil in a large Dutch oven or wok. You can also use an electric tabletop fryer if youre lucky enough to own one. Preheat the oil to 350 degrees Fahrenheit using a deep-frying thermometer to check the temperature. When the oil reaches the target temperature, reduce the heat to medium-low so it doesnt get too much hotter. We dont want the chicken wings to burn on the outside before cooking all the way through.
