Q: Do Hot Sauces Expire

Consider this your annual reminder that most labels actually give best by dates, not expiration dates. So, the best by date might be in a year, but the real question is how quickly does it deteriorate after that? With most vinegar-based sauces the answer is: pretty slowly. Salt and vinegar are both preservatives, so those styles can probably go three or more years without changing too much. Fruit- or vegetable-based sauces, and especially ones without vinegar, probably last half that timeand need to be kept in the refrigerator. But the good news is that even if the sauce is no longer best, that will generally apply to things like color and flavor, rather than food safety.

Carolina Reaper Hot Sauce Ingredients

The most simple hot sauce recipes only have a couple ingredients. Chile peppers, vinegar, and salt. This is known as Louisiana style and made most famous by Tabasco. However you can, and should, get creative. My recipe adds a few more ingredients, just for extra flavor.

The first step is to place your dry Carolina Reaper peppers in a bowl and pour over a cup ml of boiling water. I use 7 peppers for this recipe which is about 15 grams by weight.

After sitting for about a half hour the peppers are nice and plump. The liquid is a brownish gold. You can use this liquid in place of water for the recipe, however I discarded it as I use a different liquid.

Carrot Juice! Instead of using regular water, or the soaking liquid, I am using a cup of freshly pressed carrot juice. This goes into a blender along with the Carolina Reapers, a cup of white vinegar, and two teaspoons each of salt and garlic powder.

Because I am making a thin, drippy hot sauce, I suggest running the blender longer than normal. The most important part of this recipe is to try to extract as much heat as possible from the solids. It is possible that the final hot sauce, after bottling, can separate. So to prevent that you can add a teaspoon of sunflower or soy lecithin to the blender.

Henry’s Hot Sauce Carolina Reaper

Scoville units: ~1 millionPeppers used: Carolina Reaper

Unlike a lot of these other hot sauces that seem to come from the mind of a slightly insane dude working from his kitchen, Henrys Hot Sauce is courtesy of an honest-to-god Virginia pepper farm. There, in the Shenandoah Valley, is apparently located the most limestone-rich soil for growing the most perfect hot peppersones the Henry family has cultivated from the world over. No surprise, Henrys sauces use 100% homegrown peppers , and are usually based around one single pepper varietal, like Carolina Reaper, their most extreme offering. Buy it here.

Note: if you go to Henry’s website you’ll see Carolina Reaper listed as “limited edition.” This is mainly because making sauces with 100% your own ingredients leads to small batches, not because these products are of the only-100-bottles-made-then-gone-forever nature.

Reaper Squeezins Hot Sauce

I Made The World’s HOTTEST Hot Sauce!

No, its not the name of some dangerous but also cuddly chapter of the Hells Angels. Reaper Squeezins is actually a very dangerous hot sauce, which ranks in at 2.2 million Scoville.

On the PuckerButt Pepper Company product page, a reviewer by the name of Neil Gobbi had this to say -I am a glutton for punishment. I served not four, but six years in the US Navy. Ive been married TWICE. Ive owned two Saabs. Most of all, I continue to purchase Reaper Squeezins every time my bottle goes dry. My tongue has taken on a separate identity, and has been plotting to kill me, its torturous captor, in between dousings. My internal organs have taken on the consistency of a Cummins diesel radiator hose.

As with a lot of these mega hot sauces, people are adding them to things like chili and guacamoles. Keep in mind, if you ever overdo it on the drops of hot sauce you add to your recipes you can always tone down the spice level by adding a sweetener or by not being such a big baby and shutting up and eating your salsa.

It can be tempting to jump right in and douse your morning eggs with ghost pepper sauce, but before you kick things up, be realistic about how much heat you can handle. Certain sauces are incredibly potent, so even just a little can make your eyes water in an instant.

The best way to determine the spice level of a certain sauce is by identifying where it lands on the Scoville scale, which measures the heat of certain chili peppers or anything derived from chili peppers . Peppers can range between 0-100 SHU for bell peppers all the way up to 3.18 million SHU for Pepper X . Not every bottled sauce will indicate their Scoville rating, so if youre concerned, look at the ingredients and take note of which types of peppers are used in the sauce.
