I really wish we wouldve been recording our cooking day when we made these spring rolls because it was quiet comical! The rolling of the spring rolls with the delicate rice paper definitely took a few attempts.at least it did for us. Once you get the system down its easy rolling and SO worth it!!

Courtney and I have a list a mile long of dishes and recipes that we want to make for the blog. Shrimp spring rolls have been on the top of our list for well over a year so Im not really sure why its taken us so long to finally make them. We are happy to finally bring these little rolls of deliciousness to you. Dipping these shrimp spring rolls in the spicy peanut sauce is like the icing on the cake, or the dip on the spring roll.you know what I mean. Its definitely not an option to not make the peanut sauce!

If you cant find the spring roll wrappers and rice noodles in the Asian section of the grocery store try looking for them at World Market, they have a great selection of Asian foods. These spring rolls are made with a few simple ingredients, rice paper, rice noodles, julienned carrots and bell peppers, shrimp and fresh mint. You can definitely sub shredded chicken for the shrimp or make them vegetarian and skip the protein if you would like as well. We love them with the shrimp but whatever floats your boat!

How pretty are these spring rolls? The good news is that they taste just as good as they look!

Its been forever since Ive had fresh spring rolls! So, I solved that problem with these homemade Fresh Spring Rolls & Peanut Dipping Sauce. Hubby agrees these taste as yummy the ones from our favorite Thai spot . This version is full of plump shrimp, crunchy cabbage and carrots, bold radish, and fresh herbs. Theyre perfect dipped in the sweet and spicy peanut sauce!

Did you know? Wild-caught shrimp and shrimp farmed in the US are not administered antibiotics. This is often not the case with imported shrimp. The use of antibiotics has been linked to antibiotic resistance, i.e., outbreaks of disease that do not respond to antibiotic treatment. If youre not sure, look for the Marine Stewardship Council or Best Aquaculture Practices certification label.

For this recipe, I used precooked peeled and deveined tail-off shrimp. Small or medium shrimp work best! Thaw the shrimp in the fridge overnight, or in the sink in the bag under cool water. You can also buy raw peeled and deveined shrimp just steam until pink, then pluck the tails off!

Tips For The Best Fresh Spring Rolls

  • Moist work surface Keep the cutting board lightly moist . This keeps the rice paper from sticking to your surface.
  • Roll tightly keep a tight roll so they dont fall apart when you serve them.
  • Keep shrimp pink-side-down you want the pretty side visible through the wrapper when rolled up.
  • Dont overcook noodles They should just be tender and not mushy. Cook according to package instructions then rinse with cold water to stop the cooking process and drain well.

There are two types of spring rolls. Fresh Vietnamese spring rolls use prepared ingredients like shrimp and sometimes pork along with noodles and fresh veggies that are wrapped in a dry rice paper wrapper that has been hydrated. Fresh spring rolls do not require any further cooking once they are wrapped.

Chinese spring rolls use refrigerated spring roll wrappers similar to egg rolls and are deep-fried in oil until crispy on the outside.

The taste of the chewy shrimp combined with the springy noodles and crunchy veggies dipped in that spicy peanut sauce is a true winner!

They are pretty easy to make and perhaps the only challenging part is rolling them. But I share a great tip below to make it easier for you!

My fresh shrimp rolls with peanut sauce does not require too many ingredients. Also, you may use whichever vegetables you fancy. The Spicy Peanut Sauce is also a must for these rolls – you cant have one without the other.

What Are Vietnamese Spring Rolls Or Gi Cun

Gi cun literally means salad rolls, and for the longest time I never made that connection. I just assumed it was a random name for these rolls, silly me.

But these tasty little rice paper rolls are indeed an herby salad mixture, with pork, shrimp, and rice noodles. Dip it in as much sauce as youd like. I love gi cuntheyre tasty and fun to eat. Theyre great as a communal meal where everyone is rolling their own at the table.

Mom says gi cun or Vietnamese spring rolls were something people never made at home in Vietnam. It has so many components, and is quite an undertaking to prepare. It was crazy to even think of making it yourself when there were literally street vendors selling these outside your house just about everywhere.

Vietnamese spring rolls were meant to be just an appetizer and never a full meal. Although when growing up, her family didnt always have money to spend on snack foods like this.

How To Make The Best Vietnamese Salad Rolls With Shrimp And Peanut Dipping Sauce

  • Prepare the shrimp: Bring a pot of water to a boil over high heat and add shrimp. Cook for 5 minutes. Remove and run it under cold water to cool down. Once cool enough to handle, slice in half.
  • Prepare the vermicelli noodles: Bring a pot of water to a boil over high heat and add vermicelli noodles. Cook for 2 minutes until soft. Transfer the noodles to a bowl with a colander to completely drain out any water.
  • Prepare the rice wrappers: Fill a large shallow bowl with warm water, about 1 to 2 inches high. Take one wrapper at a time and quickly dip it into the warm water for 1 second. Shake off excess water. The wrapper will start to soften and feel a bit sticky. Transfer the wrapper onto a clean dry flat surface.
  • Assemble the salad rolls: Place 2 tablespoons of vermicelli noodles in the center of the wrapper into a log shape, leaving 2 inches of space on each side. Place 3 pieces of shrimp, pink side down, on a row above the noodles. Add 2 tablespoons of shredded carrots in a row underneath. Place 1 tablespoon of cilantro, ½ tablespoon basil and ½ tablespoon mint on top of the carrots.
  • Wrap the salad rolls: From the bottom, roll the wrapper up tightly but gently so that you don’t tear it. Roll it up halfway over top of the noodles. Then fold over the left and right sides inward. Then continue to tightly roll the wrapper to seal the mixture inside. If the wrapper doesnt feel soft and pliable, apply some water to your fingers and to the wrapper to help it soften.
  • Spring Roll Recipe Variations

    Shrimp Rice Paper Rolls or Fresh Spring Rolls with Peanut Dipping Sauce

    As with most of my dishes, you can add some extra ingredients to give some variation to the flavors. Here are some of the ideas we love to have:

    • Cabbage Green or purple cabbage would both be great. Shred it thin and add some to the spring rolls for added nutrients and flavor.
    • Carrots Another great idea is to add some shredded carrots to the spring rolls. They go well with the other ingredients too.
    • Cucumbers They are fresh and filling, so dice up some cucumbers to include in this spring roll recipe.
    • Onions Green onions are my preference, but red or sweet onions would also be fabulous too.
    • Mint Add in some mint leaves to the mixture. Its a lovely and refreshing ingredient that adds character to the rolls.

    Are Rice Paper Rolls Healthy

    Rice paper rolls are healthy when they are eaten in moderation. While you dont want to consume them for every meal, they are actually filled with some great nutrients depending on what you fill them with. As long as the spring rolls and other recipes are filled with meats and healthy veggies, they are going to be healthy. If you fill them with foods that are processed and unhealthy, it will make the spring rolls unhealthy. The paper rolls themselves dont offer a ton of nutrients, so its more about what you eat them with that has the largest impact.

    I absolutely adore Vietnamese cuisine.

    Years ago when I was pregnant with my son, we would go to our favorite local Vietnamese restaurant so often that we basically lived there.

    As far as cooking Vietnamese food at home, I havent done it a ton yet, but I really do love it.

    Some of my favorite items at any Vietnamese restaurant are recipes made using rice paper wrappers.

    Have you ever had them? Theyre those translucent, tacky-to-the-touch sheets that wrap around food to contain it, almost like a burrito.

    Theyre sold in sheets that are dry and brittle, and you need to soak them in water to make them pliable.

    Theyre a little tricky to work with, but I promise you can catch on with just a little practice.

    I most often find Vietnamese appetizer recipes that utilize rice paper wrappers.

    My favorites are summer rolls and fresh spring rolls .

    Theres a lot of information online about the difference between spring rolls and summer rolls.

    For these particular rolls, I chose to call them Vietnamese Fresh Spring Rolls with Shrimp + Peanut Sauce because they have both veggies and shrimp inside of them.

    How To Make Spring Rolls With Peanut Sauce:

    Keep scrolling for complete recipe and instructions. We’ll start here with a super quick rundown!

    • Add a dash of olive oil to a frying pan and place on medium low heat. Place shrimp in a small mixing bowl, add olive oil and spices. Sauté shrimp until fully cooked through and set aside.
    • Next, set pot of salted hot water on the stovetop and turn heat to high. Once water comes to a boil, cook rice noodles according to instructions on package. . Drain and rinse noodles and cut into thirds.
    • Cut up your veggies, rinse bok choy/lettuce and pat dry.
    • Mix up your peanut sauce.
    • Dip rice paper in a plate of lukewarm water for 3-5 seconds and place on a plate.
    • While waiting for rice paper to become stretchy/sticky , add desired fillings.
    • Roll fillings up tight! Dip in peanut sauce and enjoy!

    How To Make Fresh Spring Rolls

  • Boil shrimp according to our 3-minute boiled shrimp recipe then immediately cool in ice water and cut shrimp in half lengthwise.
  • Cook noodles according to package instructions until softened rinse in a colander with cold water and drain well. Our method: fill a saucepan with water and bring to a boil, add the noodles, turn off the heat and let them sit in hot water for 5-7 minutes.
  • Prep veggies cucumbers and carrots, remove stiff stems on lettuce leaves, coarsely chop cilantro,
  • Assemble spring rolls one at a time. Fill a shallow round bowl with very warm/hot water. Submerge spring roll wrapper for about 10-15 seconds or until softened. Place wrapper on a lightly wet cutting board.
  • Add veggies on the bottom half layer a piece of lettuce, a generous pinch of noodles, some carrots, cucumber, and cilantro sprigs.
  • Add shrimp On the second half place halved shrimp with cut-side up.
  • Tightly roll up the lettuce side first, tuck in the sides then roll over the shrimp and finish rolling.
  • Keep Rolls Moist! Transfer finished rolls to a serving platter and cover with a damp kitchen towel so they do not dry out. Cut in half diagonally to serve.

    Tips For The Best Spring Roll

    • Prepare your ingredients ahead of time this makes assembly much easier and quicker!
    • Be careful with the rice paper- rice paper can be pretty finicky. Follow package instructions for how best to wet the rice paper and make pliable so its ready to use. You then want to be extra careful when rolling to ensure it doesnt rip otherwise you have to start over with a new sheet of rice paper.
    • Burrito roll Personally, Ive found this the most efficacious way to roll my Spring Rolls. Add most of your filing to the bottom of the roll. Flip the bottom of the rice paper over the top and gently pull towards you to make as tight as possible. Fold the edges in, and just continue rolling until you have a tight spring roll. Thats it! Same method I use when making burritos.

    No they are not, so take care you purchase the correct wrapper for your spring rolls. They are both made from much of the same ingredients , but they are used differently.

    Spring roll wrappers are denser than rice paper. You have to add water to the corners of spring roll wrappers to get them to stick together. These wrappers look like large wonton wrappers and need to be baked or fried.

    How To Easily Devein Shrimp

    Like any creature that eats food, it has a digestive tract. We call it a vein because were all kidding ourselves about whats really happening here: its poop yall. Lets remove that shrimp vein / digestive tract!

    Heres an easy way to devein shrimp I learned from my mom! It requires much less precision and best of all it is FAST!

  • Defrost your shrimip by soaking it in lukewarm water until its no longer frozen. This will not work if the shrimp is frozen. .
  • Grab a toothpick and hold the shrimp up to a light source to locate the vein.
  • Now locate the joint of the shrimp shellit will be lighter in color than the rest of the body. Move the toothpick a little bit below the vein and push the toothpick all the way through the shrimp.
  • Gently lift the toothpick outwards towards the back of the shrimp, breaking through the shell along the way. Do this slowly so the vein has a better chance of staying intact. If successful youll see the vein pull out.
  • Sometimes you may miss and a clear string or nothing comes out, or the vein breaks. Its ok! Just find another spot along the shrimp to repeat until the shrimp is clear of veins.
  • Clean the toothpick in a bowl of water or paper towel and repeat on the rest of your shrimp.
