    In Hot Ones, a YouTube series under the account name First We Feast, host Sean Evans sits down with a different celebrity guest in each episode, talking with them about their lives and careers. The catch: as they talk, they eat chicken wings, starting with a slightly tangy sauce and working their way up to the kind of hot sauce that could turn you into a fire-breathing dragon. If the celebrity makes it all the way to the tenth and final sauce, they can promote an upcoming project at the end of the episode.

    In season 3, the starter hot sauce was a basic sriracha, which is 2,200 Scovilles, a scale that measures the spiciness of peppers or spicy foods. That was followed by Tabasco Original at 2,500 Scovilles. And the final sauce was Blairs Mega Death at 550,000 Scovilles. But things have been progressing rapidly on the spicy scale, and the show now produces its own branded sauces as well.

    Now in its ninth season and with close to 7 million subscribers, Evans wants to bring even more pain to the celebrity guests of the show as the gaps between Scovilles widen and the final sauce tips the scales at more than two million.

    Hot Ones The Classic Hot Sauce is the #1 sauce on Hot Ones! When it came time to craft the perfect kick-off to Seans spicy interviews, it was clear that he needed a hot sauce that was as timeless as the chicken wing itself. After sampling many of the worlds best peppers the decision was made to go with Chile de Arbol, prized for its complex, fresh flavours. The chiles and sauce are grown and made by the legendary Smokin Ed Currie of Puckerbutt Pepper Co, who says it may be the tastiest hot sauce hes ever crafted.

    The Last Dab Scoville & Spiciness

    The Last Dab has been touted as the hottest sauce that First We Feast has ever produced. Full of three all-new Pepper X varieties, from the original to Chocolate Pepper X and Peach Pepper X peppers. This means serious heat.

    To put it simply, the Last Dab XXX has a Scoville rating of over 2,000,000 SHUs. This puts it on the same level as some of the spiciest peppers that are currently known.

    Scoville ratings can be a bit subjective, given that Da Bomb is rated at 135,000 SHUs and tastes similarly hot. However, this is still a very, very hot sauce!

    Smokin Ed Currie is who we have to thank for the intense, fiery heat of The Last Dab. His Pepper X pepper hybrid produces incredibly high capsaicin levels. It is expected that this new pepper variety will become the new worlds hottest pepper within the next year or so.

    The sauce is not quite blended to a smooth consistency, so you know exactly what youre eating. You can feel the small bits of real peppers in every bite.

    Tip: Start with just a dab! The sauce has its name for a reason

    What Is The Texture Like

    Well, because this is made from fresh ingredients, the sauce is a little on the thin side. It also comes with peppers, seeds and garlic mixed in that give it that extra crunch when you bite into it.

    However, these bottles come with a dasher top that will allow you to control the flow of this sauce from your bottle onto your pizza or breakfast. This is great if you are slightly nervous about lashing this onto your breakfast or pizza, especially if you are new to the concept of hot sauce.

    On February 18, 2020, a spin-off titled Hot Ones: The Game Show premiered on truTV. Hosted by Evans, the series pits two pairs of players against one another for a chance to win up to $25,000. The main game is played in three rounds, using wings that have been cooked in hot sauces whose Scoville ratings increase from one round to the next. Players are not provided with any water or milk to reduce the effects of the wings but are given buckets in which to vomit if necessary.

    In each of the first two rounds, the players begin by eating one wing apiece and the host asks three toss-up questions open to all. The first team to buzz in has five seconds to respond a correct answer awards them money, while a miss gives it to the opposing team. Questions are worth $100/$200/$300 in the first round, and these values double to $200/$400/$600 for the second.

    In the third round, the players begin by eating one bite of a wing. The host reads a series of clues, and players may buzz in at any time to identify the subject being described. Three puzzles are played, worth $1,000/$2,000/$3,000 the team that scores on each puzzle must then take another bite. In this round, if a team misses, the opponents must give the correct answer in order to score. Both teams keep their accumulated winnings.

    The Classic is not spicy at all, with most people recommending it as a place for hot sauce newbies to start. This has a Scoville rating of around 1,800 Shus, which puts it at around the spice level of your average jalapeno.

    However, it is worth bearing in mind that this hot sauce is made from fresh ingredients, so the heat levels will vary from bottle to bottle. This guaranteed freshness will also ensure that it packs plenty of flavors.

    I ordered this sauce as the Classic was unavailable. I got hooked on the Classic when my roommate bought some, and I needed more. This version is somehow both the same great taste, but the garlic makes it different enough that it truly is its own sauce. And holy it is delicious! If you’re not big on heat, this is perfect. The garlic definitely rounds out the edge of the Classic and both sauces are have a kick that won’t knock you down.

    Hot Ones The Last Dab Reduxx 2000000+ Scovilles

    The latest version of the final hot sauce for the series, for the few celebrities who make it all the way down the list, this one is a doozy. Containing Ed Curries Pepper X along with Chocolate Pepper X, its named as such because one dab is enough to send you running to the bathroom or screaming in agony.

    If youre a glutton for spicy punishment, you can buy it from the Heatonist website , but its limited to one bottle per person. And probably for good reason.

    How Long Will This Sauce Keep

    It should keep a few months easily in the fridge, or even longer. Its all about the acidity. Target level ph for shelf stable foods is below 4.6 ph, but should probably be lower for home cooks, around 3.5 or so, to account for errors. If youre concerned, add more vinegar to lower the ph.

    The best ph meters that I recommend are from Thermoworks. Get yourself a ph meter from Thermoworks today. I am a happy affiliate.

    What Peppers Should I Use To Make Louisiana Hot Sauce

    As mentioned, traditional peppers include cayenne, tabasco, and red jalapeno peppers, though this style recipe can be made with ANY chili pepper. Carefully selected long cayenne peppers are great.

    I have made Louisiana Hot Sauce from superhots and was quite happy with the results. Talk about heat!

    Just consider that your end flavor, color and heat will be affected by your chili pepper choices.

A caveat here: the beneficial bacteria created in the fermented version will be killed off by the high heat from the canning process.     Is The Classic Hot Sauce Worth It

    If you havent tried it and you are a hot sauce buff, then The Classic is worth at least one try.     Its really, really spicy. However, the spice does not overpower the delicious, strong flavor. The Last Dab Reduxx has a Scoville rating of 2,000,000 SHUs or higher. This is thanks to the Pepper X Peppers that make up the bulk of the sauce, which were measured at over 3 million SHUs.

    I will say that the sensation of eating this hot sauce does not feel quite like 2 million Scovilles unless you over-do it. The heat sneaks up on you, and without some milk on standby, you might be struggling with the intense spice. But we have tasted hotter sauces.

    Hot Ones knows what they are doing when curating hot sauces. When a hot sauce is extremely spicy, the flavor needs to match the fiery kick. Otherwise, its all show and no substance.
