What Is Kewpie Mayo

Good question. Easy answer. Kewpie is a Japanese brand of mayonnaise thats creamier, tangier, and more umami-fied than American mayo. Its made with egg yolks instead of whole eggs, has a thinner consistency that makes it popular as a salad dressing base, and, not gonna lie, it has a little MSG in it. That combination of characteristics is one of the reasons you love this sauce so much, and why its not the same if you make it at home with regular mayo.

The good news is that Kewpie is pretty easy to get these days, whether via Amazon, your local east Asian specialty market, or even regular grocery and big box store.

So that shouldnt stop you from making this creamy chili sauce at home. Nor, really, should anything else. Ill leave you to it.

Hows The Heat Level Of This Sauce

We find the spicy level of this sauce to be perfect, but keep in mind were both not crazy about spicy foods. Id rate this sauce a 4 out of 10 with mild Aleppo chilli being a 1 and Indian Vindaloo curry being a 10.

Ive served this sauce to many people without any complaints and I think its a good starting point. If you like it hotter, try a hotter hot sauce or simply add more Sriracha.

How To Make Spicy Mayo Without Sriracha

Can you make spicy mayo without Sriracha in case you run out of this sauce, do not have it in your pantry, or cant buy it in your supermarket?

Yes, you can make spicy mayo without Sriracha sauce. Use one of the following substitutes:

  • Sambal Oelek
  • Chili paste
  • Hot sauce like Franks hot sauce

As the level of spice varies per substitute I recommend you start with 1 teaspoon, combine, taste, and determine whether you should add more or leave as is.

If you added too much spice you can add more mayo and lime juice to neutralize the heat.

To make spicy mayo you will only need a few basic ingredients that you probably already have in your fridge. This recipe is super forgiving and can be adjusted to taste.

Mayonnaise: because mayonnaise is such a huge part of this dish we like to use the best mayonnaise we can find. My personal favorite mayo is Dukes Mayonnaise but any other brand will work just fine!

Hot sauce or Sriracha: you will need a spicy sauce to add a kick to the mayo. Hot sauce or sriracha, or adobo , garlic chili sauce, or any other spicy sauce will work!

Lime juice: this ingredient is actually optional but adds a zesty kick to the sauce. It can also be replaced with lemon juice or vinegar.

Cajun seasoning: cajun seasoning is a blend of spices that work really well in seasoning this dish. They can easily be replaced with taco seasoning, chili powder, or your favorite spice blend.

Its aioli, and you know it looks like mayonnaise, but if it were mayo theyd call it mayo. Mayonnaise, loosely defined, is an emulsion of neutral-flavored oil like canola, egg yolk, vinegar and/or lemon juice and sometimes a dash of powdered mustard to bring out the flavor and help the emulsion stay together.
