What Type Of Shrimp To Use

Well, this depends on you. If you dont mind peeling and deveining shrimp, by all means, by the whole and freeze the skins for later use in soups and broths.

They have a ton of flavor. I sometimes feel lazy, so I like to buy peeled and deveined shrimp.

If you are feeding a crowd, maybe small to medium-sized shrimp is the way to go, but I would highly recommend using large shrimp if youre cooking for two.

I know a lot of people think shrimp scampi should be made using small shrimp. I like mine large.

    How To Devein Shrimp

You want to make sure your shrimp is peeled and deveined before cooking with them! Some people, like us, prefer to leave the tails on but you can nick those off if you prefer. Start where the legs are and pull back to remove the shell. Most of it will come off easily enough. If youre keeping the tails on you can keep your grip on the tail while pulling the legs back. To devein, make a small slit along the back of your shrimp. You will notice that there is a black line that runs across the back. Use your knife to gently dislodge it before wiping it on a kitchen napkin or holding it under running water. Voila, peeled and deveined shrimp. Alternatively, you can buy your shrimp peeled and deveined for convenience.

This recipe has become one that my family asks me to make over and over again when Im making my menu plan each month. Its much better when you can use fresh shrimp, but frozen shrimp works just as well. Fresh shrimp can not only be expensive, but it can be hard to findespecially now that colder weather has set in. Frozen however, is available almost year round.
