My mum was actually the main inspiration for having caramel on pancakes. I had some leftover from a bake once a while back and she decided to have it on her pancakes… its been a family hit ever since!

My recipe is quicker to prepare and I share two preparation methods. I crafted them so they have different consistencies when cooled. That way you can choose how you want to make your dairy free caramel sauce! The first one remains remains a smooth consistency when cooled which makes it nicer for using in cold recipes. The second method is quicker and slightly easier but the caramel becomes grainy when cooled. Both can be reheated before seving and have very similar flavors.

Method 1: First: add the brown sugar and butter to a small sauce and heat together over medium heat. Bring it to a boil and let it cook for two minutes.Second: remove from the heat and add in the coconut cream and coconut milk. And whisk together.Third: return the caramel to the heat and cook for another 5 minutes.Lastly: remove from the heat and whisk in the salt and vanilla. Then scrape into a glass container and let cool.

Method 2: First:measure all the ingredients except for the salt and vanilla into a small sauce pan. Place over medium/high heat and cook for about 5 minutes until it looks like a nice sauce.Second: remove from the heat and add in the vanilla and salt. Whisk to combine.

How do you keep Caramel Sauce from Crystallising?

Using our preferred sweeteners such as allulose or Xylitol will not crystallise your Sugar-Free Syrup once cooled.Using a suitable sweetener is very important in this recipe.Using a powdered version of your sweetener and replacing normal water with distilled water helps dearly against crystallisation, especially when using Erythritol.

Finally A Successful Caramel Sauce With Lakanto

I thought about what else I could do so that it would stick together even when cooled. My second try finally worked. I used an erythritol and monkfruit liquid sweetener from Lakanto to act as a substitute for real sugar and upped the amount of cream in there. It finally did the trick!

For the sugar free caramel, I used homemade powdered erythritol instead of granulated because I find powdered one doesn’t crystallize as much when cooled, which is why in my Sugar-free Cranberry Sauce I made for Thanksgiving I used the powdered version instead of the granulated one.

The lakanto sweetener I used is slowly getting popular in the United States. It’s originally from Japan so we have the liquid and granulated sweeteners everywhere at the grocery store. The liquid I used is actually clear in colour, but it has the exact same ingredients as the maple-flavoured one from the American Lakanto.

It’s a sweetener made from erythritol and monk fruit and it’s actually one of my favourite sugar replacement, but since it can be quite pricey to use and buy, I prefer to use plain no-brand erythritol and stevia in most of my recipes.

This keto caramel sauce was used in my latest Low Carb Caramel Cheesecake recipe and I topped with some pecans for it to be a sort of Pecan Pie Cheesecake. When the low carb caramel cools, it sort of becomes like a fudge consistency so I’m thinking that will be great for donut icing!

This tip works with ordinary Condensed milk, and I am unsure how it will react with keto Condensed Milk.

I have a Homemade Sugar-Free Condensed milk prepared, and maybe it will be worth the shot to experience with this idea.

Tips To Make The Best Sugar Free Salted Caramel Syrup

    • This recipe is designed to be a caramel syrup, not a sauce. Because of this, you want to remove it before it becomes too thick, as it continues to thicken as it is cooling down. If youd prefer a thicker caramel, try keto caramel or vegan caramel.
    • You must constantly stir the caramel syrup throughout the entire cooking process. Because you are working with butter AND a sweetener, its very easy to accidentally burn the mixture.
    • Do not overcook! The more time the caramel syrup remains over the heat, the thicker it becomes. Even though the syrup may look quite thin when you remove it from the heat, it will continue to thicken up as it reaches room temperature.
    • If your caramel syrup is too thick, you can always microwave it for 20-30 seconds before using it.

    What Is Caramel Sauce

Caramel sauce is a delicious topping for various coffee drinks. Its made from sugar and water that are heated until they turn into a thick, amber-colored syrup. Then, some cream is added to give it its characteristic smooth texture.

The key to making good caramel sauce is to cook the sugar until it turns a deep amber color.

This deep amber color will give the sauce its characteristic flavor and sweetness. If the sugar is cooked too long, it will turn into burnt sugar and taste bitter instead of sweet.

Below, youll find the small list of ingredients needed to make this caramel sauce and a step-by-step guide, so you can start making this caramel sauce at home.

    Low Carb Caramel Sauce Recipe

I have made this sauce with both erythritol and a low carb brown sugar substitute. Both worked out delicious however, I must point out that when you use erythritol in a sauce recipe like this it does not act like sugar and dissolve but can crystalize when cooled. I noticed it more than the Chief Taster who was probably in delighted ecstasy in enjoying a caramel sauce with no guilt, but once it was stored in the fridge, it did need reheating.

No flavor changed in the reheating and all was consumed. I will confess that I added a few tablespoons of the crystalized caramel sauce in my iced coffee mixture one morning and was full of revelation. A perfect way to start the day!
