How To Make Stir

  • Pour the soy sauce in a large glass measuring cup and whisk in the cornstarch until smooth. It is truly key to stir the cornstarch into the soy sauce to make a smooth slurry before adding heat or more liquid. Starch needs to be dissolved cold or else the heat will make it start to hydrate and swell. When that happens, lumps are inevitable. And whisking it smoothly into a small volume to start is way easier than whisking it straight into the whole thing.
  • Whisk the broth into the soy sauce/cornstarch mixture until smooth. Itll be cloudy, thats normal.
  • OPTION 1, cook the sauce separately: Add the sauce to a medium saucepan, turn heat to high and bring to a boil. The sauce is done once it goes from a thin consistency and muddy opaque colour to a glossy, clear caramel colour and thicker consistency.
  • OPTION 2, cook the sauce in the same pan: once your stir fry is 90% done is cooked nearly to desired doneness), simply pour the sauce over everything and the hot food will thicken the sauce in less than a minute.

This recipe makes 1 3/4 cups of stir-fry sauce, which is enough to nicely coat 8 cups of chopped veggies plus one pound of protein. If youre cooking less than that, dont fret too much spoon-licking sauce is never a bad thing. Just make sure to cook plenty of rice or noodles to soak it up.

I used one of my favorite stir fry veggies in this recipe, broccoli, along with carrots and peppers. You can use virtually any vegetable in a stir fry including snow peas, green beans, mushroom, onions, sugar snap peas, and green onions.

  • Cook the chicken and vegetables in a very hot wok so everything is stir fried crisp tender.
  • Use an oil with a high smoking point like canola or peanut because you do not want your oil burning. Swirl it in the base of the wok.
  • Dont overcrowd the wok. Therefore work in batches.
  • Vegetables should be dry so they stir fry not steam.
  • Remove meat from the marinade with tongs to allow most of the marinade to drip off. You dont want your meat to boil hence you want it to stir fry.
  • Cook meat in a single layer so it can sear against the wok.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days.

As with all great stir fries this one starts with good quality diced vegetables. Not too small and not too large. When dicing or chopping my vegetables in preparation I think of being able to pick it up with chopsticks. Carrots do take a little longer to cook though so I cut them in matchstick style or very thin rounds. Broccoli also takes a little longer so I cut them in the small bite size range by splitting the florets in half or thirds.

I have been making stir fry recipes for many years now, and I still get surprised at how easy it is to create amazing flavors and colors just by throwing some protein and vegetables into a skillet with a stir-fry sauce.

How Do You Make Chicken Stir Fry

To make chicken stir fry, youll need boneless skinless chicken breasts cut into cubes, broccoli, carrots, soy sauce, honey and garlic. Cook the vegetables in a hot pan, then remove the vegetables and add diced chicken breast and minced garlic. When the chicken is cooked through, add the vegetables back into the pan. Whisk together chicken broth, soy sauce, honey and cornstarch, then pour over the chicken and vegetables. Simmer for a few minutes then serve and enjoy!

It is is a great way to thicken sauces when you want a quick recipe.

  • Cut your vegetables into similar sized pieces so that theyll cook evenly. I recommend slicing the carrots very thin so that they cook quickly.
  • This recipe is for garlic lovers, with 4 cloves of garlic in the sauce. If youre not a big garlic fan, you can cut this amount in half with great results.
  • I recommend using low sodium chicken broth to help control the salt content of the dish. You can also use low sodium soy sauce if you prefer. Use a tamari sauce to make this recipe gluten free.
  • Chicken stir fry is great served over rice, quinoa, cauliflower rice or noodles.

How To Make Stir Fry

Now that you have your stir fry sauce ready, how do you use it to make a delicious stir fry? The key is to use the right ratio of sauce to protein to vegetables. This recipe makes one cup of sauce, which is the perfect amount to add to one pound of protein plus six cups of vegetables. This will serve four people. If you want to serve your stir fry over rice, youll need four cups of cooked rice.

To make a stir fry:

  • Heat 1 tablespoon of oil in a large skillet or wok. Add your protein and cook it until browned and almost cooked through. Transfer the protein to a clean plate.
  • Add another tablespoon of oil to the pan, along with your vegetables. Stir fry until the veggies are crisp-tender.
  • Add the protein back to the pan. Stir in the stir fry sauce. Cook, stirring, until the sauce thickens and your protein is cooked through, 2 to 3 minutes.
  • How long does stir fry sauce last?

    You can keep this sauce in your refrigerator for up to one week, stored in an airtight container. I keep mine in a jar with a lid.

    Is this recipe vegetarian?

    You can make this recipe vegetarian by using vegetable broth instead of chicken broth. For a vegan stir fry sauce, also replace the honey with pure maple syrup.

    • Make Stir Fry Sauce In a small bowl, whisk together the cornstarch, chicken broth, soy sauce and honey. Then set the stir fry sauce aside.
    • Prepare Pan Heat 1 tablespoon of the olive oil to a large skillet over medium high heat.
    • Cook Chicken Then add the chicken and season it with salt and pepper. Sauté the chicken for 3-5 minutes until browned and cooked through. Then remove from the skillet to a separate plate.
    • Begin Cooking Vegetables Reduce the heat to medium high heat and add the rest of the olive oil to the sauce pan. Then add in the veggies . Cook, stirring occasionally, and cook until tender but still crispy.
    • Cook Ginger and Garlic Then stir in the ginger and garlic and cook for 1-2 minutes until the garlic is aromatic.
    • Add cook chicken and sauce Then add the chicken back to the skillet. Stir in the stir fry sauce and stir to coat the chicken and vegetables with the sauce.
    • Cook until Mixture is boiling Bring the mixture to a boil, stirring occasionally, and let the mixture boil for 1 minute to thicken the sauce.
    • Serve and Enjoy Top with sesame and green onions and serve as is or over rice and enjoy. Season with salt and black pepper.
