Oriental Marinade/sauce Like Yoshida Sauce

I have been playing with a sauce for some time to try to duplicate a sauce/marinade called Yoshida. Seems our local Sam’s club has stopped carrying this sauce. This might even surpass the store bought! It makes around 3 1/2-4 cups and keeps well in the refrigerator for as long as soy sauce keeps. Great on chicken, pork, beef, tofu…

Provided by Deb Crane

1 1/2 c brown sugar, firmly packed
1 3/4 c sugar
8 green onions, cut into 1 1/2 inch sections
about a half inch chunk of ginger root, diced fairly small
2 clove garlic,chopped

Steps:

  • 1. Combine all ingredients except for the hoisin sauce in a medium sauce pan.
  • 2. Bring to a good boil, then reduce heat and simmer for 15 minutes, stirring constantly.
  • 3. After simmering for 15 minutes, take off heat and add hoisin sauce. Stir to blend well.
  • 4. Let cool to room temp. and refrigerate until ready to use as a marinade/sauce. This will keep for a very long time in the fridge.
  • 5. This marinade is awesome on chicken. Just pour some over whatever chicken you are cooking and marinade for at least 1 hour, or up to over night. Grill, stir fry, bake for a wonderful flavorful entree!
  • 6. Do not stop with chicken! This works for any meat and tofu as well… even vegetables are awesome with this sauce. Just add to your stir fry and mix.

Can Vegans Eat Teriyaki Sauce

Most teriyaki sauces are vegan, and soy sauce is naturally vegan, but some may have honey depending on the recipe. Changs teriyaki sauce I know is vegan and its SO good! This recipe is sweetened with a mix of maple syrup and light brown sugar but if you prefer using some honey, it tastes delicious as well!

What Does Mr Yoshida Sauce Taste Like

Mr. Yoshida

Yoshidas a lot because its got the sweetness and garlic flavor, and taste authentically and familiarly teriyaki. I use it for grilling, sauteing, and baking all sorts of protein fish, chicken, beef, tofu and I also use it to saute/bake veggies. Its great.

As an adult especially one that now writes books about how to healthify your kitchen by making your own pantry staples I really truly do miss Mr. Yoshida’s. Sure, it’s still found at my local Costco, but if the story of how the sauce originated is true, then the recipe must have changed significantly through its history, as the high fructose corn syrup, dextrose, and modified corn starch aren’t ingredients that are readily available in most home kitchens.

But then I stumbled upon this miraculous mix of ingredients. I had been trying to come up with a Yoshida-like sauce for my homemade pantry staples book, but hadn’t gotten it quite right. Turns out, the problem was that I needed to use a more flavorful vinegar and far less ginger since this sauce is more sweet and robust than peppery.

And thus, this gourmet Asian marinade and cooking sauce was born. It’s best for stir-fries and barbecued chicken thighs where it has opportunity to caramelize a bit, but you can use it spooned over rice as well. It’s a bit overwhelming to be a dipping sauce, though, so I don’t recommend it for that application, but there’s a lovely one in my first e-book, if you’re needing something just right for dim sum night.

Enjoy!
