Draining Water From Cucumbers

Easy Homemade Vegan Tzatziki Sauce

Cucumbers are full of water, so the next step of draining the water from the cucumber is arguably the most important. There are a number of methods for doing this.

  • Squeeze with hands over the sink
  • Place on a paper towel and allow to sit for 30+ minutes
  • Pour the cucumber into a fine sieve and allow to drain over a bowl

Personally, to speed things up, I like to place the cucumber in a sieve and use my fingers to press out the water over a bowl or the sink.

Next, place all of the other ingredients plus half of the grated cucumber into a blender or food processer and blend until nice and smooth.

Pour the tzatziki sauce into a bowl and stir in the other half of the prepared cucumber. This provides the dip with a little more texture and makes it fuller.

Serve immediately or place in the refrigerator for a couple of hours. Chilling will help firm it up and gives time for the flavors to marry up. Keeps for about 4 days in an airtight container in the refrigerator.

I have a new favorite dressing! I created this homemade vegan Yogurt Tzatziki Sauce for my Easy Baked Falafels, but I discovered it is also a super delicious salad dressing. This recipe is super tangy & flavorful!

Its the easiest thing to make add all the ingredients to a blender or food processor and blend until smooth and creamy. Its a little thin , so if you like your Tzatziki sauce to be a little thicker you can use a silken tofu instead of yogurt.

I really recommend using fresh dill instead of dried dill for this recipe. The smell & flavor is incredible! Its totally worth the extra expense.

A simplified and healthy version of a classic Middle Eastern favorite, these baked vegan falafel are fluffy on the inside, crispy on the outside, and paired with tzatziki: a tangy dairy-free, garlic yogurt sauce.

  • 10ozunflavored Greek-style plant-based yogurt

  • 2persian cucumberspeeled, shredded + squeezed
  • 1tspred wine vinegar
  • 1.5tbspextra virgin olive oil
  • 1-2tbspfresh chopped dilloptional

How To Soak Cashews

To soak cashews, place in a small bowl or jar, and fill with enough water to cover the cashews. Let sit for 30 minutes to overnight. The longer they sit, the softer they will be and easier to blend.

Once soaked and softened, rinse and drain. Then add to your blender and blend with some liquid and whatever else you are using.

If you forget to soak your cashews, you can place in a small bowl, cover water, and microwave for 1-2 minutes until softened. Drained and then use as you would soaked cashews.

  • Drain the cucumber well: If you dont, the sauce will get watery and unpleasant much sooner. The only time its not AS important is if you plan on eating it all in one go.
  • Its best to marinate: While its not essential, I DO recommend leaving the tzatziki to marinate for 2+hours for the best overall flavor.
  • If your yogurt isnt thick enough: You can manually strain it through several layers of cheesecloth or a nut milk bag, allowing the excess liquid to drain for a thicker yogurt. This will take several hours based on how thick the yogurt is.
  • If your cucumber has lots of seeds: You might prefer to de-seed it first before grating. That way, it wont water down the dairy-free tzatziki.

What If I Dont Have A Microwave

You do not need a microwave to make the vegan cheese sauce since thats done on the stovetop and with a blender. However, if you dont have a microwave to prepare the broccoli and cauliflower florets, you can still enjoy the convenience of Ocean Mist Farms Season and Steam products. Just add the florets to a steamer basket set inside a large pot with lid along with ¾ cup water and bring just to a boil uncovered. Lower the heat slightly, place the lid on the pot, and steam for 3-5 minutes or until the florets are tender to your liking.

The sauce is too thick.

This can happen if too much stock evaporates while cooking the cauliflower. If needed, add a little extra stock or water to the blender.

The sauce isnt smooth.

This can happen if your blender isnt very strong. In this case, pour the sauce through a fine-mesh sieve to remove any pieces that didnt blend properly.

The sauce needs more flavor.

When making the sauce, start with 1 teaspoon of salt and 1 tablespoon of nutritional yeast, then add more as needed

  • Next, zest and juice the lemon, and finely chop the dill and garlic.

    The Many Faces Of Vegan Tzatziki

    My first version of this authentic vegan tzatziki sauce was a tofu based one. This was at the beginning of my creative journey before I knew the magical power of cashews. Since we do not have nut allergies, cashews are my go to for ultimate creaminess. I have other players in the creamy game , but my core creaminess comes from my fave little cashew.
