Draining Water From Cucumbers

Easy Homemade Vegan Tzatziki Sauce

Cucumbers are full of water, so the next step of draining the water from the cucumber is arguably the most important. There are a number of methods for doing this.

  • Squeeze with hands over the sink
  • Place on a paper towel and allow to sit for 30+ minutes
  • Pour the cucumber into a fine sieve and allow to drain over a bowl

Personally, to speed things up, I like to place the cucumber in a sieve and use my fingers to press out the water over a bowl or the sink.

Next, place all of the other ingredients plus half of the grated cucumber into a blender or food processer and blend until nice and smooth.

Pour the tzatziki sauce into a bowl and stir in the other half of the prepared cucumber. This provides the dip with a little more texture and makes it fuller.

Serve immediately or place in the refrigerator for a couple of hours. Chilling will help firm it up and gives time for the flavors to marry up. Keeps for about 4 days in an airtight container in the refrigerator.

Cucumber Dill Vegan Greek Tzatziki Sauce

I have a new favorite dressing! I created this homemade vegan Yogurt Tzatziki Sauce for my Easy Baked Falafels, but I discovered it is also a super delicious salad dressing. This recipe is super tangy & flavorful!

Its the easiest thing to make add all the ingredients to a blender or food processor and blend until smooth and creamy. Its a little thin , so if you like your Tzatziki sauce to be a little thicker you can use a silken tofu instead of yogurt.

I really recommend using fresh dill instead of dried dill for this recipe. The smell & flavor is incredible! Its totally worth the extra expense.

How To Soak Cashews

To soak cashews, place in a small bowl or jar, and fill with enough water to cover the cashews. Let sit for 30 minutes to overnight. The longer they sit, the softer they will be and easier to blend.

Once soaked and softened, rinse and drain. Then add to your blender and blend with some liquid and whatever else you are using.

If you forget to soak your cashews, you can place in a small bowl, cover water, and microwave for 1-2 minutes until softened. Drained and then use as you would soaked cashews.

Recipe Notes And Faqs

  • Drain the cucumber well: If you dont, the sauce will get watery and unpleasant much sooner. The only time its not AS important is if you plan on eating it all in one go.
  • Its best to marinate: While its not essential, I DO recommend leaving the tzatziki to marinate for 2+hours for the best overall flavor.
  • If your yogurt isnt thick enough: You can manually strain it through several layers of cheesecloth or a nut milk bag, allowing the excess liquid to drain for a thicker yogurt. This will take several hours based on how thick the yogurt is.
  • If your cucumber has lots of seeds: You might prefer to de-seed it first before grating. That way, it wont water down the dairy-free tzatziki.

Purely Elizabeth Cauli Hot Cereal $3 Per 14 Ounce Cup

Its not every day that you can say that you had vegetables for breakfast on the go, but Purely Elizabeth just made that possible with their new Cauli Hot Cereal cups. These contain freeze-dried cauliflower meant to mimic the texture of oats, in addition to almond protein powder, coconut flakes, coconut sugar, hazelnuts, freeze-dried strawberries, chia seeds, and flax seeds, packing your morning with a nutritious punch.

I will admit: When I poured in the boiling water and rehydrated the cups contents, I got a slight whiff of cauliflower, which made me nervous. But Im happy to say that, upon tasting, I was pleasantly surprised at the way all the flavors work together. Just make sure you eat this stuff before it gets gluey, like you would with regular oatmeal.

Go take a selfie, or have someone snap a photo of you, or go take a good long look in your mirror.

Take note of the things you like about your appearance.

Acknowledge your muscles that keep you upright.

Give thanks for the breath you just took.

Think about how resourceful your body is for keeping you going throughout the day.

Find wonder in how your blood flows through your veins carrying all those nutrients to the organs that need it.

Rejoice in those juicy womanly curves that your significant other can hold onto for love and support.

Gaze upon your hands and celebrate how they so ably care for your children and others in need.

And then, be your own champion!

Now in my 40s, one of the most unforgettable experiences of my life was the day I crossed the finish line of a 15K race at the Biltmore Estate here in Asheville, NC. In a few years, I had gone from a miserable human being who couldnt walk to the end of her driveway without gasping for breath to a strong, fierce woman who jogged 9.3 miles without stopping! That was the monumental day when I mightily crushed shame with every step and let guilt powerfully fall from my shoulders with every breath.

Mostly, I see a luscious, fierce, healing woman who carries scars inside and out. I see a survivor and it thrills my soul.

What To Serve With Cauliflower Alfredo Sauce

Pasta is the obvious choice here. Linguini, fettuccini, or even penne or fusilli all go well with this sauce.

And you can add extras like spinach, steamed broccoli, peppers, peas or any other veggie that you like.

This is also a great base recipe. You can use it to build a special dinner. Here are a few ideas:

Whole Foods Rosa Alfredo $469 For 145 Ounces

Alfredo sauce is a bit of an outlier on this decently plant-based list, but Im not complaining. Whole Foods just launched a line of their own signature jarred Alfredo sauces including marinated garlic, tomato, and pesto flavors. I boiled up some Banza penne and paired it with the Rosa Alfredo and I dont think I ever need to buy another kind of jarred pasta sauce again. Compliments to the chef oh wait, thats me.

What If I Dont Have A Microwave

You do not need a microwave to make the vegan cheese sauce since thats done on the stovetop and with a blender. However, if you dont have a microwave to prepare the broccoli and cauliflower florets, you can still enjoy the convenience of Ocean Mist Farms Season and Steam products. Just add the florets to a steamer basket set inside a large pot with lid along with ¾ cup water and bring just to a boil uncovered. Lower the heat slightly, place the lid on the pot, and steam for 3-5 minutes or until the florets are tender to your liking.

Ingredients For Steamed Vegetables With Vegan Cheese Sauce

Heres what you need to make this easy veggie side dish:

  • Ocean Mist Farms Floret Medley A mix of precut and pre-washed broccoli and cauliflower florets in a convenient microwave steam bag.
  • Seasonings of choice You are only limited by your imagination and spice rack here. Were keeping it simple with fresh lemon juice, salt, and black pepper.
  • Yukon gold potato The creamy, buttery texture of Yukon gold potatoes make them ideal for this vegan cheese sauce. However, you can successfully substitute peeled Russet or red potatoes.
  • Carrot In addition to adding a bit of vitamin A from beta-carotene, carrot adds subtle sweetness and gorgeous orange color to this dairy-free cheese sauce.
  • Raw cashews Roasted cashews can be used in a pinch, if thats what you have on hand. Macadamia nuts are a good substitute for cashews. For a nut-free version, use silken tofu or add an extra Yukon gold potato.
  • Unsweetened, plain almond milk If youre avoiding almonds, try unsweetened cashew, hemp, or oat milk instead.
  • Nutritional yeast This ingredient is used to add additional protein, vitamins, minerals, and antioxidants to meals. Its also a great way to add that savory-umami-nutty flavor you find in cheese without, well, adding any cheese.
  • Fresh lemon juice
  • Fine salt & black pepper

Troubleshooting Cauliflower Alfredo Sauce

Vegan Tzatziki Sauce

The sauce is too thick.

This can happen if too much stock evaporates while cooking the cauliflower. If needed, add a little extra stock or water to the blender.

The sauce isnt smooth.

This can happen if your blender isnt very strong. In this case, pour the sauce through a fine-mesh sieve to remove any pieces that didnt blend properly.

The sauce needs more flavor.

When making the sauce, start with 1 teaspoon of salt and 1 tablespoon of nutritional yeast, then add more as needed

The Many Faces Of Vegan Tzatziki

My first version of this authentic vegan tzatziki sauce was a tofu based one. This was at the beginning of my creative journey before I knew the magical power of cashews. Since we do not have nut allergies, cashews are my go to for ultimate creaminess. I have other players in the creamy game , but my core creaminess comes from my fave little cashew.

I left the original recipe in the notes, for all my nut free friends, but I have updated the main recipe to the version we make now. Its creamy, its garlicky and has a nice little tang. And it goes perfect on my favorite vegan Greek gyros or Vegan Shawarma!
