  • 4 bamboo skewers, soaked in water for 30 minutes
  • 4 boneless, skinless chicken breasts, cut into cubes
  • 1 box instant wild rice mix
  • 1/2 cup golden raisins
  • 1 pint cherry tomatoes, cut in half
  • 1/2 cup sliced almonds, toasted

Directions

  • Heat Grill. Place chicken cubes on bamboo skewers and place in a shallow pan.

    Directions

  • Place shrimp in a shallow bowl or plastic storage bag. Add Citrus Rosemary Sauce and stir shrimp to coat on all sides. Cover and refrigerate 30 minutes 2 hours.
  • Preheat oven to 400 degrees F. Place bacon on a rimmed baking sheet, make sure strips do not overlap. Bake about 6-10 minutes until just starting to crisp, but still pliable. Drain grease from pan and wipe clean. Reduce oven temperature to 350 degrees F.
  • Wrap each shrimp with one strip of bacon. Place on baking sheet seam side down. Season with salt and pepper.
  • Bake 10-15 minutes until the shrimp are pink and bacon is crisp. Turn shrimp over half way through the cook time, being careful that the bacon remains wrapped.
  • Insert a toothpick into each shrimp. Garnish with rosemary and fresh orange zest. Serve with a small dish of fresh Citrus Rosemary Sauce .

    Well hello little shrimp!! Its beenawhilesince Ive seen you guys in my kitchen, and Ive missed you so!! You see, my friends, I found out recently that J is not a huge fan of shrimp if they taste fishy. He loves seafood, so its not an aversion to that, but I guess if they are prepared a certain way the flavor is off-putting to him.

    So sad, because I love, love, love shrimp. But, because I dont share this taste of fishy shrimp, Ive been avoiding them altogether. But, past experience has shown that if there is a sauce of some sort, it tends to be well-received. And he bought some shrimp recently to fish with and then didnt use it, so I had a nice little bag in the freezer just begging to be cooked! Ive had this recipe sitting on one of my boards for quite some time, so I was excited for the chance to make it. When I first looked at the ingredients I was a little put-off as I dont usually use bottled marinades or sauces, and then of course my grocery stored didnt have the exact one that was used. Of course. But they did have one that was similar and I decided to give it a whirl. And it was delicious!
