Overall, a little less than half of my tomatoes went toward this component .
The method is simple: Pour the purÃ©e into rimmed baking sheets or baking dishes , and set them in a low oven, stirring from time to time, especially as it begins to thicken, until a rich, sweet extract is formed. Don’t even think of taking a shortcut with store-bought tomato paste here: This stuff is way more flavorful than any canned tomato paste I’ve ever tried.

Cut out any severely bruised or moldy/icky parts of the tomato you dont want that in your sauce! Then, cut the tomatoes into quarters , and start cranking!

The Question Of Aromatics
