  • 3/4 cup all purpose flour
  • 1/4 cup confectioners sugar
  • 1/4 cup finely ground toasted pecans
  • 1/2 cup cold unsalted butter
  • Filling:

  • 16 ounces cream cheese, room temperature
  • 1/8 teaspoon salt
  • 1 1/4 cups white sugar
  • 16 ounces Mascarpone cheese, room temperature
  • 1 1/2 teaspoons fresh lemon juice
  • 1 1/2 teaspoons vanilla
  • 4 large eggs, room temperature
  • 2 large egg yolks
  • 1 jar Stonewall Kitchen Bittersweet Chocolate Sauce, lukewarm

Directions

  • For the bottom crust, preheat oven to 350 degrees F. Line the bottom of a 9-inch spring form pan with foil and grease, or parchment paper.
  • In a food processor combine flour, sugar and pecans. Pulse briefly. Add unsalted butter pulse until mixture resembles fine crumbs. Press crust mixture evenly into bottom of prepared pan. Bake for 20-25 minutes until lightly golden. Cool and grease sides of pan.
  • For the filling, increase oven temperature to 500 degrees F.
  • In a mixer, using paddle attachment add cream cheese, salt, and sugar. Beat until combined and fluffy. Add Mascarpone, lemon juice and vanilla. Beat on low speed until just blended.
  • Add eggs and egg yolks two at a time. Beat on low speed until eggs are incorporated.
  • Place pan on cookie sheet. Reserve 1 1/2 cups of the filling, pour remainder of the filling onto the prepared crust. Stir 1/2 cup of chocolate sauce into the reserved filling. Place dollops of the chocolate filling on top of cake. Drag a knife through chocolate forming a swirl pattern.

    • 1 cup pecans or walnuts, coarsely chopped
    • 2 cups miniature marshmallows

  • Preheat oven to 375 degrees F. Grease a 9×9-inch baking pan.
  • Place flour, sugar and salt in the bowl of a food processor and pulse to combine.
  • Add butter. Process until the mixture is like coarse meal.
  • Add the yolk mixture and vanilla. Blend until the dough forms clumps. Stop several times during this process to scrape down sides of bowl.
  • Pat dough evenly over the bottom of the greased pan. Bake for 20 minutes, until golden on top and brown on the edges. Let cool on a rack.
  • Warm the jar of Bittersweet Chocolate Sauce.
  • Spread a thin layer on top of cooked cookie bottom .
  • Sprinkle with chopped nuts, then marshmallows, then coconut.
  • Drizzle remainder of sauce over the top of the bars in a crosshatch design.
  • Allow bars to set until chocolate sauce firms up.

  • In the bowl of an electric mixer fitted with the paddle attachment, cream together the butter, granulated sugar and brown sugar until light and fluffy, scraping the sides of the bowl as necessary.
  • Add in the eggs, one a time, mixing thoroughly after each addition. Add vanilla and mix to combine.
  • In a separate bowl, sift together the cocoa powder, flour, baking soda, baking powder and salt. Slowly add the flour mixture into the butter mixture. Mix until fully incorporated.
  • Remove dough from bowl and pat into 2 round discs of equal size. Wrap in plastic wrap and refrigerate for at least one hour.
  • When ready to bake, preheat oven to 350° F and grease two cookie sheets or line with parchment paper.
  • Remove one disc of dough from the refrigerator. Roll dough into balls about 1 ½ in diameter. Roll in the remaining granulated sugar so they are fully coated. With your thumb, create an indent on the top of the cookie and place on cookie sheet. Continue until sheets are full and place any remaining dough back into the refrigerator.
  • Fill each indent with about 1 teaspoon of mint jelly. Place in the oven and bake for 12-14 minutes, until cookies have set and jelly has melted.
  • Allow the cookies to cool on the cookie sheets for 5 minutes and then move to a wire rack to cool completely. Repeat with remaining cookie dough.
