Best Plant Based Vegan Alfredo Sauce

Alfredo sauce is a bit of an outlier on this decently plant-based list, but Im not complaining. Whole Foods just launched a line of their own signature jarred Alfredo sauces including marinated garlic, tomato, and pesto flavors. I boiled up some Banza penne and paired it with the Rosa Alfredo and I dont think I ever need to buy another kind of jarred pasta sauce again. Compliments to the chef oh wait, thats me.

What To Serve With Cauliflower Alfredo Sauce

Pasta is the obvious choice here. Linguini, fettuccini, or even penne or fusilli all go well with this sauce.

And you can add extras like spinach, steamed broccoli, peppers, peas or any other veggie that you like.

Ingredients For Healthy Pumpkin Alfredo

This recipe is a fun fall twist on my wildly popular Healthy Alfredo Sauce and uses similar ingredients, too!

  • garlic: about 4-5 cloves depending on your preference, minced
  • olive oil: or olive oil spray
  • butter: you can also make it vegan with vegan butter or use ghee
  • flour: gluten free or whole wheat flour will work, but avoid almond flour as your sauce wont thicken enough
  • original unsweetened almond milk: cashew milk is a great substitution option
  • white cheddar cheese: freshly shredded, packed in tight
  • Parmesan Reggiano cheese: also freshly shredded, packed in tight
  • Pecorino Romano cheese: you can also just substitute extra Parmesan cheese
  • pumpkin puree: be sure to use pumpkin puree and not pumpkin pie filling, as pumpkin pie filling is sweetened. Also, if your pumpkin is watery , strain it out a little before mixing it into the sauce. I love Aldis canned pumpkin!
  • spices: fresh ground pepper, salt, nutmeg and fresh parsley to finish it all off!

Troubleshooting Cauliflower Alfredo Sauce

Easy Dairy

The sauce is too thick.

This can happen if too much stock evaporates while cooking the cauliflower. If needed, add a little extra stock or water to the blender.

The sauce isn’t smooth.

This can happen if your blender isn’t very strong. In this case, pour the sauce through a fine-mesh sieve to remove any pieces that didn’t blend properly.

The sauce needs more flavor.

When making the sauce, start with 1 teaspoon of salt and 1 tablespoon of nutritional yeast, then add more as needed

Why Vegan Alfredo Is Better Than Traditional

Traditional garlic alfredo sauce has butter, milk, cream, parmesan cheese and garlic in it. Major dairy overload! Bloated, icky feeling. It also does nothave onion in it. However, I wanted to give my alfredo sauce that slightly, sweet richness typically reached by cream and butter, so I added cooked onions, lots of them.

Heres a little side by side nutrition for my alfredo sauce in comparison to Olive Gardens version:

Mine per 1/2 cup serving which is a hefty serving:

125.2 calories, 7 g fat, 5.6 g protein, 11.3 carbs

and Olive Gardens:

460 calories, 43 g fat!!, 9 carbs, 8 grams protein

Wow, what a difference! Hey, so it has a hair less carbs, but who cares when all of my ingredients are quality ingredients and not heavy on the heart. Nothing wrong with indulging occasionally, but you could eat my alfredo sauce weekly with much less guilt.

Primal Kitchen No Dairy Alfredo Sauce With Cashew Butter $799

Look: Like grey baby puke. With pepper flakes. I assume this one is the cauliflower one. .

Nose: Herbs, pepper, inorganic matter.

Taste: Oh God, why is it so gelatinous? This one looks like a jellyfish just shit a chia seed smoothie. It tastes quite a bit better than it looks, Ill say that for it. If it hadnt I might be getting my stomach pumped right now. More sort of just savory and very herb-forward.

If I was full-on blindfolded and hadnt been expected something that resembled alfredo, this might not have been so awful. It didnt taste that bad, it was just hard to overcome that bizarre color and texture.

Purely Elizabeth Cauli Hot Cereal $3 Per 14 Ounce Cup

Its not every day that you can say that you had vegetables for breakfast on the go, but Purely Elizabeth just made that possible with their new Cauli Hot Cereal cups. These contain freeze-dried cauliflower meant to mimic the texture of oats, in addition to almond protein powder, coconut flakes, coconut sugar, hazelnuts, freeze-dried strawberries, chia seeds, and flax seeds, packing your morning with a nutritious punch.

I will admit: When I poured in the boiling water and rehydrated the cups contents, I got a slight whiff of cauliflower, which made me nervous. But Im happy to say that, upon tasting, I was pleasantly surprised at the way all the flavors work together. Just make sure you eat this stuff before it gets gluey, like you would with regular oatmeal.

How To Make Vegan Cauliflower Alfredo Sauce

Whole-Food, Plant-Based Creamy Vegan Alfredo (Two Ways)

Okay, now that we’ve talked a bit about the sautéed garlic in this sauce, here’s a summary of the overall process so you can see how simple it is:

  • Sauté the garlic in tahini or cashew butter and transfer it to a blender.
  • Steam the cauliflower and add it to the blender.
  • Cook the pasta.
  • While the pasta cooks, add the remaining sauce ingredients to the blender and blend until smooth.
  • Drain the pasta and pour the sauce into the now empty pasta pot. Heat the sauce for just a couple of minutes, return the pasta to the pot, and stir to coat.
  • Garnish with fresh basil or parsley and serve.
  • Sometimes I like to add a bit of lemon zest for color and fresh lemon pop, but that’s up to you. Mark and I both found this to be one of those recipes that tastes even better the next day. So if you’re only cooking for one or two people, don’t worry about having too much food leftover. Enjoy it over several days! I haven’t tried freezing this sauce but my guess is that it would not freeze well. I could be wrong, though! So if you have experience with that please let us know in the comments.

    Looks: Weird and chunky. Looks a little like New England clam chowder.

    Nose: Sort of ranchy again.

    Taste: Like lemony and grainy? What even are those chunks? It tastes like lemon juice thickened with drywall paste. I think theres dried onion in there?

    In retrospect, I assume those chunks were the cauliflower, which is much less gross when you know what they are. But as with this brands non-vegan sauce, all that veg stock and dried veg made it taste like ranch dressing.

    Whole Foods Alfredo With Roasted Garlic $899

    Looks: More like bechamel than queso, clearly a thickener in there, probably flour.

    Nose: Not much, just pepper and flour.

    Taste: Oh God, what is that? What IS that? This is awful. Reaching for the water.

    The Whole Foods marinara was one of my favorites in the marinara competition, and this was clearly another attempt at a premium product. It just had a very strange aftertaste that I found off-putting like maybe the garlic was over roasted and bitter? Or maybe it was just unexpected after all the non-garlic sauces? I generally like garlic, so Im scratching my head a little bit over my reaction to this one. Something about it tasted very off though.

    What Ingredients Do I Need To Make The Best Vegan Alfredo

    20 Minute Vegan Alfredo

    Whole Wheat Pasta: I always like to choose a whole wheat pasta to add in some extra whole grains into my diet! You can opt for gluten free pasta to make this recipe gluten free!

    Silken Tofu: This can be found in most grocery stores right beside the firm tofu. Do not swap as this will alter the texture!

    Raw Cashews: Make sure to use raw cashews so the sauce comes out super creamy!


    Onion Powder

    Nutritional Yeast: This is what gives our alfredo the cheesy taste!

    Vegetable Stock: My absolute favorite brand is the Better Than Bouillon No Chicken Base. It is out of this world and smells so much like chicken stock it is insane! And yes, it is 100% vegan!

    Plant Milk: Any plant milk will work here just make sure it is unsweetened!

    Coconut Aminos: This is a salty, savory seasoning sauce made from the sap of coconut palm and sea salt. It is similar to light soy sauce but has a touch of sweetness!

    Homemade Whole30 Alfredo Sauce Ingredients

    Theres fewer than 10 ingredients in this Whole30 homemade alfredo sauce, and many of them are likely to be ones you already have, which makes this a no-brainer when it comes to making your own alfredo sauce. Youll need 1 cup of raw cashews, do not use salted and roasted cashews. I always order the bags of raw cashews from Thrive Market, but you can get them at most major grocery stores.

    Youll also need lemon juice, half of a yellow onion, minced garlic, nutritional yeast and a few spices, like salt, rosemary and pepper. Nutritional yeast is a Whole30, Paleo and vegan cheese substitute that isnt really cheese, but it gives any recipe its in a cheesy, nutty flavor.     This is also a great replacement for any mac and cheese dish. I havent yet made a cheese sauce that I enjoy, so for now we are rocking this alfredo recipe all the time and make it instead of mac and cheese.

    The Best Vegan Alfredo Sauce

    Dairy free

    No tofu or soy

    No heavy cream

    Its perfect for serving over your favorite pasta, such as fettuccine, linguine, tortellini, spaghetti, rigatoni, penne, rotini, macaroni, or ravioli.

    Or if you want to try something other than pastas, the dairy free Alfredo is also great with broccoli or roasted vegetables, gnocchi, rice, stuffed shells, lasagna, low carb zucchini noodles , baked potatoes, or spaghetti squash .

    You can even use it as a vegan white sauce for an Alfredo-style Vegan Pizza!

    How To Make Vegan Alfredo Sauce:

    Vegan Spinach Alfredo Skillet Lasagna

    STEP 1: Cut the cauliflower into florets. Place them in a sauce pan together with the cashews, the garlic, and the almond milk.

    STEP 2: Add the nutritional yeast. Stir everything with a wooden spoon until well combined.

    STEP 3: Cover with a lid and cook for 20 minutes. There wont be much liquid left. Transfer everything into a high speed blender. Add the lemon juice, a pinch of nutmeg, the apple cider vinegar, and 1/2 cup more unsweetened almond or soy milk as well as salt and pepper.

    STEP 4: Process until smooth. This should take about 30 seconds.

    STEP 5: Cook the fettuccine according to the instructions on the package. Set aside.

    STEP 6: Pour the blended sauce into a pan and cook for a minute.

    STEP 7: Then add the cooked fettuccine and stir until well combined. Season with salt and pepper again if you want.

    STEP 8: Serve immediately and sprinkle with freshly chopped parsley. Enjoy!

    Easy Vegan Alfredo Sauce
