My first version of this authentic vegan tzatziki sauce was a tofu based one. This was at the beginning of my creative journey before I knew the magical power of cashews. Since we do not have nut allergies, cashews are my go to for ultimate creaminess. I have other players in the creamy game , but my core creaminess comes from my fave little cashew.

I left the original recipe in the notes, for all my nut free friends, but I have updated the main recipe to the version we make now. Its creamy, its garlicky and has a nice little tang. And it goes perfect on my favorite vegan Greek gyros or Vegan Shawarma!

Ingredients For Steamed Vegetables With Vegan Cheese Sauce

Heres what you need to make this easy veggie side dish:

  • Unsweetened, plain almond milk If youre avoiding almonds, try unsweetened cashew, hemp, or oat milk instead.
  • Nutritional yeast This ingredient is used to add additional protein, vitamins, minerals, and antioxidants to meals. Its also a great way to add that savory-umami-nutty flavor you find in cheese without, well, adding any cheese.
  • Fresh lemon juice

  • We freeze the pesto in ice cube trays and use it right out of the freezer for cooking.

    Ingredients For The Egg Sauce

    • Raw cashews: cup
    • Nutritional yeast: ¼ cup
    • Turmeric: ½ teaspoon
  • Add the egg’ sauce ingredients to the blender and blend until smooth. Set aside.
  • Cook the gluten-free spaghetti as per the package guidelines.
  • Add the dairy-free butter to a frying pan and melt it over low-medium heat. Add the sliced mushrooms, crushed garlic smoked paprika, and sauté until the mushrooms are soft.
  • Add the cooked spaghetti with the mushrooms into the pan and toss them together.
  • Pour the vegan carbonara sauce over the top of the spaghetti and mushrooms and mix them. Then add the sea salt and black pepper and mix until everything is coated and heated.

    BEST VEGAN ALFREDO | Dairy-free Pasta Sauce

    Looks: More like bechamel than queso, clearly a thickener in there, probably flour.

    Nose: Not much, just pepper and flour.

    Taste: Oh God, what is that? What IS that? This is awful. Reaching for the water.

    The Whole Foods marinara was one of my favorites in the marinara competition, and this was clearly another attempt at a premium product. It just had a very strange aftertaste that I found off-putting like maybe the garlic was over roasted and bitter? Or maybe it was just unexpected after all the non-garlic sauces? I generally like garlic, so Im scratching my head a little bit over my reaction to this one. Something about it tasted very off though.

    Why Vegan Alfredo Is Better Than Traditional

    Traditional garlic alfredo sauce has butter, milk, cream, parmesan cheese and garlic in it. Major dairy overload! Bloated, icky feeling. It also does nothave onion in it. However, I wanted to give my alfredo sauce that slightly, sweet richness typically reached by cream and butter, so I added cooked onions, lots of them.

    Heres a little side by side nutrition for my alfredo sauce in comparison to Olive Gardens version:

    Mine per 1/2 cup serving which is a hefty serving:

    125.2 calories, 7 g fat, 5.6 g protein, 11.3 carbs

    and Olive Gardens:

    460 calories, 43 g fat!!, 9 carbs, 8 grams protein

    Wow, what a difference! Hey, so it has a hair less carbs, but who cares when all of my ingredients are quality ingredients and not heavy on the heart. Nothing wrong with indulging occasionally, but you could eat my alfredo sauce weekly with much less guilt.

    Ingredients

    • Gluten-free all-purpose flour: 1 tablespoon
    • Vegan white wine: 1 cup

  • Add the white wine, and stir. Bring to a simmer and gently simmer for 3 or 4 minutes until the sauce thickens. Remove from heat and add the salt, vegan parmesan or nutritional yeast, fresh herbs, and ground pepper. Stir until the parmesan or nutritional yeast has melted into the sauce.
  • Garnish with extra herbs or black pepper. Serve with pasta of your choice. The sauce makes enough for about 1 lb of pasta.

    • Drain the cucumber well: If you dont, the sauce will get watery and unpleasant much sooner. The only time its not AS important is if you plan on eating it all in one go.
    • Its best to marinate: While its not essential, I DO recommend leaving the tzatziki to marinate for 2+hours for the best overall flavor.
    • If your yogurt isnt thick enough: You can manually strain it through several layers of cheesecloth or a nut milk bag, allowing the excess liquid to drain for a thicker yogurt. This will take several hours based on how thick the yogurt is.
    • If your cucumber has lots of seeds: You might prefer to de-seed it first before grating. That way, it wont water down the dairy-free tzatziki.

    How To Make Vegan Alfredo Sauce:

    Vegan Alfredo Sauce!! GF Oil-Free & No Nutritional Yeast ð§

    STEP 1: Cut the cauliflower into florets. Place them in a sauce pan together with the cashews, the garlic, and the almond milk.

    STEP 2: Add the nutritional yeast. Stir everything with a wooden spoon until well combined.

    STEP 3: Cover with a lid and cook for 20 minutes. There wont be much liquid left. Transfer everything into a high speed blender. Add the lemon juice, a pinch of nutmeg, the apple cider vinegar, and 1/2 cup more unsweetened almond or soy milk as well as salt and pepper.

    STEP 4: Process until smooth. This should take about 30 seconds.

    STEP 5: Cook the fettuccine according to the instructions on the package. Set aside.

    STEP 6: Pour the blended sauce into a pan and cook for a minute.

    STEP 7: Then add the cooked fettuccine and stir until well combined. Season with salt and pepper again if you want.

    STEP 8: Serve immediately and sprinkle with freshly chopped parsley. Enjoy!
