Some people leave the seeds in their tomatoes. I prefer to take as many out as I can, because they can taste bitter and be an odd texture in sauces. To seed your tomatoes, first cut them into quarters. If you have very large tomatoes, you may want to cut them even smaller.

Place the quartered tomatoes into a strainer or steamer basket, over a bowl or pot. Youre going to use your fingers again processing tomatoes is a very hands-on business! The easiest way Ive found to seed tomatoes is to push your thumbnail inside the seed cavity and press outward. This scrapes the seed goop out in one nice clump.

See how nice and neat that came out? Romas have a bit of a core in them that you may need to cut out with a knife, or you can leave it if its not too hard or green.

Continue until all the tomatoes have been seeded. If you did the work in a strainer, you can lift the seeds out and find you have a good amount of tomato juice in your pot. This juice is very versatile: you can add spices and other veggies to it to make a V8-type drink add it to soups and chili in place of water cook rice or pasta in it add seasonings to make a very light pasta sauce use it for gazpacho freeze it in ice cube trays for later put it in your hair as a conditioner or bathe your skunk-sprayed dog in it. The possibilities are endless!

  • Heat oil in a large saucepan over medium-low heat.
  • Add onion and cook until soft and golden, stirring frequently.
  • Add garlic. Stir and cook until golden brown. Be careful not to burn the garlic.
  • Add seasonings, tomato products, and sugar and bring to a boil over medium-high heat.
  • Reduce heat to low,cover loosely, and simmer for 30 minutes, stirring occasionally.

The Best Canned Tomatoes To Use For Pasta Sauce

I like this brand, Cento and also San Marzano. Muir Glen is also a great choice.

When your oil is nice and hot, saute your onion.

Add your minced garlic and cook for a couple minutes, until softened slightly.

Add your crushed tomatoes.

Add your seasonings and stir until hot.

Just as simple as that, your sauce is ready for your favorite pasta! After you add the sauce to your pasta, add some fresh basil for an even better sauce!

Tips For Making The Best Homemade Spaghetti Sauce

  • Use crushed tomatoes for a smoother sauce that has a thicker base to it.
  • For a thinner sauce, that big on tomato and beef chunks use canned diced tomatoes.
  • To add even more bold flavor increase the garlic. You can really use as much as you prefer, however, unless you have an aversion or allergy to garlic I wouldnt use less than 4 close.
  • Stir some parmesan cheese directly into the sauce.

This spaghetti sauce is good on its own. But add in these ingredients for a special Italian spaghetti sauce that will please all pasta & spaghetti lovers!

Sweet and Hot Italian Sausage

  • Fresh sliced olives We use black olives, but you can use your favorite type!
  • Fresh ground sweet or hot Italian Sausage. I LOVE sweet Italian sausage by Johnson Farms. They flavor is just amazing. But my Dad uses BOTH types of italian sausage in her spaghetti sauce, and it is amazing!
  • Fresh sliced bell peppers! These fresh sliced bell peppers give your sauce a distinct flavor that compliments the tomatoes, onions and garlic perfectly!
  • A bit of sugar sweetens the sauce and makes it less acidic! I use just 1 teaspoon!

Tips To Make The Best Spaghetti Sauce

Spaghetti sauce is usually a simple sauce, so you will want to use high-quality ingredients like San Marzano tomatoes. Another tip is to use an excellent quality tomato paste, I use these tubes from Cento and love them, and allow the tomato paste to caramelize. When you caramelize the tomato paste, it creates a depth of flavor to your homemade sauce. When I tell people about caramelizing anything, it is just to walk away and allow the ingredients to caramelize.

1.) Pick the right crushed tomatoes.

There are so many ways to make sure your sauce can be perfect every time. You first need to start with the best quality crushed tomatoes. When you buy your crushed tomatoes, make sure that you are buying ones that do not have any seasoning added. Often times you can buy crushed tomatoes with basil and salt already added, which can throw off the taste when you take into account the spices I add to my tomatoes.

You also want to decide if you like a chunky or smooth spaghetti sauce. We prefer a smooth sauce, so I like to buy Tuttorosso or Hunts crushed tomatoes. If you prefer a chunky sauce, you may want to use whole tomatoes or buy a chunky canned crushed tomato.

2.) Add Ground Beef or Italian sausage.

You can easily add ground beef or Italian sausage to this sauce. We typically brown it before adding it to the sauce. Another thing that we like to add is the big sausage links. That way, if the kids dont like them they can pick them out without it affecting the entire pot of sauce.

3.) Use canned crushed or fresh tomatoes.

When using canned tomatoes vs fresh tomatoes there are a few things to consider. If you are growing your own tomatoes at home, it is obviously going to be cheaper to make a sauce using your own tomatoes. You will need approx 15 medium-sized tomatoes to equal 3 28 oz cans of crushed tomatoes.

Modifying The Pasta Sauce

What if you need to thicken the pasta sauce from the jar? How do you do that? I cook it for a bit longer, as it will thicken as it cooks, but if that isnt enough and you still want it thicker, then you can add in a little cornflour. This is a great thickener that works so well, but you have to be careful how you mix it in. You should mix the cornflour in a small container separately with warm water. Stir it in until it is fully dissolved, and then mix that dissolved cornflour into the pasta sauce.

What about if you want to thin the sauce? If it is too thick, you can either add some thin pasta sauce to it or a little water. Be careful with adding too much water, as that can kill the flavour. Instead, just add a little at a time and then mix it in thoroughly to test if it is enough.

I like to add seasonings to the sauce when it is kind of bland, and that may mean adding in thyme, parsley, oregano, or salt. I may also make the sauce heartier by adding in mushrooms, onions, tomatoes, or green peppers. When adding any ingredients to pasta sauce, be sure to add them before you heat the sauce. That way, they cook with the sauce and help to spread their flavour out evenly and richly.

Keep in mind that anything you do add to the sauce may make it thicker. It could also add oils to the sauce, changing the texture slightly. In some cases, you will want to cook up your ingredients separately and then mix them into the sauce once both the sauce and the ingredients are cooked.
