Fiorella’s Jack Stack Barbecue
Fiorella’s Jack Stack Barbecue had its beginnings as the second restaurant in the Smokestack BBQ chain, which Russ Fiorella, Sr. had started in 1957. Fiorella’s eldest son Jack worked with his father until 1974, when he and his wife Delores opened their own Smokestack location in the neighborhood of south Kansas City.
Eventually Jack, along with his wife and children, decided to expand their menu selections, adding non-traditional barbecue menu items like hickory-grilled steaks, lamb ribs, crown prime beef ribs, and fresh, hickory-grilled seafood, along with an extensive wine and bar selection.
They also began offering a higher level of comfort and service than most people were accustomed to at a barbecue restaurant. Smokestack BBQ in Martin City soon became one of the most successful restaurants in the Kansas City metro. In 1996, Jack Fiorella was named Restaurateur of the Year by the Greater Kansas City Restaurant Association.
Other members of the Fiorella family told Jack that he was not permitted to use the Smokestack name for his new restaurant, so both the new restaurant and Jack’s existing restaurant in Martin City dropped the Smokestack name and were rebranded as Fiorella’s Jack Stack Barbecue. They also opened a full-service catering operation in Martin City and their third location in the historic Freight House building in the Crossroads Arts District.
The original Smokestack chain closed its last remaining location in 2012.

Mother Raw Organic Original Bbq Sauce
Mother Raws Organic BBQ Sauce is a plant-based batch made from organic date paste, tomato purée, unfiltered apple cider vinegar, minced onion, garlic, and a combination of spices like paprika and gray sea salt. I loved the better-for-you angle the brand was going for and can appreciate the spin on a traditional sauce. However, as far as taste goes, if I didnt know better, I would have assumed I was taking a spoonful of ketchup.

As the celebrity chef wildfire sweeps the nation, were finding our store shelves becoming more and more occupied with familiar faces and names of food stardom.
One of the latest includes a lineup of sauces and salsas stamped with the familiar blond spiky hair and punk rock attitude of Guy Fieri.
Today, I decided to grab a bottle and give it a shot and see if was off the hook.
As the coals in grill were heating up, we checked out the bottle. The ingredient lineup showed that the sauce was tomato based, and notable ingredients included sugar, vinegar, molasses, salt, smoke flavor, Worcestershire, and black pepper.
A visual glance confirmed the black pepper, but no other distinguishable ingredients. A quick taste from of the sauce alone and the first note is definitely sweet molasses flavor followed by hints of smoke. The taste was pretty much as I expected and there were really no surprises. The sauce alone is good, but nothing ground breaking.

After we finished off the wings above direct heat to crisp up the skins, we moved them to the cooler side of the grill and hit them with the sauce shortly before taking them off. Consistency was exactly how I would expect and want it. It was just thick enough to give your barbecue a decent slather and have plenty stick.

Guy Fieri Kansas City Barbeque Sauce
This sauce was true to its name. A traditional, Kansas City Smoky and Sweet flavored BBQ sauce with a little extra black pepper, garlic, and onion. Very smooth and mild. I tried it on some BBQ chicken for my lunch during a Guy Fieri-sponsored Free Sauce Friday, as I watched all the comments flow in and I pretty much liked everything about it, except that they threw in a little too much in the way of ingredients and the sauce got a bit thin when grilled. I also prefer real onions and garlic versus powders, but thats really a nit. All in all, a good sauce in the Guy Fieri line-up.

Nutrition information tomato puree versus tomato sauce or ketchup adds to the nice consistency and texture of the sauce seen below. Sweetened by a combination of sugar and molasses gives it a natural flavor albeit thinner than the gloppiness that results when cooking with the HFCS sauces. I didnt really taste much of the anchovy puree, which tickles your salt and umami taste sensors but figured Id call it out for your vegetarians !
More SPECKs. You know I love the specks, because they add dimension and excitement to what otherwise would be a fairly standard taste. In this one, its mostly bits of black pepper and the pulpy part of the tomato puree.
