  • Texas Pete is a bit more vinegary than Franks and also not overly spicy. It does have additives, though, so its not appropriate for paleo, Whole30 or keto recipes.

Which Vinegar Should I Use To Make Hot Sauce

This is the question with ANY hot sauce, as there are many choices, and each will compliment your chili pepper choice in different ways. Most common is Distilled White Vinegar, which is inexpensive and strong in flavor.

Use this if you are seeking to mimic the flavors of the larger commercial brands. White Wine Vinegar is a bit more mellow, and Rice Vinegar even more so, with a touch more sweetness.

Red Wine Vinegar is made from fermented red wine, which will introduce a slightly fruity flavor to your sauce.

Apple Cider Vinegar is quite fruity, and preferred for when youre seeking a fruity sweetness. Malt Vinegar has a strong, distinctive flavor from its barley ale beginnings, and well worth experimentation.

There are others to consider, such as balsamic vinegar, coconut vinegar, raisin vinegar and more. Experiment to your personal tastes.

    North Carolina Dipped Fried Chicken

    • Yield: Serves 4

For this unusual sauced, or dipped, fried chicken, we started by brining chicken parts in a solution of salt, sugar, and water. We coated the chicken pieces in a seasoned flour mixture and let them sit in the refrigerator to ensure that the coating adhered. We then deep-fried them in 350-degree peanut oil until the coating was crispy. For the sauce, we combined Texas Pete Original Hot Sauce with Worcestershire sauce, oil, molasses , and cider vinegar. We let the chicken cool for 10 minutes and then spooned the tangy-spicy sauce over top, which proved to be easier and less messy than dipping. The coating absorbed the lip-tingling sauce and still retained its crispy, craggy texture.

The chicken needs to brine for at least 1 hour before being coated in step 3. Do not brine the chicken longer than 4 hours or it will be too salty. Use a Dutch oven that holds 6 quarts or more. Youll need one 12-ounce bottle of Texas Pete Original Hot Sauce for this recipe.

    Ingredients

    • 1 tablespoon cider vinegar

    Directions

    1. FOR THE CHICKEN: Dissolve the 1/2 cup salt and 1/4 cup sugar in 2 quarts cold water in large container. Submerge chicken in brine, cover, and refrigerate for at least 1 hour or up to 4 hours.

    5. Transfer chicken to paper towellined side of prepared rack. Let chicken drain on each side for 30 seconds, then move to unlined side of rack. Return oil to 350 degrees and repeat with remaining chicken. Let chicken cool for 10 minutes.

Texas Pete Hot Sauce Tw Garner Company Winston

copycat hot sauce recipes part 1 (Texas Pete’s)

This Day in North Carolina History

On June 9, 1953, the trademark Texas Pete was registered to the TW Garner Company of Winston-Salem as a hot sauce for use on prepared foods. Made from hot red peppers, vinegar and salt, Texas Pete was first used commercially in 1936 as a spicier version of the Garner familys popular barbeque sauce.

Thad Garner got the original barbeque sauce recipe from a restaurant he bought at the age of 16. The sauce was made in the family kitchen and peddled throughout the state by his father Sam. Joined by brothers Ralph and Harold, the four Garners built a successful food business, which continues to thrive on the site of original Garner family home.

The Texas Pete name was chosen to evoke the spicy Mexican inspired foods of Texas. Pete comes from Harolds nickname. In the 1930s, with cowboys as popular movie icons, the Texas Pete trademark represented independent self-reliance.

During World War II, Texas Pete and other Garner products were sold to the U.S. government as soldier rations.

Texas Pete was also used as the name of a cartoon villain in the 1980s BBC Super Ted cartoon.

The Garner foods trademark was originally only for the sauce, though the family later expanded to produce Texas Pete hot dog chili, honey mustard, seafood cocktail, green pepper sauce, Worcestershire sauce and Buffalo wing sauce.

How Long Will This Sauce Keep

It should keep a few months easily in the fridge, or even longer. Its all about the acidity. Target level ph for shelf stable foods is below 4.6 ph, but should probably be lower for home cooks, around 3.5 or so, to account for errors. If youre concerned, add more vinegar to lower the ph.

    Ingredients Needed

    • 1 pound red chili peppers , chopped
    • 1 quart unchlorinated water
    • ½-1 cup white wine vinegar to your preference

    The Method

First, ferment the chili peppers. Chop the peppers then pack them into a jar, leaving at least 1 inch of head space. The peppers may rise a bit when fermenting.

Next, mix 1 quart unchlorinated water with 3 tablespoons sea salt. Pour just enough brine over the peppers to cover them, pressing them down a bit as you go. It is important to keep the peppers covered with brine to avoid spoilage. Check this daily.

Screw on the lid and set the jar away from direct sunlight to ferment for at least 1 week. Ideal temperatures are between 55-75 degrees F. The most active fermentation period is between 1-2 weeks, so be sure to monitor it during this time. Burp the jars often by unscrewing the lid a bit to let out some of the accumulating gases. Or, use an airlock or membrane for easier fermenting. See our page, How to Make Fermented Pepper Mash, for further instruction.

After 1-2 weeks, the fermenting activity will diminish and the brine will turn cloudy and taste acidic.

Pour the fermented peppers, including brine, into a pot along with the vinegar. Bring to a quick boil. Reduce heat and simmer for 15 minutes. Alternatively, you can strain out the fermented peppers and discard the brine, then boil the peppers with 1 cup vinegar and 1/2-1 teaspoon salt. Some people prefer to use the brine.
