Hot Ones is a YouTube sensation that has taken the internet by storm. It is produced by First We Feast and Complex Media and is hosted by Sean Evans.

First debuting in March 2015 the shows format consists of host Sean Evans interviewing a celebrity guest while both eat 10 chicken wings, each served with a progressively hotter hot sauce and culminating in The Last Dab, a sauce produced by Hot Ones themselves with a Scoville rating of 2,000,000+ units. The Last Dab was developed by legendary chilehead Smokin Ed Currie of PuckerButt Pepper Co., the creator of the infamous Carolina Reaper, the worlds hottest pepper.

The shows tagline, stated by Evans at the beginning of each episode, is The show with hot questions, and even hotter wings.

As of 19 September 2021 there have been fifteen seasons of Hot Ones produced with a total of 228 episodes. In 2018 Hot Ones won Best Non-Fiction Series at the Streamy Awards and the episodes on YouTube have been viewed more than 50 million times in total.

The Season 16 Lineup of Hot Ones hot sauces was announced by Sean Evans on 17 September 2021 with the first episode of Hot Ones Season 16 scheduled to premiere on Thursday, 23 September.

In November 2019 Hot Ones: The Game Show, also hosted by Sean Evans, was announced by WarnerMedias TruTV with a release date scheduled for early 2020. The first episode was broadcast on 18 February 2020.

To Strain Or Not To Strain A Hot Sauce Conundrum

You CAN strain it at this point if youd like. If you want a sauce with a consistency more like Tabasco, push it through a sieve and discard the pulp.

I kept this more chunky. I wanted the substance of it, though it works either way.

There are many recipes for hot sauces but the only common ingredient is any kind of chili pepper. A group of chemicals called capsaicinoids are responsible for the heat in chili peppers. Many hot sauces are made by using chili peppers as the base and can be as simple as adding salt and vinegar while other sauces use some type of fruits or vegetables as the base and add the chili peppers to make them hot. Manufacturers use many different processes from aging in containers, to pureeing and cooking the ingredients to achieve a desired flavor. Because of their ratings on the Scoville scale, Ghost pepper and Habanero peppers are used to make the hotter sauces but additional ingredients are used to add extra heat, such as pure capsaicin extract and mustard oil. Other common ingredients include vinegar and spices. Vinegar is used primarily as a natural preservative, but flavored vinegars can be used to attain a different taste.

Heartbeat Hot Sauce Pineapple Habanero is not going to knock your socks off. Believe it or not, some people dont just look for the hottest sauce they can find. Instead, you can use this every day without the need for a glass of milk and a cold towel.

The simple fact is that Heartbeat Pineapple Habanero hot sauce measures just 12,200 SHUs on the Scoville Scale. Youll notice the heat when eaten plain, but it wont overwhelm your meal with spiciness. This is on par with something like Franks RedHot, and can similarly be used on a wide variety of foods to add a little kick.

Tip: Dont expect this sauce to add much heat to meals. It is best used on milder flavored meals to allow the pineapple zing to shine.

Pineapple Jalapeo Hot Sauce

I was going to make my super popular Pineapple Sauce for Ham to go with our Christmas Ham this year but decided to try this Pineapple Jalapeño Hot Sauce instead. I also considered some sort of hot mustard but its almost a law to have pineapple with ham.

As with all recipes that use Jalapeños, you can control the heat by adjusting the number of seeds you include. I wanted mine to be especially spicy to offset the sourness of the pineapple so I kept all of the seeds.

I will warn you upfront and hopefully, you are reading this before you make this hot sauce. As the name implies, this hot sauce is HOT. Like very hot. Unless you really love hot sauce, you might want to move on to one of my other recipes.

After serving it at Christmas dinner, I would probably advise you to remove the seeds of one of the Jalapeños before adding it to the blender. While I can handle the seeds from both, its so hot that it takes away from the flavors of everything else. Again, experiment to suit your needs.

If you like spicy but prefer mustard with your ham, then give my Jalapeño Mustard a try. The same rules apply. The seeds will control the heat! The Jalapeño Mustard will be less hot than this recipe.

If youre new to the hot sauce game or are looking for a more mild sauce with outrageous flavour, heres a good one for you! Jalapeño is another one of my favourite pizza toppings. This sauce is so good, it usually didnt even make it to my pizza. Id guzzle it straight from the bottle instead! Pallotta Hot is another charitable company. How To Handle Hot Peppers

The capsaicin in hot peppers is what makes peppers hot. If you handle hot peppers gloveless, its a guarantee that youre in for a nasty case of chili burn, both on your fingers and anywhere you rub. Like your face. Ouch!

Even if you wear disposable gloves, be careful about what you touch. The gloves are going to protect your fingers, but touching any part of your body with the gloves after youve handled hot peppers can lead to severe chili burn. Resist the temptation to rub your eyes. Wait until youve removed your gloves and washed your hands thoroughly with soap.

How Long Will This Sauce Keep

It should keep a few months easily in the fridge, or even longer. Its all about the acidity. To be technical, target level ph for shelf stable foods is below 4.6 ph, but should probably be lower for home cooks, around 4.0 or so, to account for errors. If youre concerned, add more vinegar to lower the ph. Sauces made with fermented chili peppers will last even longer.

The best ph meters that I recommend are from Thermoworks. Get yourself a ph meter from Thermoworks today. I am a happy affiliate.

The name says it all here, as does the warning label: consume one drop at a time with extreme caution. Its made with pure habanero pepper, further enhanced with, well, more habanero-infused flavour. It also includes chipotles along with orange juice, water, tomato paste, and other spices. In other words, dab this on food, dont pour it or drench your wing in it.

Have a tall glass of milk and a box of Kleenex nearby before deciding to try this one! This is usually the one that takes down even the most adventurous celebrity guests.

How To Make This Pineapple

Toss all of the ingredients into a food processor and process it until it is nice and smooth.

The ingredients include pineapple, jalapeno peppers, onion, garlic, tomato, cilantro, lime juice and apple cider vinegar, with a bit of salt and pepper to your own personal tastes.

Bring it all to a quick boil in a small pot and let it simmer about 10 minutes.

Cool and BOOM!

Hot sauce is done.

I remember vividly the first time I tried this sauce I was at the Karma Sauce factory here in my hometown of Rochester, NY and they keep a fridge of what has to be 100 or more hot sauces. I went through a gauntlet of tastings that day and Aka Miso is the one I still remember most from that day. The flavor just hit my tongue in harmony and I asked for a second taste! You cant put a list together of the best Hot Ones sauces without this one on it.

Im thrilled that Hot Ones went international and found a lot of makers that normally wouldnt have had an opportunity like this. Youre not going to find the Bongo Chilli anywhere else on this list and really in any other hot sauce out there and thats because the Bongo Chilli is native to the island of Fiji. I tell folks that this is the hot sauce youll want to use to graduate from mild level to medium level heat. Use this one on your next sandwich and thank me later!

History Of The Habanero Chili Pepper:

The habanero chili comes from the Amazonas region, and from there it was spread through Mexico. One domesticated habanero, which was dated at 8,500 years old, was found at an archaeological dig in Peru. An intact fruit of a small domesticated habanero, found in pre-ceramic levels in Guitarrero Cave in the Peruvian highlands, was dated to 6500 BCE.

The habanero was carried north to the Caribbean via Colombia. Upon its discovery by Spaniards, the habanero chili was rapidly disseminated to other adequate climate areas of the world, to the point that 18th-century taxonomists mistook China for its place of origin and called it Capsicum chinense .

Today, the largest producer is Mexicos Yucatan Peninsula. Habaneros are an integral part of Yucatecan food. Habanero chilies accompany most dishes in Yucatan, either in solid or purée/salsa form. Other modern producers include Belize, Panama , Costa Rica, Colombia, Ecuador, and parts of the United States, including Texas, Idaho, and California. While Mexico is the largest consumer of this spicy ingredient, its flavor and aroma have become increasingly popular all over the world.

The habaneros heat, its fruity, citrus-like flavor, and its floral aroma have made it a popular ingredient in hot sauces and spicy foods.

The Best Hot Ones Sauces: In Conclusion

Im already hearing the following:

  • This list sucks! How could you leave out ?
  • If it werent for , you wouldnt even like hot sauce! It deserves a place on this list!
  • is the best ever how did you put on and leave out ?!

With over 100 unique sauces that have appeared throughout the 15 seasons, theres no way Im going to make everyone happy.

Remember, this is just my opinion.

The margins to make the Top 15, to the Top Six Out, to the dozen or so sauces that just missed that list were razor thin.

I had more agony than I thought when I first conceived putting this together.

One sauce I think all fans of the show can agree on is that any best Hot Ones sauces list will never include Da Bomb.

My personal tastes are pretty obvious with my choices: I like for the most part mild and medium heat level sauces that are versatile in their uses.

Fruit based hot sauces are also a favorite. It was a difficult choice for Heartbeats Pineapple to make the main list when Year of the Dog and Skinny Habanero were right on the cusp as well.

Another analysis I took is I think its evident that the hot sauce lineups in the later seasons have been stronger overall.

Only the best make the show and Im glad Im not the one who has to make those choices.

I started this blog in April 2020 and it took me seven months before I was comfortable putting together my first list and it has changed several times with the new seasons that have been added since that time.

Thicker Or Thinner Sauce

If you prefer a thicker hot sauce, you have a couple of options. FIRST, just dont strain it. I dont like to keep this one completely unstrained because the ingredients chosen easily separate in the bottle.

No biggie, though, as you can simply shake up the bottle before each use. Or, SECOND, add a bit of the strained pulp back into the sauce before you bottle it.

Thats what I did here. I took about a tablespoon of the pulp and swirled it back into the finished sauce, just for a bit of substance. I like the little swirlies you get in the bottle.

Its a vibrant and flavorful hot sauce recipe, ready and willing to go where your taste buds want to take you. It takes practically no time to make, which is nice.

    The Story Behind the Sauce

    After the Dia del Perro art was commissioned, I wanted to help support my favorite artist Robin Case as much as I could, so I commissioned a 2nd, “TBD” label, which was put on hold until such time as inspiration hit.

    ….and since I was born in the Year of the Dog, well, sometimes things just feel right, and this felt right.
