What Are Chipotle Peppers In Adobo Sauce

The secret to this homemade sauce is chipotle peppers in adobo. But what is that exactly? Well, its a combination of things. Chipotle peppers are red jalapeños that have been smoked and dried. And the adobo is a velvety, tangy, and sweet sauce made from dried chili peppers.

Together, they make for a zesty, spicy, ridiculously flavorful pair, which is why theyre sold in jars that way.

You can use the chipotle peppers for an intense smoky heat. Or use a tablespoon of the sauce for a subtle, fiery sweetness. Needless to say, it makes for an extremely versatile pantry staple if you like adding a spice kick.

How Do I Store Chipotle Peppers

Most recipes only call for 1-2 chipotle peppers or 1-2 tablespoons of minced chipotle peppers so you are left with an open can of smoky, spicy goodness. I love spice, but that is a lot of chipotle peppers to use up before their fridge life expires! To make the most of your worthy investment, I suggest freezing chipotle peppers. They only take a few minutes to prep and are easy to pull out any time you need them.

Chipotle Tomato Salsa Recipe

Tomato salsa, aka pico de gallo, is such a fun and fresh addition to any taco or burrito bowl.

It can be as mild or spicy as you prefer, and theres always room for extra ingredients.

I always add jalapeños to mine, but you could substitute for green bell peppers if you dont want the heat.

That way, youll have great color and still get a crunchy texture.

This great little dish is perfect for tacos, chicken, salad toppings, or even fish.

Whats The Difference Between Red And Green Jalapeos

They are the same pepper, its just that a green jalapeño is picked early before it ripens on the vine, while a red jalapeño is left on the vine longer. Like other chilies that turn red it is older. The red ripened are best to use for smoking, but the green are fine, too.

Im sure making chipotle peppers all started as a way to preserve bumper crops of jalapeños back in the day.

Sure, you could start with some dried Morita chiles, but canned chipotles in adobo are much more convenient so well be using those.

If youre new to chipotles in adobo heres what they look like out of the can:

These are smoked jalapenos resting in a tangy adobo sauce and youll get 6-8 chipotles in each can. Are chipotles spicy?

Occasionally youll come across larger sizes, but these smaller 7 oz. cans are the most common in traditional supermarkets so I usually buy a few at a time.

Im in the habit of scraping out most of the seeds as they tend to harden over time.

So well do that with seven of these chipotles and add them to a blender along with:

1/4 small onion1/4 teaspoon cuminpinch of salt

I usually saute the onion and garlic in some oil before adding it to the blender. And note that this was a larger onion so I only used about 2/3 of the onion in the photo below:

Once everything is in the blender give it a good whirl.

Itll need at least 30 seconds to liquefy everything so if it still seems chunky then give it a bit more time.

Once its combined youll have the perfect opportunity to take a taste for sweetness. And heat!

Youre already getting some sweetness from the orange and the cooked onion, but you can always add a bit more if you want 1/4 teaspoon of sugar would be a good starting point. I dont have much of a sweet tooth so I did not add any additional sugar to this batch.

You can reuse older bottles or you can get new ones for about

Buen Provecho.

What Is Chipotle Sauce Made Of

This sauce utilizes the entire can of chipotles in adobo: both the whole chipotles and their sauce. Sour cream brings a cool, creamy component, while a bit of mayonnaise adds some tang. Just a touch of maple syrup balances out the heat with a little sweetness, while lime and garlic provide acidity and flavor. And although its perhaps unexpected, a touch of soy sauce is added here to lend a deeper, saltier flavor and overall umami.

What Does Chipotle Sauce Taste Like

Chipotle Sauce is a creamy sauce with a vibrant, yet smoky flavor thanks to the combination of the smoked jalapeños and adobo sauce. It’s notably tangy and can be somewhat spicy.

If you’re afraid your sauce might be too spicy, use one to two tablespoons of Adobo Sauce rather than the chipotle pepper itself.

How To Make Chipotle Peppers

Wash them and dry them off. You can remove the stems if you like, but I prefer to leave them on like little handles.

Lay them out on a rack that will fit inside your smoker and set your smoker for 200°F.

For the wood chips or pellets, pecan is the traditional Mexican wood, but I also like to use a mild, fruity wood like apple or cherry. Hickory or oak work well too, if you dont have the others.

You will be smoking for these 3 hours, so plan accordingly. In other words, be sure you have enough wood or pellets!

After the smoking process is complete and you want to store these as dried chipotle peppers, then youll need to dry these completely. Using a dehydrator works best, but 10 hours in an oven set at its lowest temperature, or 200°F, will do.

Store in an airtight container or grind for chipotle powder.

This is what they look like fresh from the smoker!

Chili Powder Vs Chipotle Powder: Whats The Difference

Chipotle’s Chicken Cooked at Home – By a Former Chipotle Employee

You may see the terms chili powder and chipotle powder used interchangeably sometimesespecially in the wild world of internet recipes! However, the difference between chipotle powder and chili powder is actually quite dramatic. Our chipotle mayo is made with chipotle powder, NOT chili powder. Heres the difference:

  • Chipotle powder is exactly what it sounds like. Chipotle peppers are simply smoked jalapeños, and chipotle powder is just chipotles that have been dried and ground into a powder. Its also an earthy, smoky, heat-bringing powerhousekeep it around at all times, spice-lovers! This is our favorite brand.
  • Chili powder is a spice blend, and usually contains some combination of spices like cumin, oregano and even paprika.

Is Chipotle Gluten Free

The chipotle peppers by themselves are gluten-free. So, if you have celiac disease or a gluten sensitivity , you can eat chipotle peppers with no issues. When buying chipotle peppers in adobo sauce be mindful that you are buying a brand that says it is gluten-free or does not have any added wheat flour or other glutinous ingredients.

This homemade chipotle sauce is also gluten-free , none of the other ingredients I use containe any gluten. Mayonnaise and sour cream dont typically contain gluten. The brand of cumin I use does not have gluten, but make sure to double check the brand you get because some spices contain anti-clumping agents that could possibly contain gluten.

Chipotle Enchilada Sauce

Im really trying to stick to meatless Monday. In a house full of meat lovers, its not so easy.

If youre like me, youll want to get the firm tofu .

Once its cooked as slices, youll need to cut it into smaller pieces, which can be as large or small as you like.

When its chopped, youll cook it again in the sauce, allowing the tofu to soak it all up for maximum flavor.

I like chicken burritos because the chicken gives great flavor and texture without overpowering the other ingredients.

Plus, its relatively healthy and lean compared to other meats.

If youre taking note of which recipes you want to try, I can tell you now that this burrito will use the recipes from numbers one, two, three, four, and seven.

Chipotle Mayonnaise Is A Pretty Hot Condiment And I’ll Say Its Popularity Is Well

  • Email

While I had some oil heated for tostones last week, I also fried up a batch of yuca fries for further Mojo sauce dipping. The fried yuca went pretty well with the Mojo, but what I really wanted for dipping was this chipotle mayonnaise.

Chipotle mayo is a pretty hot condiment, and I’ll say its popularity is well-deserved. With just a few ingredients, you can create a complex mixture of spicy, cool, earthy, and smoky that becomes an excellent spread for sandwiches and burgers, or a dip for fries, chips, and veggies.

Of course, you can go with straight mayo and chipotles here, but I gave my recipe some sour cream and lime juice, which added a tang that gave this already excellent sauce a nice extra layer of flavor.
