Tomato salsa, aka pico de gallo, is such a fun and fresh addition to any taco or burrito bowl.
It can be as mild or spicy as you prefer, and theres always room for extra ingredients.
I always add jalapeños to mine, but you could substitute for green bell peppers if you dont want the heat.
That way, youll have great color and still get a crunchy texture.
This great little dish is perfect for tacos, chicken, salad toppings, or even fish.
You Can Freeze Whole Chipotle Peppers Or In 1 Tablespoon Increments:
- To freeze them whole: Spread the peppers out on a parchment paper lined baking sheet and flash freeze for 1-2 hours until solid. Once solid, cut the parchment wrap apart, individually wrap each pepper, then store in a freezer safe bag for up to 3 months.
- To freeze chipotle peppers by the tablespoon: Spread parchment paper out on a baking sheet or line an ice tray with plastic wrap. Next, mince the chipotle peppers without the sauce, , and plop them onto the parchment in 1 tablespoon increments a few inches apart or place them in each ice cube compartment. Flash freeze for 1-2 hours until solid, then cut the parchment/plastic wrap apart, individually wrap each tablespoon, and store in a freezer safe bag for up to 3 months.
- To freeze adobo sauce: Freeze the sauce with the chipotle peppers or freeze it separately in 1 teaspoon increments because it is super potent!

They are the same pepper, its just that a green jalapeño is picked early before it ripens on the vine, while a red jalapeño is left on the vine longer. Like other chilies that turn red it is older. The red ripened are best to use for smoking, but the green are fine, too.
Im sure making chipotle peppers all started as a way to preserve bumper crops of jalapeños back in the day.
How To Make Chipotle Hot Sauce
Sure, you could start with some dried Morita chiles, but canned chipotles in adobo are much more convenient so well be using those.
If youre new to chipotles in adobo heres what they look like out of the can:
These are smoked jalapenos resting in a tangy adobo sauce and youll get 6-8 chipotles in each can. Are chipotles spicy?
Occasionally youll come across larger sizes, but these smaller 7 oz. cans are the most common in traditional supermarkets so I usually buy a few at a time.
Im in the habit of scraping out most of the seeds as they tend to harden over time.
So well do that with seven of these chipotles and add them to a blender along with:
1/4 small onion1/4 teaspoon cuminpinch of salt
I usually saute the onion and garlic in some oil before adding it to the blender. And note that this was a larger onion so I only used about 2/3 of the onion in the photo below:
Once everything is in the blender give it a good whirl.
Itll need at least 30 seconds to liquefy everything so if it still seems chunky then give it a bit more time.
Once its combined youll have the perfect opportunity to take a taste for sweetness. And heat!
Youre already getting some sweetness from the orange and the cooked onion, but you can always add a bit more if you want 1/4 teaspoon of sugar would be a good starting point. I dont have much of a sweet tooth so I did not add any additional sugar to this batch.

I like to use chipotle sauce in sandwiches, on salads, as a dip, or in seafood. The possibilities are endless! This sauce will last for up to 2 weeks in the fridge, assuming you havent finished it all by then!
How To Make Chipotle Peppers
Wash them and dry them off. You can remove the stems if you like, but I prefer to leave them on like little handles.
Lay them out on a rack that will fit inside your smoker and set your smoker for 200°F.
For the wood chips or pellets, pecan is the traditional Mexican wood, but I also like to use a mild, fruity wood like apple or cherry. Hickory or oak work well too, if you dont have the others.
You will be smoking for these 3 hours, so plan accordingly. In other words, be sure you have enough wood or pellets!
After the smoking process is complete and you want to store these as dried chipotle peppers, then youll need to dry these completely. Using a dehydrator works best, but 10 hours in an oven set at its lowest temperature, or 200°F, will do.
Store in an airtight container or grind for chipotle powder.

When buying chipotle peppers in adobo sauce be mindful that you are buying a brand that says it is gluten-free or does not have any added wheat flour or other glutinous ingredients.
This homemade chipotle sauce is also gluten-free , none of the other ingredients I use containe any gluten. Mayonnaise and sour cream dont typically contain gluten. The brand of cumin I use does not have gluten, but make sure to double check the brand you get because some spices contain anti-clumping agents that could possibly contain gluten.

Chipotle Peppers In Adobe Sauce
12 dehydrated chipotle peppersBoiling water to cover chilies1 cup of ketchup or tomato puree with 1 tsp. sweetner ½ cup water1 medium white or yellow onion thinly sliced4 large garlic cloves peeled and smashed½ cup cider or white vinegar½ tsp. salt
1. Thoroughly wash the chipotle peppers, remove the stems and place them in a bowl. Cover them with boiling water and weigh them down with a small lid or plate. Let them soak for 20 minutes.
2. Remove 4 soaked chipotles, leaving the rest in the soaking liquid, and place them in a food processor or blender. Add the ketchup and half cup water. Blend until you have a uniform paste.
3. Add the blended chipotles and tomatoes into the pot with the remaining chipotles soaked in water.
4. Add the onions, garlic, salt, peppercorns and vinegar to the pan. Mix well.
5. Bring it to a boil, reduce the heat and allow chipotles to simmer for about 1 hour and 45 minutes. Check them at one hour. If the sauce has dried too much, add extra water as needed.
6. Place the chipotles and adobo in sterilized freezer safe containers. Hint keep the containers small most recipes only call for 2 peppers and a small amount of sauce. You can also puree and freeze them in ice cube trays for future use. Once you open your jar be sure to use it within a month.
