Want a tip on testing if your choice of canned tomatoes are top quality? First, read the label: tomatoes from Italy are usually very good, but do check the ingredients. You do not want anything added other than tomatoes, salt, basil or citric acid.

The best product is just tomatoes . Ive also seen news stories where tomatoes were brought from China, then canned in Italy so they could say made in Italy. They added color and all sorts of nasty things, so dont just rely on the label.

Once you decide to purchase said tomatoes, heres the second test: open the can/jar/carton and dip your fingertip into the tomatoes or puree.

Does it taste good? If you made a sour face, theyre probably not going to make a great sauce. If the answer is Yes, theyre sweet and tasty! then youve found the right tomatoes, and they will make a great sauce!

How To Make Pasta Soup Recipe

2. Add butter to a hot pot.

3. Saute garlic until it smells good.

4. Saute the veggies along with garlic for 3 mins. I did not have potatoes so didnt use, but I suggest using since they help to slightly thicken the soup. You can also use corn.

5. Puree tomatoes and add them to the pot. This step is optional. I used since there was no lemon at home. I usually add lemon juice to the warm soup just before serving.

6. Cook for 3 to 4 mins. I prefer to do this on a high flame until the tomatoes dry up.

7. Pour 2 cups of water.

8. Simmer covered with a small vent open to let out the steam. Cooking on a low heat makes the soup tasty.

9. Once the veggies are tender, add the cooked pasta and stir. Add more water if needed to suit your consistency.

10. Cook for 2 to 3 mins.

11. Add pepper.

When the onion, garlic, and bell peppers change their color add fresh blended or crushed tomatoes. Add ½ cups of water so that all the things can cook well and water will prevent all the ingredients from burning. Cook them for 10 minutes before adding all the seasonings.

At this time add kosher salt as per taste. After that add all the herbs by starting with parsley, oregano, fresh basil leaves, chili flakes, and sugar. How To Make Pasta Payasam

1. Bring 4 cups of water to a rapid boil in a pot.

2. Add macaroni and cook for 2 to 3 mins until you begin to see the starch. Drain them and set aside.

3. Heat ghee or butter in a pot and fry cashews until golden. Add raisins, when they puff up set these aside along with ghee.

4. Pour milk and bring it to a boil on a medium heat. The brown particles are from the butter I used for frying the cashews,

5. When the milk begins to boil, add pasta.

6. Cook until completely done.

7. Lower the flame and take rice flour in a cup.

8. Add water or milk. Mix it well to prevent lumps. Pour that stirring slowly to the pot.

9. Cook until the pasta payasam thickens.

10. Crush the cardamom seeds and add it. Adjust the consistency now by adding more milk if desired. When cooled it turns quite thick so adjust it now as needed.

11. Add your sweetener. You can use organic sugar or jaggery. I have used cooled raw jaggery syrup. You can find the details on how I make jaggery syrup at home here. Make sure you use cooled jaggery syrup otherwise the pasta kheer will curdle.

12. Switch off the stove if using jaggery syrup. If using sugar cook until the sugar melts completely. Do not cook further after adding jaggery to prevent curdling. Add the nuts and left over ghee.

Serve warm or cold. Note: Pasta kheer thickens upon cooling down, you can add more milk to bring it to a thin consistency. But do not boil further after adding jaggery. To heat up, do it on a low flame.

    Why so much salt? Dont worry. You will not eat 2.5 teaspoons salt. It is important to cook spaghetti with salt to prevent pasta from sticking. And to add flavor during cooking.

    • Cook spaghetti. Fill large Dutch oven or pot with cold water 3/4 full and bring to a boil. Add 2 tsp salt and spaghetti. Separate pasta with tongs a few times during first 2 minutes of cooking to ensure it does not stick. Keep cooking uncovered for 5 more minutes or until al dente, stirring occasionally.
    • Drain pasta. Taste spaghetti for doneness towards the end by grabbing one strand onto a plate with tongs. Do not overcook until too soft. The key to tasty pasta is firm cooked pasta. Drain in a colander.
    • Cook garlic. Return pot to medium heat and add olive oil, 4 garlic cloves and oregano. Cook for 20 seconds, stirring constantly. Garlic cooks fast, so dont walk away and not burn. Turn off the heat.

    First make the pasta. Youll cook it according to package instructions, until pasta is al dente, then youll drain the pasta but reserve a little pasta water. Be careful not too overcook, since itll get added back to the pink sauce and soften a little further.

    Heat butter and olive oil in a large enough skillet to fit all the pasta ingredients over medium heat until the butter melts.

    Next, add the diced onion and saute until softened. Once the onion is soft, the garlic goes in for another minute or until fragrant.

    Add the tomato passata and all the herbs and simmer for just a few minutes.

    The last step is adding the milk, the cream and the shredded mozzarella cheese and stirring until a thick pink sauce forms.

    How To make Tomato Puree for Pasta

    First, you need to prepare the sauce for pasta. Take 500 grams tomatoes to boil it in hot water for 3-4 minutes, once boiled remove from water, peel the skin and put the tomatoes in a mixer make a puree and then sieve it.

    • Pour 6-8 cups of water in a big pan and bring it to boil.
    • Add 2 tablespoon salt and 1 tablespoon oil. Now add penne pasta when the water in the pan boils up. Keep cooking it on medium heat till it becomes soft. You can substitute the penne with any pasta of your choice.
    • Cook pasta for 7-8 minutes or till pasta turns almost soft but yet firm, if it takes little pressure to cut the pasta then it means pasta is soft enough and at this point switch off the flame and strain excess water.
    • Wash pasta with fresh normal water to avoid overcooking and keep aside in the strainer to remove excess water.

    To make red sauce pasta sauce:

    Step 1: Heat olive oil in a pan, Instead olive oil you can use normal oil or can even use butter.

    Step 2: Once oil is slightly hot add finely chopped garlic and sauté for few seconds.

    Step3: Now add chopped onions and sauté for few seconds.

    Step 4: Add parsley and stir for a minute.

    Step 5: Add chopped celery and all the veggies, red bell pepper, yellow bell pepper, green bell pepper and sauté on high- low flame for a minute. Mix all the ingredients well and let it rest for 3 to 5 minutes.

    Step 8: Remove the pasta from fire, keep it warm and transfer it in a serving bowl.

    How Can I Make My Tomato Sauce Taste Better

    Pasta is a famous dish of Italian cuisine, which relies heavily on garlic-infused olive oil. There is no need to be a rocket science to figure out that a combination of garlic, fresh basil, and olive oil will turn your pasta into a feast. However, adding red bell peppers, ground cayenne pepper, and some beet juice can dramatically improve the eye appeal and taste when making red pasta or marinara sauce.
