COAT. Add the flour, paprika, cayenne, salt, and garlic powder to a large zipper bag. Add the wings and toss to coat evenly with the flour mixture. Refrigerate until ready to cook.
HEAT. Add the oil to a heavy bottomed pot, to a depth of about one inch. Heat the oil over medium heat to 375 degrees.
FRY. Fry the wings in the hot oil for 10-15 minutes, until golden brown and at least 165 degrees. Drain on paper towels, then move to a medium bowl.
SAUCE & COAT. To make, the sauce, add the butter, hot sauce, pepper, and garlic powder to a small saucepan. Heat the sauce over medium heat, stirring frequently, until the butter is melted and the sauce is smooth. Pour the sauce over the wings and toss to coat. Serve hot.
Keep warm: You can keep wings warm in the oven for up to 30 minutes. After frying them transfer them to a cookie sheet with a cooling rack on top of them. Place this tray in the oven at 350 for 30 minutes or less, if you let them go for long they will start to dry out.

My trick to super crispy oven baked wings is boiling them first. Sounds weird but it renders out a lot of the fat which shortens oven time and makes them more crispy.
- Preheat oven to 450 degree.
- Bring pot of water of water to boil. Add 1-2 tablespoon salt .
- Add chicken to pot, lower heat to simmer for about 5-8 minutes depending on how big wings are.
- Dry wings thoroughly. This is important!
- Place wings on metal sheet pan .
- Cook for 25 minutes.
- Flip and cook another 5-12 minutes. Cook time varies based on size of wings and oven .
- Sauce wings hot out of oven. Make sure sauce is warm when you coat them.

What Is Buffalo Wing Sauce Made Of
Buffalo sauce is all about balanced flavors! The main ingredient is, of course, Franks Red Hot Original sauce . Its an aged cayenne pepper-based hot sauce that already includes vinegar and garlic powder, so its hot but also acidic.
To balance the acidity, I like to add some type of sweetener , but brown sugar or maple syrup can also be used.
Butter is added for richness, smoothness, and balancing the flavors. Its an essential ingredient to make a delicious buffalo wing sauce.
Seasoning with salt and pepper is totally optional but adds some flavor.
TIP: If you like your sauce really hot, do not add more hot sauce, instead, add half a teaspoon of cayenne powder. Adding more hot sauce will result in a very tangy sauce that is not very pleasant .
Other optional ingredients that you can add: a teaspoon of Worcestershire sauce, ½ teaspoon of paprika, ½ teaspoon of garlic powder, and ½ teaspoon of onion powder.
