  • Variety: This is definitely a great base sauce, if you need to add more or less seasoning to your liking go for it. Add some cayenne, a splash of vinegar or extra pepper. You decide.
  • Let it set: The longer the sauce sits before you use it the better, if you can plan to make a day ahead. It gives time for the flavors to meld.

  • Paprika: There are a range of flavors in paprika stick to the sweet not smoky ones
  • Garlic Powder: Flavor enhancer
  • Sugar: Counter acts the acid in the tomato paste and binds everything together.
  • Butter: May sound weird but its a crucial part of the yum yum
  • Salt and Pepper: Add to taste
  • Water: Thins the sauce to the right consistency.

The Question Of Aromatics

One other major concern for the bulk sauce is whether to add aromatics like onion and garlic, and, if so, how to do it. Some recipes call for cooking the aromatics first until they’re soft and sweet , while others have you dump the aromatics in raw and simmer them in the sauce as it cooks.

On that note, I also preferred my sauce without cheese, which shocked me, because I always put cheese on pasta with tomato sauce, but this sauce really is that goodâtoo much other stuff just gets in the way.

The truth is, it is so simple to make at home that now you can eat it on everything you want.

There are many imitation sauces out there and depending on which hibachi steakhouse you go to, ingredients will vary slightly, so keep that in mind and try playing with our base recipe until you reach YOUR perfect sauce.

    Yum Yum Sauce Maker Gearing Up For Tifton Move

    TIFTON, Ga. Six million bottles of Yum Yum sauce are made every year and soon they will all be made in Tifton, according to Superior Sauce Company Owner Terry Ho.

    The famous Yum Yum sauce and many other products will be made and shipped out of the new 100,000 square foot Superior Sauce Company facility in Tifton. Its scheduled to open in late May or early June.

    But why Tifton after Superior Sauce already had a location in Leesburg?

    Ho said that right now its unclear of what will become of the Leesburg building, however, most of the workers will transfer over to the new Tifton location.

    Tifton has a building ready and that would save me a lot of time, time is very valuable. If I do one in Albany or Lee County area, it would take me two years, explained Ho.

    The facility will house 25 jobs but Ho expects more to be on the way for the eight to 10 million dollar project located on Oakridge Church Road in the Industrial Park area.

    Everything in there is state-of-the-art. Its almost fully automatic, said Ho.

    Tony McBrayer, the Tift County Board of Commissioners chairman, said Superior Sauces multi-million dollar investment in the area and jobs are welcomed.

    Excited to have them here as well, said McBrayer.

    Ho said there are still some job opportunities available. He said you can call 255-3377 to learn more.

    Correcting The Bulk Sauce

    So, now that I’ve explained my three-pronged approach to the sauce, we’re basically done, right? Nope!

    Just because I have my amazing tomato paste and my fresh-and-fruity purée doesn’t mean I’m just going to accept that the bulk of the sauce is going to taste merely good, especially if there’s anything I can do about it.

    The first trick is one we’ve all seen a million times: Toss in some basil. It’s no accident that basil is usually included in canned tomatoes. Canning requires intense heat and cooking, which kills any trace of fresh tomato flavor. A few sprigs of basil help add back a little freshness. I added some basil to a portion of my bulk sauce while it was still warm and let it steep.

    It worked, adding a fragrant, floral, anise-y scent to the sauce that was totally wonderful. At the very least, it’s worth steeping the basil in the sauce.

    Some folks, though, also add some tomato leaves to their sauce. Writes McGee, “Tomato leaves have a fresh-tomato aroma thanks to their leaf enzymes and prominent aromatic oil glands.”

    In case you’re worried that the leaves are poisonous, no need to fear: Not only are they not toxic, but they can bind with cholesterol and possibly lower how much of it our bodies absorb. Bonus!

    I tried it out, and, aside from the risk of putting way too much in the sauce, found that it does indeed add a grassy, green flavor that can help offset whatever fresh notes are lost from cooking the tomato.

    The Trouble With Fresh Tomato Sauce

    First, I want to admit something: Making sauce from fresh summer tomatoes has long been an insecurity of mine, despite years of cooking experience, including working as a sous chef in a Tuscan restaurant in New York and living and working on farms in Italy for extended periods, elbows deep in fresh-picked tomatoes and the sauce we made from them.

    The reason why: There are two primary goals when making fresh tomato sauce, and they’re at odds with each other.

    • First, the sauce should taste like it was made from fresh tomatoes, which means it should have the bright, fruity aroma and flavor of uncooked fruit. If we don’t have this, we might as well throw in the towel and stick with canned tomatoes 365 days of the year.
    • Second, the sauce should have a good, sauce-like consistency and have deep, sweet notes, which means cooking off much of the tomatoes’ natural water content and caramelizing the fruit’s natural sugars. Otherwise, it’s going to be too thin and tart.

    The trouble is that retaining the tomatoes’ fresh flavor means minimal cooking, while getting rid of the excess water content and caramelizing the sugars means extended cooking. Everyone has a different solution to this dilemma.

    Of those approaches, the divide-and-conquer concept has always made the most sense to me, but I’d never settled on exactly how to do it. To figure it out, I started with the first, obvious question: What kind of tomato should we use?

    Do I have to use smoked paprika? I prefer smoked paprika because of the subtle smoked flavor, but if you just have regular paprika, that is fine too.

    This is sooo simple! When I say its a 5-minute sauce, I mean it, it wont take you more than 5 minutes to make.

    Melt your butter, gather all of the ingredients in a medium bowl, and whisk until smooth.

    Depending on the type of the mayonnaise that youre using, you may need to thin your sauce out a bit with water. Just add water by very small quantities like 1 tablespoon of water, and whisk until you reach the desired consistency.

    I work nearby & try to go here 1x week. They are quick & friendly. I normally get the steak & shrimp combo to go. Remember the yum yum sauce! SO good! They get busy so try to go earlier if you can!

    I wanted a fast and easy lunch today. I knew I wanted sushi but wasnt sure about this place. I had a choice between Subway and Chiptole but was aiming not to overeat. excellent decision! I had the spicy crab and shrimp sushi with their special yum yum sauce. It was delicious. I had 8 pcs of sushi and even gave 2 to my husband. I am full but definitely I didnt over do it.highly recommended for those that want to eat light.draw back ventilation is poor due to the hibachi cooking. I personally cant sit there and smell like food.
