CHICKEN PENNE PASTA | BERTOLLI CREAMY BASIL ALFREDO SAUCE | HOW TO MAKE QUICK & EASY 15-MIN RECIPE

Ingredients:

  • 1 packed cup of basil
  • 1/4 cup nutritional yeast
  • 2 small cloves of garlic
  • 3 tbsp Bertolli Olive Oil olive oil
  • the juice of 1 small lemon
  • 1/2 cup sunflower seeds + a generous pinch of salt to a blender or food processor.

Directions:

  • Add 1 packed cup of basil, 1/4 cup nutritional yeast, 2 small cloves of garlic, 3 tbsp Bertolli Olive Oil, the juice of 1 small lemon, 1/2 cup sunflower seeds + a generous pinch of salt to a blender or food processor
  • Pulse together until youve reached your desired consistency
  • Blistered some cherry tomatoes by adding them to a pan with a splash of water
  • Covering with a lid
  • Let it cook for about 5 minutes before pushing them down to pop with a spoon
  • This pesto is incredible with pasta, but can also be added to sandwiches, salads, or as a dip
  • Enjoy!

    • 3-4 medium zucchini , chopped

    Easy Pesto Alfredo Pasta

    Directions:

  • Cook 500g of 1 lb pasta noodle as per package instructions.
  • While pasta is cooking, sauté garlic and onions in 1 tbsp of Bertolli Olive Oil, garlic on medium heat for 6 minutes. Season with a pinch of salt.
  • Pour 1 1/2 cup of cashew milk by reducing heat to low, cook for 3 minutes until milk begins to thicken, then add 2 tbsp nutritional yeast
  • Add pesto to the sauce and cook for an additional 5 minutes.
  • Once the pasta is cooked, using tongs transfer the noodles straight from the pot to the sauce. Add 1/2 cup of hot pasta water to the pasta and mix all together until noodles are fully coated with sauce.
  • Finish off with freshly cracked pepper and chopped fresh basil.

    One 32-ounce can crushed tomatoes
    1 sprig fresh basil
    Kosher salt

    Steps:

    • Heat the oil in a medium saucepan over medium-high heat. Add the oregano, garlic and red pepper flakes and cook, stirring, until the garlic is golden brown, 1 to 2 minutes. Add the tomatoes, basil and 1/2 teaspoon salt and bring to a simmer. Reduce the heat to medium and simmer, with the saucepan loosely covered in foil to avoid splattering and stirring occasionally, until fairly thick, 5 to 10 minutes, depending on your tomatoes.     Three 26-ounce cartons chopped tomatoes
    1 teaspoon Italian seasoning
    Kosher salt and freshly ground black pepper
    3 tablespoons unsalted butter

    Steps:
