In order to make this vegan Alfredo sauce recipe, the first thing you want to do is to soak your raw cashews. In order to do this, you can place in a jar and cover with water for 6-8 hours or overnight. Another option you have is to boil the cashews for 30 minutes. Lastly, if you have a very high powdered blender, like a Vitamix, you dont need to soak in water at all for this recipe.
Once your cashews are ready, you are going to place all the ingredients into a high powdered blender or food processors. Blend until you have a smooth and creamy consistency. Add 1/2 cup non-dairy milk, 1 clove of garlic, 1 tablespoon of lemon juice, 1 teaspoon of salt, 1/4 teaspoon of pepper, and 2 tablespoons of nutritional yeast to the blender, and blend on high until smooth. Heat when ready to serve, and use additional non-dairy milk if sauce gets too thick.

In a saucepan, whisk the cornstarch into the milk or creamer until its completely dissolved, with no lumps.

So, lets talk about how this simple dinner goes down.
Make the alfredo sauce. I like to do this ahead of time, but you can whip it up in your blender in 5 minutes flat.
Cook the pasta. Next, well add some fettuccine noodles to boiling water and cook until just al dente.
Saute the veggies. Meanwhile, well cook an onion, garlic, bell pepper, mushrooms and broccoli in a skillet until tender to our liking.
Toss everything together. The drained pasta, some cooked chicken and our dreamy alfredo sauce all get added to the skillet with the veggies, and well mix together until nice and combined.
Season with a touch of salt and pepper and dinner is served!
