Tzatziki sauce is super easy to make and no joke, can be made in about 5 minutes! It all starts with a base of plain Greek yogurt. I typically use a 0% fat yogurt, but full fat yogurt will give you a much richer sauce. But I promise, a non-fat yogurt wont compromise the flavor too much!
Youll add fresh lemon juice, garlic, shredded cucumber, a little bit of olive oil , freshly chopped dill, and a bit of salt and pepper. Fresh. Easy. Done!
Dont skip squeezing your cucumber!
Okay, so this is an important step! When youre prepping your cucumbers, youll start by removing the seeds from the center and then grate the cucumber. After you grate it, youll want to squeeze as much water out of the cucumber as possible before adding it into your yogurt.
I do this by layering together several paper towels and placing my shredded cucumber inside, and then squeezing. Cucumbers hold a lot of water, so if you skip this step youll find that your cucumbers will start releasing water into your tzatziki and youll end up with a very runny sauce.
Can I substitute the fresh dill for dried dill?
I am always a huge proponent for fresh herbs over dried herbs! Especially in a dish like this, fresh dill is going to make this tzatziki really pop! But, I totally understand that not everyone has access to fresh herbs or maybe it just slipped your mind at the grocery store.

- Use seedless cucumbers. Cucumbers with seeds can be used but the seeds will need to be scooped out before making the recipe.
- Full-fat Greek yogurt is creamiest. Non-fat, 2%, or even a dairy-free yogurt may also be used. But, this will give you a different taste and texture.
- Pull out that processor. Running the cucumbers through a food processor is way easier than grating them by hand.
- Drain all of the liquid. A cheese cloth is the easiest to use to ensure you remove all of the liquid from the grated cucumbers.
- Dont over-mix. Its nice to have a few chunks of cucumber throughout the sauce.

Yes, please do! Tzatziki sauce taste best after the ingredients have had time to meld into each other. Plan on making at least an hour ahead of time but can be made 24 hours ahead of time. You can also chop the cucumbers and leave them to drain in the refrigerator ahead of time so then you just have to toss with the rest of the ingredients.
How long does homemade tzatziki last?
Greek tzatziki should be stored in an airtight container in the refrigerator. When properly stored, tzatziki will last about 5 days, but is freshest within the first 2. We prefer to use an English cucumber in this recipe. The yogurt and cucumber blend together for a finer consistency if you use an English cucumber.
The seeds are smaller and we just prefer the taste. But use what you prefer!
