Hot sauce is a condiment made by crushing or pureeing raw, cooked, smoked, or pickled chili peppers with spices. Different parts of the world use different kinds of chili peppers as the base for their hot sauces. For example, hot sauces in Mexico are usually made of chipotle or jalapeño peppers, while in Jamaica, scotch bonnet peppers are popularly used to make hot sauces. Other popular chili peppers used in hot sauces include habaneros, Thai chili peppers, green chiles, Sichuan peppers, and bird’s eye chili.
In some countries, hot sauces are made by crushing the peppers in vinegar, while in other countries, vinegar is replaced by a tomato or carrot based puree. Oil is often used as a way to bring out the flavors and heat of the peppers in many Middle Eastern countries.

Unique Hot Sauces On Amazon
If you take a look in my refrigerator, I have three habanero sauces, two green jalapeno sauces, a bottle of peri peri sauce, one garlic cayenne sauce, two Louisiana-style table sauces, three Mexican hot sauces, and a bottle of Old Bay Hot sauce aka Franks Red Hot mixed with Old Bay seasoning.
Not that I need that much capsaicin, but once you get locked into a serious hot sauce collection, the tendency is to push it as far as you can.

Mango Habanero Hot Sauce Recipe
This is going to be the best mango habanero hot sauce recipe youll ever make!!
Spoiler alert Its deliciously addictive sauce! Spicy, not too sweet and great flavors. Kick up anything you want by drizzling this sauce over! Its fantastic on tacos, nachos, for shrimp, ribs, chicken everything!
Get those gloves on, habanero chilies are not the thing you can mess around with! Touching with bare hands means have burning nose/eyes/face later! Dont do that mistake!

Papaya Caribbean Hot Sauce
- 1 large ripe papaya, peeled, and cut into chunks for blending
- 1 onion chopped
- A piece of ginger about the size of your thumb, minced
- 10 cloves of garlic
- 1-20 hot fresh chilies, use as many as you like
- 1 tablespoon whole allspice
- Vinegar and salt to taste
- Orange or pineapple juice to thin the consistency
The amount of vinegar to add will depend on the relative tartness of the fruit. You are looking to get a balance of sour and sweet. The sauce should be only very pleasantly sour. Add a few pinches of salt to taste. The sauce shouldn’t taste salty, but without any salt, will definitely be missing something.
I originally got the idea for this sauce off of the internet myself, and this is my modified over time recipe. I’m sorry to not credit this better, but I can’t remember were I the idea from!
How To Make Habanero Hot Sauce
This homemade hot sauce recipe is real simple to make. When we say simple, we really mean it. All you do is blend roughly chopped ingredients in food processor. And simmer it for 15 minutes.
Preparing The Habanero Peppers-
Wear your latex gloves before you start. Wash habanero peppers and pat dry them in paper towel Remove the green stem on the chilies and roughly chop them. Chop roughly.
I left the seeds on for half of the chilies and removed for other half as I was aiming for spicy sauce that was bearable for my palate. For milder spice please remove all the seeds from all the habanero chilies. You want the flavor profile of the sauce to be centered on the heat.
Blend it all-
Throw in all the ingredients into a blender, blend until smooth. You want a nice liquid-y sauce. Noticed few seeds of habaneros in my sauce! That was the best part for me. The heat from the seeds!
Cooking the sauce-
Tip the sauce into a sauce pan and simmer on medium heat for 10-15 minutes with constant stirring.
Word of caution keep your face far away from the pot in which the sauce is simmering. The hot steam of the sauce is quite intense with the heat and if you sniff it in, it hurts the nose! As its quite spicy!

Thinking back to how my love of all things spicy evolved, I can think of one truly memorable batch of salsa that my father made. For the sake of backstory, I grew up on 13 acres near Colona, the child of homesteaders. If you could grow it, you grew it. Animals werent named, aside from food derived names, like bacon or Thanksgiving dinner.

Mom has a medicinal herb garden, and concocts a variety of homemade remedies for any number of ailments. Scraps and refuse go to chicken feed and composting. And everything from the gardens and fields gets put up for winter in one way or another. Which brings us back to the salsa. Dad makes jars upon jars of salsa every year from the farms bounty, and he is good at it. Every year, the recipe changes ever so slightly, dependent on what the harvest has yielded, but every batch unmistakably tastes like dads salsa.
Hot sauces can be made several ways, from quick cook methods, to barrel aged, to vinegar brined, to fermented. I personally prefer the fermented approach, for several reasons.
Basic fermented hot sauce
6 cloves garlic
4 teaspoons of kosher or sea salt.
Aruba Hot Delight Papaya Sauce Recipes
|4 cups peeled and diced papaya|
|1/4 cup seeded and diced hot chiles|
|1/4 cup chopped shallots|
|1 tsp. gound black pepper|
|1/2 tsp. ground ginger|
|1/4 tsp. ground cloves|
- Process all ingredients in a food processor until smooth. Pack into sterile pint jars and process in a water bath for 40 minutes. Seal and store for a min. of 2 weeks to let the flavor develop. Needs to be refridgerated after opening.

How Long Will This Sauce Keep
It should keep a few months easily in the fridge, or even longer. Its all about the acidity. To be technical, target level ph for shelf stable foods is below 4.6 ph, but should probably be lower for home cooks, around 4.0 or so, to account for errors. If youre concerned, add more vinegar to lower the ph. Sauces made with fermented chili peppers will last even longer.
