How To Make A Bread Crumb Topping
Combine the following and sprinkle over your casserole before baking.
- 3/4 cup bread crumbs
- 3 tablespoons melted butter
- 1 cup sharp cheddar cheese
- 1 tablespoon parsley

I use three different kinds of cheese in this recipe: Gruyère, extra-sharp Cheddar, and Parmigiano Reggiano. Using more than one type of cheese adds dimension to the dish. Be sure to use an authentic Swiss-made Gruyère that bears the AOP seal, which shows that the cheese is made according to strict government-mandated quality standards.
Similarly, its important to use authentic Parmigiano Reggiano. You can always tell if its the real deal by looking at the rind, which is embossed with the name over and over.
I go the traditional route with the pasta and use macaroni, but any pasta that has lots of nooks and crannies will work nicely. Your goal is to use a shape that catches and holds onto as much of the cheesy sauce as possible.

Scotch Beef Ragu Mac And Cheese
400g lean diced Scotch Beef PGI
30g plain flour
200ml low salt beef stock
Salt and pepper
For the mac and cheese:
A pinch of ground nutmeg
25g plain flour
200g mature cheddar cheese or cheese of your choice, grated
250g macaroni or rigatoni pasta
Oven temperature 180c / 160c fan / gas 4
Toss the beef in the flour and season then shake off any excess flour before adding to the pan
Heat a heavy based pan and fry the beef in the oil a little at a time until golden
Once beef is browned, add the passata, wine and stock
Bring to the boil and the place in the oven for 1 ½ 2 hours until the beef is falling apart tender

Baked Mac and Cheese: Once the pasta and cheese sauce are combined, add it to a baking dish and bake with a little more cheese and breadcrumbs sprinkled on top. We shared this Baked Macaroni and Cheese a while back.
