Weve asked David Gillie about this particular recipe, and he was quite open about it. He verified for us that this is a minor variation what he makes at Gillies Coney Island. The book recipe was slightly modified for publication just to accommodate being done at home. I made one change in that published recipe: I changed the normal extra fine raw ground beef, beef heart, soy texture that I buy from Abbotts Meat in 25# bags with suggesting they use lean hamburg and grind it extra fine. While he may have suggested this modification, it did not show up in the final publication.
However some time after that, Abbotts Meat started making a 10# Coney Sauce pack so that homes, bars and small restaurants could also make their own Flint style coney sauce. I would recommend this now instead of trying to find/get extra-fine ground hamburger.
After wed discussed the conclusions of this test of Gillies recipe, Monica Kass Rogers updated her Gillies Coney Island Chili Dogs recipe with a small-batch version that she likes. Its definitely worth trying.

Most online recipes and recipes in-print are about as far from Abbotts original sauce as they can possibly get. They involve ground hot dogs, or maybe havent been tested and should never be made.

What Is Hot Dog Chili
Hot dog chili sauce aka hot dog chili aka hot dog sauce is literally chili specifically made to be put on hot dogs. As I previously mentioned, hot dog chili sauce will differ depending on the region of the country. Thick or chunky, beans or bean-free, boiled ground beef or pan-fried.there are tons of variations out there. This is my slow cooker/Instant Pot version. Its not too thick but not too chunky. Its been free and the beef is seared before slow cooking with the ground meat, simple chili seasonings, ketchup, and beef broth. Yes you read that correctlyketchup! The addition of ketchup is one of the main differences between hot dog chili sauce and regular soup chili. Feel free to substitute tomato sauce in place of the ketchup.
Coney Island Sauce For Gaggers
Back in Fall River Ma. I would go down to Dirty Nick’s for 5 or 6 “Gaggers” At the end of the night, and this is my version of the coney island sauce!

Yield 4 1/2 cups, 10-20 serving
Number Of Ingredients 12
1 lb lean ground beef |
2 cups water |
1/2 cup ketchup |
1 cup onion |
2 teaspoons paprika |
- Place the hamburger and onion a heavy skillet and brown. Add water and remaining ingredients.
- Stir mixture and bring it to a boil.
- Reduce heat and simmer for 45 minutes stirring occasionally.
- The finished consistency should be more on the thicker side not thin.
- Add a boiled hot dog to a steamed bun, add mustard, coney island sauce, chopped onions and a sprinkle of celery salt and ENJOY!

There is just something about a hot dog with coney sauce spread on top of it that screams summertime.
Every year, when we head to the ballpark to watch a baseball game, the first thing that I crave is a hot dog wrapped in foil. It is an All-American treat and tradition that most people are familiar with.
Although, it is even better when it is topped with coney sauce, diced onions and mustard.
However, because I havent been to a ballpark in a long time, I decided I would satisfy my craving and make them at home.
So I decided to adapt my standard chili recipe and sloppy joe recipe to come up with the perfect homemade coney sauce mixture!

How To Make Coney Sauce For Hot Dogs
Drain kidney beans and pulse in a food processor until pulverized. Heat the olive oil in a skillet. Add diced onions and cook until lightly brown. Stir in ground beef, tomato paste, chili powder, salt and celery seeds and cook until meat is browned. Add beans to meat mixture and simmer until thick. Serve over hot dogs.

I finally had the opportunity to make a batch of this Coney Island Hot Dog Sauce for an upcoming camping trip. Easy to make ahead of time and heat up in the microwave before serving.
To many, this may just seem like the topping for a chili dog and are wondering the origins of why it’s called a Coney Island Hot Dog. I was a little surprised to see the European influence on this classic hot dog meat topping.
I don’t often make Hot Dogs but when I do, it’s usually on my weber BBQ while camping. There’s just something about camping and cooking Burgers & Hot Dogs on a BBQ.
When I do make Hot Dogs at home, I will occasionally boil them in water instead of frying them. Not sure how common of a practice this is but my mom used to make them that way for us when we were kids.

What Is A Coney Island Hot Dog
I have read article after article online about traditional coney island hot dogs, and I am convinced that no one will ever agree on what a true coney island hot dog recipe is. And thats ok by me. Ive never been to Coney Island, and Ive never had an authentic coney island hot dog. And I find it funny that it doesnt seem like they even originated on Coney Island but from Greek and Macedonian immigrants in Michigan.
One thing that everyone will agree on, though, is something that sets a coney island hot dog apart from a chili dog the sauce is an all meat sauce. No beans.
I do love a good chili dog but you wont find that same sauce on a coney dog.
Another thing that distinguishes a coney dog is serving it topped with onions and mustard.

Growing up I literally lived all over the country& one thing I learned is that hot dog chili sauce varies by region. The hot dog chili I had while living on the East coast is different than the chili we put on our hot dogs in the South or Midwest. I spent most of my childhood bouncing around the Midwest so I grew up mainly eating hot dog chili where the beef is boiled.
