We all love grilling outdoors, but there’s nothing worse than losing crisp veggies through the cracks of a grill grate. Everyone has gotten halfway through a recipe, only to see a reference to a piece of unfamiliar cookware. One of those items is a double boiler, which is especially popular for melting chocolate and cooking sauces and custards.

If youve ever seen a double boiler mentioned in a recipe, youve probably done what many others have over the years: conducted an online search for a substitute. You can easily get great results by filling a small saucepan with water, fitting a metal mixing bowl with the items youre cooking inside it and boiling the water until your ingredients are melted.

How To Clean And Care For All

If you follow the cooking instructions with All-Clad, cleaning is simple: soap and water.

If you have a minimal amount of leftover debris sticking to the pan, give it a short soak in soap and water and then scrub it off with a regular sponge. Never use steel wool it will scratch and cause damage.

Be sure to rinse and dry the cookware entirely before putting it away. If water sits in the pan for days, it can cause spotting.

The stainless steel collections are dishwasher safe however, if you have the Copper Core cookware, the heat and harsh detergents can tarnish the exterior copper band. I typically avoid washing cookware in the dishwasher because it takes up too much space, but that is just me.

Do not run cold water on them immediately after cooking. The rapid change in temperature can cause warping. Ive made this mistake a few times and got away with it, but the best practice is to take the pan off the heat and let it cool down naturally before rinsing with water.

What to Do If You Scorch Your All-Clad Cookware?

So, you decide to dismiss our advice, and you cook on high heat or crank the oven above 600 degrees. All of a sudden, your pan looks like it has been scorched in a fire.

It’s Not Invulnerable To Burns

Given that I burn things far more than my husband does, I found it exquisite irony that the one time my All-Clad didn’t recover from a burn, it was my husband who perpetrated the crime, not me. The $20 All-Clad pot sat on the stove while my husband, no mean cook himself, merrily burned tea in it. That’s right. Tea.

While working in the shop, he boiled tea and sugar in that thing for I don’t know how long. . . until it was dry. Sugar, when burned, becomes caramelized. It usually comes off with soaking, but on this occasion, my husband effected some serious chemical bonding and that pot, with its flaked, burned bottom, has never been the same. We ran out of Barkeeper’s Friend trying to get the stuff off.

My husband, who’s handy to say the least, promises me he can remove it with some shop tools. I’m still waiting. I am not throwing that pot away. I love that pot.

Update: The pot has been cleaned! It has been back in service for a couple of years now. It, like all my All-Clad, has lots of scratches, but it’s still functioning as beautifully as it did on Day 1.

How To Properly Cook With All

All-Clad cookware distributes and holds heat so well that you rarely need to cook on high heat.

Whether you are searing meat, sauteing vegetables, and everything in between, low or medium heat will work best. The one exception is when you are boiling water. In that case, high heat is necessary, but in most cases, low/medium heat is optimal.

Most problems, like sticking or burning, occur when the temperature is too hot. If you use low and medium heat settings, your food will cook fast, even and perfect.

For delicate foods like eggs, fish, and pancakes, use extra caution, and keep the temperature low. If you dont allow enough time for the crust to form and the natural release from the pans surface to occur, they will stick.

My favorite part of cooking with All-Clad is the fantastic sear you can put on meats. Others dont even come close, especially pans with non-stick surfaces.

To get the perfect sear, heat your pan slightly above medium heat. When the pan is warm, add oil and heat for another minute.

When the pan and oil are hot, place the meat carefully in the center of the pan. Be patient.

Do not touch the meat for at least 2 minutes, likely longer depending on the type of meat. If you try to move it right away, it will stick.

When you sear meats, there will be some bits and pieces stuck to the pan, but that is okay. They will quickly come off with soap and water.

If youre feeling fancy, instead of washing the pan, use wine to deglaze it and make a sauce for your meal.

The Handles Don’t Get Hot On The Stovetop

Because of the design of the pots, the handles of All-Clad pieces don’t get too hot to handle when you cook on the stovetop. This seems like a small detail, but I can’t count the time I’ve burned my hands on pot handles because the heat carries over and there was no oven mitt available. That doesn’t happen to me on these.

However, I do have to be careful about the lids, which do get hot. And this will sound silly, but it’s all too easy to forget that a pot you just took out of the oven and set on the stove is too hot to touch!

It’s Easy To Cleaneven Burns

Cleaning my All-Clad stainless steel cookware is pretty easy. I absolutely despise doing dishes, I mean, despise. I can stick the pans in the dishwasherthe smaller ones, anyway. The larger ones don’t fit no matter how I turn them, but that’s okay. I can live with it.

The important thing is that, if you wash the pan quickly, burned food comes off easily. Either by filling the pot with water and simmering for a few minutes with the lid on, by using Barkeeper’s Friend for really tough cases , or just by scrubbing it with plastic scouring pad. For the EXTREMELY tough cases using sandpaper or a metal grinder may be called for.

It Scratches Very Easily

Here’s the deal: If you don’t take care not to scratch your All-Clad stainless, it’ll get scratched. A lot. It will almost look like it’s brushed steel, there are so many scratches. To avoid scratching, don’t use metal utensils or hard scouring agents. That hasn’t been realistic for me, thoughI cook too much.

A small All-Clad frying pan I inherited from my mother a few years ago. It had scratches then and I’ve added some.
