    Tell us about your journey in the world of peppers. What led you to create your hot sauce?An overabundance of peppers in my fire house garden in 1994. I made it for 11 years in the kitchen for friends and family before it ever made it into a bottle. The only reason it made it into a bottle and I sell it is to raise money for Palo Alto Firefighters Charitable Fund. 100% of the profits go to charity. So far we have awarded 101 college scholarships to community high school seniors going on to some level of higher education. I make no money from it. Never have, never will.

    Where did your love affair with heat come from? Learning to cook and explore food while in high school. It was further enhanced by cooking and sharing meals at the fire house. Meals at the fire house are a very important aspect of the Fire Fighter culture. They build camaraderie and enhance the bond within the team.

    What peppers do you think have the best flavor? Fully ripe jalapenos

    How do you use peppers in dishes at home? Recently I have been roasting a combination of peppers and making a sweet and spicy sauce for meats .

    The Palo Alto Firefighters hot sauce has a thick, dark red texture that has good body but pours easily. The smell has a distinctively smokey, peppery aroma. It actually smells like a good hearty chili, minus the beef and beans.

    On First TasteI gave the Palo Alto Firefighters sauce a try on a tortilla chip, and many additional samples rapidly ensued. The flavor is terrific. The pepper varieties arent given on the label, but serrano pepper stands out among what Id guess are plentiful red jalapenos and chipotles. The balance of flavor is excellent. The vinegar is well used, light and adding richness to the background. Its a tasty, well balanced sauce that puts the pepper flavor first just the way I like it. There is some heat, but its by no means a scorcher. This is a sauce for anyone who likes a light burn.

    On FoodThe Palo Alto Firefighters hot sauce seemed a perfect companion for breakfast food, so I heaped it on a sausage and egg breakfast sandwich. It stuck nicely to the food, added a terrific flavor unquestionably a winner.
