Why Might Your Spaghetti Sauce Be Too Sweet

When you make spaghetti sauce, you might find that its easier to buy some store-bought tomato sauce.

After all, it saves time when you dont want to make your sauce from scratch. However, store-bought sauces have a lot of sweeteners already in them.

If you add more sweeteners to your sauce, you have one that is too sweet. You cant be certain about the type of tomatoes they use in store-bought sauces. If they use ripe tomatoes, then theyre often sweeter.

If you want to choose a store-bought tomato sauce, you should always check the ingredients that they use on the package.

You can, of course, add canned tomatoes to your recipe to make it more acidic. However, you need to be sure that there arent too many sweeteners.

Ideally, you should create your spaghetti sauce to prevent having too many artificial sweeteners. You can then have more control over the ingredients you use, and you can always see how ripe your tomatoes are.

When youre choosing tomatoes, make sure you buy them when theyre in season. Theyll usually be in season between May and October. Youll know a tomato is good because its not that sweet.

However, it may not even be your tomatoes. Perhaps you just added too much sugar to your recipe, and youre not sure how you can fix it.

Thats why were here to help you by finding different ways you can fix your sauce.

Adding More To Your Sauce

You could always add more to your sauce to reduce its sweetness level. To do this, you just need to increase the amount of your other ingredients.

That way, you can dilute it and make your flavor more balanced.

Its all about giving your sauce more volume. You can do this by adding more of your main ingredients. Add more of your spices.

One ingredient I would add more of is tomatoes. Adding more tomatoes will make it more acidic, but you want to make sure youre not using store-bought jars when you do this.

However, if youre uncertain about adding more ingredients, then you should make a separate sauce.

The separate sauce can have all the same ingredients, but you dont want to include the sugar. Instead, this will be a sugar-free sauce, and if your main sauce is too sweet, add more of this one.

If you make a separate sauce, you might have more leftovers left for lunch or tomorrows meal.

However, its a great way to limit the amount of sugar you use, especially if youve never made your own sauce before.

As told to Addie Ladner

This is a sweet and savory pasta. The pumpkin lends natural sweetness and the Parmigiano, sage and salt make it savory, says Oscar Gnapi, chef of Fentons new Italian restaurant, Colletta. I love it as a main course with a glass of Italian white wine. The buttery sauce plays very well with a crisp white glass of wine. Lo mein noodles contain eggs whereas regular spaghetti noodles do not.

If all you have available is regular spaghetti noodles, try boiling your noodles with a small amount of baking soda. The change in the pH will give the spaghetti a texture more similar to lo mein noodles.

What Do You Put Inside The Filipino Spaghetti Sauce

Filipino spaghetti sauce usually has ground meat and sliced hotdogs.

As for the tomato sauce, here are a lot of ready-to-use Filipino style spaghetti sauce options I find in local groceries in the Philippines, which are seasoned specially for Filipino spaghetti so theyre already sweetened. I took into consideration that not everyone has access to these, especially outside the Philippines, so this recipe makes use of tomato sauce thats cooked down with a bit of seasonings but not made specially for Filipino style spaghetti. So I utilise brown sugar and tomato ketchup for this recipe to sweeten the sauce.

Banana ketchup is also more traditionally used as a great addition to Filipino spaghetti but since its not readily available in all countries, I decided to use more commonly found tomato ketchup.

How To Prevent Sweet Spaghetti Sauce In The Future

At this stage, your spaghetti sauce is too sweet, and all you can do is fix it. That being said, there are some best practices to follow to ensure this doesnt happen too regularly!

  • Try Different Tomatoes if you are making your own spaghetti sauce from scratch, then consider the type and ripeness of tomatoes you bought. It could be them. Look at the different types and varieties of tomatoes available to you and consider trying different ones next time. Generally, fresh ripe tomatoes are sweeter than those a little past their best. At the same time, canned tomatoes are known for generally being less sweet.
  • Alter The Recipe if you are following a recipe, try making some subtle changes like reducing the sugar content or increasing other savory flavors. You may need to be a little more mindful of what ingredients you use and how much. Be willing to experiment, take some ingredients out, add some in.
  • Try Different Brands if you are purchasing a store-bought, pre-made spaghetti sauce, try a different brand or product. Some are known for using a lot of added sugar in the recipe, whereas others use sweeteners, additives or other ingredients that make their sauces too sweet. Check ingredient lists and be willing to try a few out. Generally, those with fewer ingredients tend to be more balanced.

What To Add If The Sauce Is Too Sweet

A sauce that has become too sweet can be fixed easily by overcoming the flavor with acid or spices. You can add lime juice or vinegar . Salt or wine can also do the trick of balancing out the flavors in spaghetti sauce.

The process to be followed is simply adding less of the neutralizers and then slowly increasing the amount according to the taste you are getting from the sauce.

Filipino Spaghetti Sauce Recipe

Six years ago in Manila, I found myself at a child’s birthday party grabbing one of every food being offered: fried chicken, spaghetti, and a San Miguel. At the end of the buffet table next to a full-sized image of Big Bird and the required karaoke machine, I had my first taste of Filipino spaghetti.

The meat sauce was laden with sugar and hot dogsdefinitely not the spaghetti of my youth. It was no doubt kid’s food but I couldn’t help myself from really enjoying it, and went back for seconds to go with the remainder of my beer. Since then, whenever Filipino spaghetti appears at a family function, I semi-secretly gorge on it, having an odd attraction to the sweetness.

One of the major sweeteners in this tomato sauce is banana ketchup, which I had a surplus of thanks to last week’s Sauced column. As I finished an oversized plate of the Filipino spaghetti, wieners and all, my wife couldn’t believe I liked it so muchto her it’s more of a nostalgic thing. But what can I say, it may be designed for the kids, but there’s no shame in an adult loving this meaty, sweet tomato sauce too.

Recipe Facts

  • 1 cup finely chopped onion
  • 1 teaspoon freshly minced garlic
  • 1 pound ground beef or pork
  • 5 hot dogs , cut into 1/4 slices

Ingredient Notes And Substitutions

  • Steak – Flank steak sliced across grain into ¼ inch pieces is best. Skirt steak is also acceptable.
  • Wine – Shaoxing wine has a complex and sweet flavor that is vinegary, spicy, and caramel-like. Check your local Asian market or international aisle at the grocery store. You can also substitute dry sherry.
  • Soy Sauce – This recipe calls for both light and dark soy sauce. Dark soy sauce is richer, bolder, and sweeter, while light is saltier.
  • Cornstarch – Creates a light coating that prevents the beef from overcooking while keeping it tender.
  • Green Onions – Add a fresh, peppery kick. Scallions or chives work great as well.
  • Vegetables – Snow peas, carrots, and cabbage add freshness and crunch. Feel free to add your favorite vegetables.
  • Lo Mein Noodles – Lo mein egg noodles are best, but rice noodles or even spaghetti noodles will work in a pinch.
  • Oyster Sauce – Sweet, salty, savory umami flavor. Check your international foods aisle for this one.
  • Sugar – Adds a touch of sweetness.
  • Oil – Sesame oil adds delicate nuttiness. Choose an oil with a high smoke point for stir frying, such as avocado or peanut oil.
  • Garlic – Adds a pungent, spicy kick.

This Sauce Has A Story

Over the past few years I’ve been on a secret quest to develop to my own “family” recipe for marinara. I have nothing against an easy jar sauce but I love the idea and taste of sauce that’s been simmering on the stove all day. I’ve tried a lot of different combinations and even written some of them down. But finding something that both me and my husband think is better than the jar stuff has been tricky.

Several years ago I had a student at UNF pass on their grandmother’s sauce recipe to me. I’m not sure what her name is or what her story is, but her marinara sauce was a little sweet, really fantastic and definitely easy.

Since then I’ve been playing with the recipe for a couple of months to come up with my own version that the Braddocks like. I think this recipe nails the right combination of ingredients that make a mouth-watering, simple and sweet marinara sauce.
