While store-bought shakers of dried Italian seasoning are certainly a convenient way to save time in the kitchen , theres something incredibly rewarding about seasoning your food with seasoning thats in your very own precise portions.

When you blend your own Italian seasoning, it also gives you the freedom to include other herbs and spices like sage, red pepper flakes, cilantro, fennel, parsley and more. And once youve mastered the art of blending herbs for an Italian seasoning, you can move on and try your hand at other mixes like taco seasoning and even pumpkin spice seasoning.

Be sure to label the container so you can grab and use a pinch at a moments notice.

To make your own Italian seasoning, blend 2 tablespoons each of your chosen dried herbs. When using the five classic herbs mentioned above, this recipe will make 10 tablespoons of Italian seasoning. But its easily scaled up or down to make as much or as little as youll need. To maintain maximum freshness, try to make about six months worth of seasoning.

Mix all the ingredients in a bowl until well combined. If you prefer seasoning to have a finer consistency, pulse the herbs in a spice grinder or food processor, utilize a mortar and pestle, or use the flat side of a frying pan to crush the mixture.

1. Cook spaghetti noodles.

2. Season noodles and add to pie dish. Add hot cooked noodles, butter, parmesan cheese, basil and beaten egg to a large bowl and toss well to combine. The egg and parmesan cheese help the noodles to hold their shape when you cut the pie. Press mixture firmly into pie dish.

3. Layer with cottage cheese and sauce. Spread a thin layer of cottage cheese over top and then top with spaghetti sauce. You could use my homemade spaghetti sauce, or store-bought pasta sauce. Youll need about 1 ½ cups of sauce.

6. Bake at 350°F for about 20 minutes. I like to sprinkle the top of the sauce with a little extra parmesan cheese.

I love how bubbly, warm and delicious it gets when it bakes. Allow it to cool for a few minutes and then slice and serve it like you would a pie.

How To Make This Recipe

Its simple! Sauté onions and garlic in olive oil, add a couple tablespoons of tomato sauce and heat it up for a minute or so, then add the tomatoes.

Add the dried spices: oregano, thyme, bay leaf, a tablespoon of sugar, and red pepper flakes.

Stir well and simmer for at least one hour, but up to three hours. Just before serving, remove the bay leaf, and stir in a little butter, and some fresh basil and parsley.

Serve over your favorite pasta with a sprinkle of freshly grated Parmesan cheese. Buon appetito!

I grew up on this product. 47 years with McCormick Italian Mushroom Mix. I do not buy or make spaghetti with anything else. I, and my family, Absolutely have been going crazy not being able to eat spaghetti.

Why has this mix not been stocked in stores? Missing my weekly pasta dish. Sometimes twice a week. Please keep this product. McCormick spaghetti lovers are up in a roar.

Texture too thick, lower flavor relative to memory of sauce from 46 years ago. Not worth a repeat. It was as if the modified starch had too much mouth coating. At least Im blaming it on the spice packet and not changes in other ingredients such as tomato sauce and paste.

Those too probably changed over the years.

Hardly any seasoning besides salt. When you use good quality jar/canned tomatoes, extra virgin olive oil, garlic and meat, youll only need some Italian parsley and basil for this recipe.

Thats all, please trust me on this. Yes, you can use dried parsley and basil, but its just not going to be as flavorful. Please do not follow the advicethat another American cooking site has shared, which is incorrect . This would be like a poison control website telling you to throw water on a grease fire! They have no authority to give you the advice, and its just wrong.

NOTE: if you dont have fresh garlic, I would skip it rather than use dehydrated garlic, or garlic powder.

I have used the Mrs Wages salsa seasoning and liked it. The pasta version not so much. It is way too salty for me. It called for 6 pounds of tomatoes but I think 12 pounds might have been needed to dilute the salt content.

Ill make do by not adding any salt to the pasta water or the meatballs, maybe that will even things out. Disappointing that I wasted 6 pounds of garden tomatoes on this.

This pasta sauce was perfect. We had a bumper crop of tomatoes and I had always wanted to can sauce before but put it off. After reviewing the Mrs. Wages products on Blains site I opted to give it a try.

How To Make Instant Pot Spaghetti:

  • Brown the meat using the Instant pot sauté function. Drain grease and add onions and spices.
  • Add pasta, breaking in half and placing on top.
  • Make sauce by mixing crushed tomatoes and tomato paste together. Pour over noodles and add water.

Depending on how acidic your sauce is to start with, a teaspoon to a tablespoon should be enough, or you may not need any at all. Its all a matter of preference.

    Seasoning With The Wrong Herbs

    Now that we have our tomato base for the spaghetti sauce, it’s imperative to know how to season it. One important tip you need when cooking with herbs revolves around fresh versus dried herbs. Living in a world where everything fresh is supposed to be better , it’s easy to understand why somebody’s first impulse would be to pluck an oregano leaf from the garden for their sauce. However, all the time you spend watering that garden ends up as water in your herbs which impacts the flavor profile. In other words, most of the time, dried herbs edge out fresh ones in terms of the necessary punch for something like a sauce.

    Before substituting dried herbs for fresh ones, it’s best to recognize that some herbs that will be central to a tomato sauce can actually lose potency when dried. Sweet basil is one that you maybe don’t want to switch out for a dried version, and as such, you will want to add it just before your sauce is finished cooking. Fresh herbs also don’t do very well over extended cooking periods and can become astringent if cooked too long.   • 1Cook the ground beef, onion, and garlic over medium heat for 7 to 8 minutes. Pour 2 tablespoons of olive oil into a large skillet or Dutch oven and turn the burner to medium.
