If youre a penne alla vodka fan, this sauce is for you. Inas vodka sauce = the best vodka sauce ever. And dont be afraid to use the full cup of cream. Go big. You wont be disappointed you did!

After reading the preface to this pasta alla vecchia bettola recipe in The Barefoot Contessas Foolproof, I had to make it immediately. More than being a mainstay on the menu of one of Inas favorite restaurants for 20 years, what struck me about the recipe was the method, which calls for roasting the sauce in a covered pan for one-and-a-half hours.

The recipe originates from a restaurant in Florence, and Ina likens the dish to the classic penne alla vodka but with so much more flavor.

Few sauces that call for using canned tomatoes leave me satisfied the way this one has. But this sauce has the potential to make this winter like no other.

During the hour and a half in the oven, liquids reduce and flavors concentrate, and the resulting sweet-spicy mixture needs little more than a few splashes of cream and a handful of cheese to balance it out. Adding the full cup of cream makes for an incredibly delicious sauce, but it can hold its own with much less.

You don’t have to be Italian to swoon upon mention of those words. Worldwide consumption of pasta increased for the second straight year in 2017, with the U.S. leading the pasta market – 2.7 million tons consumed last year.

And sauce? Most supermarkets stock dozens of kinds. Marinara. Tomato and basil. Tomato, garlic and onion. Tomato and herb. Vodka. Bolognese. Puttanesca. Pomodoro. Arrabbiata.

There have been rankings of pasta sauces – the Chicago Tribune sampled 12 Thrillist sampled 13. To which we say: Child’s play.

No one has come close to doing what we did – 129 sauces sampled, with every major sauce brand available in New Jersey ranked from worst to best. A total of 14 stores were visited – we were thorough if nothing else – with the sauces sampled over five days. Two sauces per brand were sampled several brands were represented by one sauce only.

This is the fourth of our epic supermarket showdowns we’ve ranked frozen pizza, snacks and breakfast cereal.

How the sampling was done

One pasta was used throughout the sampling – De Cecco Linguine no. 7. Eight one-pound boxes in all were used. Each sauce was sampled two ways – on its own after being simmered in a pan, then over the linguine.

    Lets get to it, shall we? I present the indisputable and 1,000% correct Pasta Sauce Power Rankings. The general rules are:

    I got jarred sauce , bought standard marinara or the closest approximation I could find and tried to include no more than one jar per brand. There are a lot of sauces here and, just as when looking at a list of Chumbawamba members, it can become overwhelming and difficult to tell them apart. You wont really go wrong with, say, the top dozen or so sauces on this list.

    I ranked these by taste and attractiveness of packaging lets face it, when youre looking for a new pasta sauce, its usually the simple/earnestly rustic label that gets your attention.

    Cost is difficult to pin down and, given theres a wide variety of prices you might pay depending on the retailer, I didnt use it as a metric. That said, when something is a particularly good value, I note that in the ranking.

    1. Raos Marinara

    This is a little complicated, so bear with me. In December, I tweeted out a photo of Victoria marinara sauce and declared it the best on the market. That was incorrect, and we regret the error. However.

    Victoria does make the best sauce, but its the premium White Linen brand, typically found at Costco, thats superior, not the standard marinara . So: Why not just put Victoria White Linen at the top of the ranking?

    Next time you go to the grocery store, peruse the Italian sauce aisle. It seems that this aisle grows a little bit every time I go to the store.

    As you look over the selection, youll see some national brands, such as Bertolli Alfredo sauce, Raos homemade Alfredo sauce, Classico Alfredo sauce, Ragu Alfredo sauce, and generic store brands of Alfredo sauce.

    Ive found that these are all Alfredo sauces of good quality. However, my favorites are Classico and Raos. But you might like one of the others more.

    Like anything else, its all a matter of personal taste.

    Based on my experience, theyre all delicious, even though they all taste different. I recommend trying all of them one at a time, of course.

    Many of the brands offer a choice between creamy white sauce and tomato sauce based Italian sauce.

    You can also find more specific flavors, such as the creamy basil Alfredo from Bertolli.

    My personal favorite is typically the one thats on sale because I know that Ill be making it my own sauce after adding a bunch of delicious ingredients.

    Kinslee has recently decided that she doesnt want to eat meat anymore. Now you know we love our beef casseroles, meatballs, chicken and pork probably more than most. So when Kinslee starts to turn her nose up at meat, what are we to do? I know that at least for now this is a bit of a phase but Im also taking this opportunity to introduce a few Meatless Mondays into our menu. This creamy rigatoni was a huge hit in our house!

    Im sure there are plenty of ways to do this, but Ive found this to be the easiest way.

    Feel free to switch out the ingredients to ones you prefer.

    I believe that the best flavors are the ones you and your family like.

    I also highly recommend choosing just a few of the above ingredients to test the first few times.

    Pour the jar of Alfredo sauce into a medium saucepan and turn the burner to medium-high heat.

    As soon as you see a couple of bubbles, turn it down to medium-low heat.

    Now start adding the ingredients you like.

    I highly recommend sautéing the onions if you choose chopped onions as one of the ingredients because that brings out the flavor.

    I used all dried seasonings because thats what I had. But if you have access to fresh ingredients, I highly recommend using those.

    My pepper mill is still packed , so I used already ground pepper.

    Fresh ground pepper is much better. Or you can use white pepper.

    I added chopped chicken that I cooked earlier to make chicken Alfredo.

    If you dont have fresh cooked chicken, you can use the canned version.

    After its added to the cream sauce with the other ingredients, you probably wont be able to tell the difference.

    When Im in the mood for seafood, I might use either shrimp or scallops instead of chicken. Both are good. Try using a variety of different proteins to see which ones you like.

    As you add ingredients, you may want to turn the burner up to medium heat to keep the sauce hot.

    How To Thin Out Alfredo Sauce

    If you prefer a thinner Alfredo sauce, there are some easy ways to thin it out. A lot depends on how creamy you want it.

    Here are some ways you can thin out Alfredo sauce:

    • Add milk. I recommend doing this very slowly, just a couple of tablespoons at a time because it will thin out very quickly.
    • Use some of the pasta water from the noodles. The starch from the pasta will help keep some of the body and prevent it from being too watery.
    • Add chicken broth, beef stock, or vegetable broth. Again, I recommend adding just a little at a time, until you get the consistency you want.
    • You can also add water, but that waters down some of the flavor. You might need to add more seasonings if you choose water.

    How To Serve Alfredo Sauce

    My husband and I like fettuccini Alfredo. Since I have a gluten sensitivity, I get fettuccini pasta thats gluten-free.

    You can serve this however you like, but Ive found this to be the best way to serve this easy recipe.

    After cooking the pasta and putting it on the plate or in the bowl, I scoop some pasta sauce over it.

    Then I top it with parmesan or a blend of parmesan and Romano.

    Or, if you prefer, you can mix the pasta into the Alfredo sauce. For a baked dish, mix all of it and put it in a greased baking dish.

    Top it with mozzarella cheese and pop it into a 350 oven. Bake it until the cheese on top melts and then serve it hot.

    Its always good to enjoy any pasta dish with a side salad or steamed vegetable. My husband also enjoys a slice of crusty Italian bread with butter.

    How To Keep Alfredo Sauce

    If I have any of this creamy Alfredo sauce left over, I pour it into a medium or large mason jar, depending on how much I have.

    Then I put it in the refrigerator. Its good for at least 4 or 5 days. However, it rarely lasts that long at our house because I love leftovers for lunch.

    Can you freeze Alfredo sauce? Yes, absolutely! Put the Alfredo sauce in an airtight container and store it in the freezer. When youre ready to eat it, let it thaw for several hours. Then put it in a covered saucepan over medium heat.

    Ive noticed that when I freeze Alfredo sauce, the sauce sometimes separates. But all I have to do is stir it as it heats, and that usually solves the problem.

    You can also thicken it by adding a little bit of cornstarch. The best way to do this is to make a slurry of 1 tablespoon of cornstarch and 1/2 cup of your favorite cold broth . Whisk it and then slowly add it to the Alfredo sauce. It thickens as it gets hot.

    Recipe For Italian Sausage Kale Pesto Pasta

    BOIL THE PASTA:

    • 2 Boxes Barilla Rigatoni pasta
    • 1 Tablespoon Salt
    • 1 Tablespoon Extra Virgin Olive Oil
    • 1 Tray of Johnsonville MILD Italian Sausage
    • 4 Garlic Cloves
    • 2 Jars Sonoma Gourmet Kale Pesto With White Cheddar Sauce
  • Boil The Pasta. Please note that this recipe calls for 2 boxes of Rigatoni pasta but only 1 and 1/2 boxes of pasta is needed. Fill a stock pot with water and add a tablespoon of salt. Bring it to a boil then pour in the pasta. Stir occasionally. Cook until it is as tender as desired.
  • 2. Reserve a few ladles of the pasta water as you may need it for later.

    3. Drain the noodles and set aside.

    3. Mince 4 garlic cloves. Set aside.

    4. Squeeze the meat out of the Johnsonville Italian Sausage casing. There is a hole on each end of the sausage so just squeeze the meat out of each hole into smaller pieces onto a plate.

    5. Add a tablespoon of Extra Virgin Olive Oil to a saute pan large enough to cook all the pasta. Turn the heat on to Medium-High. Once the pan is hot toss in the Italian Sausage and the minced garlic.

    6. Use a spatula to break up the meat into smaller pieces.

    7. Cook until the sausage is browned.

    8. Momentarily turn off the heat and tilt the pan. Spoon out some of the fat .

    9. Turn the heat back on to Medium-Low and dump in the pasta. Give it a stir.

    12. Stir until all the pasta is coated with the Kale Pesto sauce and heated through.
