    • Parmesan Cheese- Shredded parmesan or grated parmesan works great.
    • Garlic Salt- The perfect blend to flavor your alfredo sauce. No need for minced garlic. Use garlic powder and a little salt in place of garlic salt.
    • Nutmeg- Just a pinch will do. It adds tons of depth and flavor.

    How To Make One Pot Alfredo

    I start this sun-dried tomato alfredo the same way I start my one pot alfredo, with a little bit of garlic cooked for about 30 seconds before adding the cashew milk. Its just enough garlic flavor to make this not a one-note cheese dish.

    Youre going to boil the pasta directly in the cashew milk and sun-dried tomatoes. I do 6 of the seven cups of cashew milk for one box of pasta, but you can use half chicken stock.

    Once the pasta is just slightly undercooked , youre going to add the tomato paste and cup of cashew milk mixed with the flour. The already thickening sauce will get much thicker as the flour cooks.

    First, add the cream cheese. Its my secret for all creamy sauces like mac and cheese. Once thats melted, make it rain parmesan. 4 oz of freshly grated parmesan seems like a lot, but it tastes incredible so dont skimp.

    If your sauce gets a little too thick, feel free to add a little more cashew milk. The sauce can thicken quickly. You may need to thin out with 1 more cup of cashew milk or regular milk.

    Season with salt at the end–parmesan can be salty.

    All you need is about 20 minutes and 10 ingredients to make this dish.

    Start off by prepping your pasta just plop the pasta in a pot of boiling, salted water and let the water do its thing. Chickapea pasta cooks in under 10 minutes so you wont need to wait long. Once the pasta is cooked to your preference just drain away the water and set aside momentarily while you prep the sauce.

    The base of this sauce is made from sautéing garlic in olive oil and mixing in a little bit of flour to form a roux. This is what gives this Alfredo its creamy, luscious texture instead of using full fat dairy. A couple things to note about this roux/sauce base:

  • Chickapea pasta is naturally grain free since its made up of just two ingredients: chickpeas and lentils! If youd like to keep this dish grain free use arrowroot starch. If youre not concerned about adding a little extra grain you can also use any old gluten free all purpose blend here. You only need a couple of tablespoons here so its not much at all.
  • Since were going for summery vibes here were adding chopped up sun dried tomato to this roux!
  • Once youve mixed all of that up you should have a thick, pasty, golden kind of mixture. At this point you just need to add the almond milk make sure its unsweetened and plain and let that simmer and thicken up a bit for a minute or two before stirring in the tomato paste and vegan parmesan to combine.
