very salty, not very spicy. but good in moderation.

as others have iterated, its got salt and garlic notes but its rather mild. having said that, i really like it on chicken and rice.

Saving Seeds From Habaneros

If you want to keep growing your plants each year, it is easy to save the seeds from freshly picked habaneros. It is important to do it quickly once the peppers are harvested.

Seed saving tips:

  • Choose ripe peppers. Only harvest seeds from fully-ripened habanero peppers. This ensures the seeds within are fully developed and will more likely germinate.
  • Harvest seeds promptly. Once picked, harvest the seeds quickly to prevent the seeds from germinating within the peppers. Once a seed begins germinating, it cannot be stored for growing later.
  • Dry seeds thoroughly. Always allow your seeds to dehydrate for at least 5 days at room temperature. If it is humid, it may take longer to reach an adequate dryness.
  • Store with desiccant. Desiccant removes moisture from your seed container use a food-grade desiccant packet to ensure the seeds stay dry during storage.

Tip: Always wear nitrile gloves when harvesting seeds from spicy peppers!

What about cross pollination? Different pepper varieties can easily cross pollinate in your garden. This means that your saved seeds may be a first generation hybrid between two different varieties, leading to a much different pepper plant. Flavor: Hoo boy, this is some hot stuff. Over the course of my tasting, there were many nights when I re-sampled a few dozen hot sauces at a time. Peppers are categorized partially by their heat level on the Scoville scale:

  • Sweet/mild chili peppers
  • Medium hot chili peppers
  • Hot chili peppers
  • Paprika chili, which is usually dried and ground.
  • Soroa chili, also dried and ground.
  • Aji Panc, a very mild deep red to burgundy pepper.
  • Santa Fe Grande, or yellow hot chili
  • Anaheim, a mild and medium sized pepper used both green and red.
  • Poblano is a very popular variety that is dark green, gradually ripening to dark red or brown and is often dried called ancho chili.
  • Hatch chili peppers are also in the mild Scoville scale and are long and curved, perfect for stuffing.
  • Peppadew peppers are grown in the Limpopo province of South Africa and are actually the brand name of sweet piquant peppers.
  • Espanola, Rocotillo, and New Mex Joe E Parker peppers are also on the mild side.

Pasilla chili peppers are really interesting. They are dried chilaca peppers known as pasilla bajio or chile negro when fresh. Eight to ten inches long, this peppers heat index ranges from 250 all the way up to 3,999 Scovilles. So, these peppers range from mild to medium.

Getting a little bit warmer, here are a few medium choices:

  • Cascabel chilies are small and deep red.
  • New Mex Big Jim are a giant varietal and is a cross between a few different types of chilies and a Peruvian chili
  • Still hotter are Jalapenos and Serrano peppers, which I have found can vary from very mild to slightly spicy.

This is your standard bell pepper about four inches in length , smooth, and typically four-lobed at the base. They age following the typical pepper color pattern: from green to red as they mature on the vine.
