Im a fan of seafood, as well as quick and easy cooking. When combined, dining is such a joy to behold. Thats why I love this recipe for Steamed Mussels with White Wine.

Dinner doesnt get any easier. With just a handful of ingredients and in 10 minutes or so, youll have yourself a meal that is just divine!

Dont shy away from seafood, especially mussels. They are delicious, plus simple to prepare.

You might think that a gal located in the midwest wouldnt have access to fresh mussels. The truth is, my fishmonger gets all sorts of seafood, including mussels, flown in fresh from the East , so I have access to mussels all year long.

And, speaking of fishmongers, its always best to buy fresh mussels. Theres nothing like the taste of them. And be sure to ask your fishmonger to add a couple of extra mussels to your order just in case there are one mussels that fail to open.

Cooking Tip: Unopened mussels means they are dead to begin with and can make you quite sick if you eat them. Throw these away immediately.

Not all mussels are created equal. Its aways best to buy fresh. Dont short change yourself on thisbelieve me.

In addition, I like to ask my fishmonger to put the mussels on ice to keep them chilled until I get home. That way, they stay fresh until its time to cook.

Now, its time to prepare your mussels for cooking.

Mussels In Creamy White Wine Sauce

Bring a taste of France to your dinner table with mussels in a white wine sauce. This mussel recipe is the ultimate indulgence you can whip up in no time at all with our cooked mussels. Simply reheat them in the sauce and you are good to go.

Serve with a slice of crusty bread or fettuccine to mop up every last bit of the delicious sauce off your plate.

Ingredients

  • 1 small finely chopped brown onion
  • 2 cloves of garlic, crushed
  • 6 8 thyme stalks
  • 200ml Boston Bay Wines Reisling
  • 1 kg fresh mussels

1 Heat oil in a large pot.

2 Add butter in pot.

3 Add onion then sauté for 3 mins or until lightly browned.

4 Add garlic and thyme and then sauté for 1 min.

5 Add white wine and 1kg of drained fresh mussels.

6 Place lid on pot and cook for approximately 5 mins.

7 Sit in cream and re-heat.

8 Add the cooked mussels and parsley then place lid on pot.

9 Garnish with parsley, add some pepper and serve with your favourite crusty bread!

But, seating arrangements, or when I make these for more than three or four people, are not always suitable for sharing from one skillet and then I use small, not too deep, bowls to serve the Mussels individually.

The serving also depends on your eaters sharing is fine with the immediate family, or even close friends.

This mussels recipe is a quick and easy showstopper.

  • 200g dry tagliatelle or spaghetti
  • 1 tbsp olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, finely chopped or crushed
  • 200ml dry white wine
  • 1 tbsp chopped fresh parsley
  • 100ml double cream or crème fraiche
  • Salt and pepper to taste
  • Clean the mussels thoroughly and make sure all the shells are tightly closed and without any gaps or cracks. Discard any with shells that are damaged or open.
  • Cook the pasta according to the pack instructions, drain and keep warm.
  • Heat the oil in a pan and add the onion and garlic. Fry over a medium heat for about 5 minutes, until softened .
  • Increase the heat, add the wine and mussels, season with salt and pepper, cover and steam for 5 minutes.
  • Add the cream or crème fraiche and shake to combine with the mussels.
  • Add the pasta and toss through to combine with the cream sauce.
  • Dish up the pasta and mussels between two bowls, discarding any mussels which havent opened.
  • Garnish with the chopped parsley and serve immediately.

    How To Select And Clean Mussels

    To avoid any foodborne illness, I strongly suggest buying living mussels from certified sellers.

    Once the mussels are cleaned and dead, you want to cook them as soon as possible, and anyway within a few hours.

    Store the living mussels in the fridge, into an uncovered glass bowl full of water.

    Just before cooking mussels, select them, and discard any broken mussel.

    Now, rinse and scrub the shells to eliminate any trace of seaweed or debris.

    After that, grab a mussel press it gently but firmly with your fingers, and pull the little string that sticks out from the shell discarding it.

    Repeat this step for any mussel.

    Finally, rinse toughly the mussels until the water comes clean, and store them in the fridge until ready to cook them.

On the outside, the mussels have hair like fibers that sprout on the outside. You can either carefully and gently rip it off or cut them with a knife. After, place the mussels into a clean bowl of water until you are ready to cook them.

    Steamed Mussels In White Wine Sauce Recipe

    Serves 4 as main course. To serve as a first course, just halve the recipe.

    Put the olive oil, shallots, garlic, wine, and oregano in a large, wide-bottomed soup pot and bring to a boil over medium heat. If you want a bit of extra zing, add the red pepper flakes. Add the mussels, cover, and cook for 3 minutes, shaking the pot periodically so that they cook evenly.

    Remove the top. If no mussels have opened, put the top back on, and continue boiling. Check at 1-minute intervals until they open. Once some of them open, remove them with a slotted spoon. As more open, remove them so they don’t overcook. Discard any mussels that remain closed.

    Divide the mussels among 4 bowls. Taste the sauce, and if you want, add salt. Ladle the hot broth over the mussels and garnish with the chopped parsley.
