Ana and Drew Stevens knew their fiery food company was at a crossroads in 2016 when they landed a deal for their hand-made hot sauces to sit on the shelves of Sobeys entire Ontario retail network. The fledgling family business already had products in approximately 70 independent stores across the province, but the relationship with Sobeys was a significant step into the mainstream grocery space. It would mean much wider distribution and potential sales. It would also require a substantial scale up in production.

At the time we were still doing production in a church basement, recalls Ana Stevens, co-owner of Pepper North Artisan Foods. It was an exciting time for our company, but it also forced us to think about what we were doing and how we were going to fill those larger purchase orders.

They had to decide either to go with a co-packer or start producing sauces themselves on a bigger scale, adds co-owner Drew Stevens. Losing control of quality was a main concern. One of our core values is to create the highest-quality product possible. Because it was so important for us to maintain the quality we decided we were going to continue to self-produce.

Recognizing the gap in the market, the Stevens began drying their ever-widening range of homegrown specialty peppers and selling the seeds online.

Tara grew these varieties as well and here is what she had to say about them: I planted the Ristra Cayenne II Hot Pepper, Sriracha Hot Pepper and Jalapeno Sweet Poppers Sweet Pepper in my raised bed with benches. They were also so sturdy my cucamelons used the plants as a trellis as their tendrils escaped the actual obelisk I had placed around them.

Basket of Fire was planted in my small live edge raised bed thats in my new book Gardening Your Front Yard, and it wasnt long before it was absolutely covered in blooms, and soon after that, peppers. Hot Pepper Sauce Recipe

Pepper Plant Original Hot Pepper Sauce, 10 oz

yields approximately 1 cup


Our cayenne peppers make the best hot pepper sauce.

20 fresh cayenne peppers

1 12 cups white vinegar

2 teaspoons garlic, minced

1/3 cup water


1. Wearing gloves remove the ends of each cayenne pepper. Slice down the center of the pepper to expose the seeds and place in a small saucepan.

2. Place rest of the ingredients in the pan with the peppers.

3. Heat over medium heat until boiling.

4. Reduce the heat and simmer for 25 minutes.

5. Remove the mixture from heat, carefully pour it into a blender & puree until smooth.

6. Place the mixture in a mesh colander over a bowl to remove the seeds. You may need to push the liquid mixture through the strainer and scoot the seeds to the side while straining.

Cool and refrigerate. Can be canned in a hot water bath in 1/4 or 1/2 pint jars, leaving 1/2 inch head space for 10 minutes of processing time.

Hot Peppers For Sauce

Peppers are categorized partially by their heat level on the Scoville scale:

  • Sweet/mild chili peppers
  • Paprika chili, which is usually dried and ground.
  • Soroa chili, also dried and ground.
  • Aji Panc, a very mild deep red to burgundy pepper.
  • Santa Fe Grande, or yellow hot chili
  • Anaheim, a mild and medium sized pepper used both green and red.
  • Poblano is a very popular variety that is dark green, gradually ripening to dark red or brown and is often dried called ancho chili.
  • Hatch chili peppers are also in the mild Scoville scale and are long and curved, perfect for stuffing.
  • Peppadew peppers are grown in the Limpopo province of South Africa and are actually the brand name of sweet piquant peppers.
  • Espanola, Rocotillo, and New Mex Joe E Parker peppers are also on the mild side.

Pasilla chili peppers are really interesting. They are dried chilaca peppers known as pasilla bajio or chile negro when fresh. Eight to ten inches long, this peppers heat index ranges from 250 all the way up to 3,999 Scovilles. So, these peppers range from mild to medium.

Getting a little bit warmer, here are a few medium choices:

  • Cascabel chilies are small and deep red.
  • New Mex Big Jim are a giant varietal and is a cross between a few different types of chilies and a Peruvian chili
  • Still hotter are Jalapenos and Serrano peppers, which I have found can vary from very mild to slightly spicy.
