Hot Pepper Sauce Recipe

yields approximately 1 cup

INGREDIENTS:

Our cayenne peppers make the best hot pepper sauce.

20 fresh cayenne peppers

1 12 cups white vinegar

2 teaspoons garlic, minced

1/3 cup water

INSTRUCTIONS:

1. Wearing gloves remove the ends of each cayenne pepper. Slice down the center of the pepper to expose the seeds and place in a small saucepan.

2. Place rest of the ingredients in the pan with the peppers.

3. Heat over medium heat until boiling.

4. Reduce the heat and simmer for 25 minutes.

5. Remove the mixture from heat, carefully pour it into a blender & puree until smooth.

6. Place the mixture in a mesh colander over a bowl to remove the seeds. You may need to push the liquid mixture through the strainer and scoot the seeds to the side while straining.

Cool and refrigerate. Can be canned in a hot water bath in 1/4 or 1/2 pint jars, leaving 1/2 inch head space for 10 minutes of processing time.

Laura loves the mild heat and lovely flavor and doesnt care if you judge her for not coming home with something more esoteric.

Growing Peppers In Southern California

At the end of summer, peppers look better than anything else in my vegetable garden. Corn has been harvested and stalks are drying, tomatoes are getting brown leaves from the bottom up, but peppers remain verdant, and adorned by red, yellow, orange, brown, purple, even magenta fruit theyre downright ornamental.

One reason that most other plants are worn out by the time that peppers are coming into their own is that peppers are best planted later than those other summer vegetables. In addition to talking about when to sow or plant peppers, Ill get into a few details about varieties, pests, shading, and supporting peppers, specifically in Southern California.

But first, lets talk about sowing or planting.

Sowing and planting peppers

Last year, 2019, I sowed pepper seeds in trays in my garage on February 13. I planted them in the garden on June 2, shown here:

We began eating from these plants in the middle of summer.

Thats five months of caring for these plants before harvesting from them. Growing peppers from seed is a long process, especially if you dont use heating mats or grow lights to get them started .

So this year, 2020, I chose to grow my peppers from seedlings purchased from Territorial Seed Company in Oregon. The box of seedlings arrived on May 7:

If you do start from seed, then February or March are good times to start. And if you start from seedling plants, then May is the ideal pepper planting month.

Stargazer Hot Sauce Scoville Rating

If you are a true chilihead, I dont think Stargazer will knock your socks off. However, the heat builds to a respectable level, fast. The ghost pepper held the record for the worlds hottest pepper for some time, and they are the 3rd ingredient in this sauce. While heat is around a 4/5 on our heat scale, we have certainly tried hotter sauces. With that said, Stargazer is no slouch!

Heat level: Hot

Flavor: This stuff is the real deal, and youll see it on virtually every tabletop in Belize. Hot Sauce Before Colonization

The early days of hot peppers take place in Central and South America, where they were native to. The civilizations that existed before the bigger empires such as the Aztecs formed started cultivating chili peppers.

It is believed that chili peppers were, along with corn and potatoes, one of the plants that were first cultivated in the Americas as a part of their early practices of agriculture, dating back to about seven or nine thousand years ago in the past.

It has been found through archaeological excavations that chilies were eaten as early as 7,000 BC in South America. However, the Mayans and Aztecs of Central America are recognized as the inventors of the early traditions of spicy foods, which included hot sauces, not long after.

This shows that humans have been using condiments to enrich the flavor and nutritional value of food since almost the beginning. The first pepper plant hot sauces consisted of peppers with water and some herbs safe to say that it hasnt changed much since then.

Ristra Cayenne Ii Hot Pepper

The first variety I have is the Ristra Cayenne II Hot Pepper. This is a little different than their original Ristra Cayenne as it produces more canopy and offers a higher potential for yields.

It offers more peppers per plant and has a mild, spicy flavour. It is great for those who dont want anything too hot but still want a little bit of spice in their life. My kiddo loves the look of these long and twisty peppers, but stays far away from them knowing they have a bit of a kick.

Types Of Hot Peppers For Making Sauce

There are an almost unending number of hot pepper plants to choose from. Chili colors alone range from brilliant orange to brown, purple, red, and even blue. The heat levels vary according to the Scoville heat index, a measure of the capsaicin in the pepper from knock your socks off hot to a subtle tingling on the tip of your tongue.

With such variety its difficult to narrow down which chili pepper to plant. The good news is that they all can make amazing hot sauce. Keep in mind that peppers in the garden tend to cross-pollinate, so unless you plant only one type of hot pepper plant, its really a crap shoot as to how hot different varieties may become.

I like the element of surprise, however, and utilizing different types of hot peppers for sauce making is really somewhat of an experiment. Start with a small batch first. Too hot? Try a different combination, or try roasting the peppers instead of using them fresh, which will impart a whole new flavor profile. Anyway, I digress, back to types of hot peppers for sauce making.
