This has become my go-to sauce for homemade pizza, pasta, lasagna, and the like! Made with canned tomatoes, onion, garlic, and lots of fresh basil, it tastes incredibly fresh and comes together in just about 20 minutes. Whats more, you can easily adapt it to make a quick, creamy vodka sauce!

Last month, Memorial Day weekends frigid temperatures and relentless rain upended our annual camping trip with my sisters family, sending us straight past the exit for the campsite, en route to her home instead.

So in place of heating chili and cornbread over a campfire, we baked pizzas under a roof, in the shelter of a waterproof house, a woodburning oven keeping us cozy all the while. My brother-in-law had made the pizza dough that morning, balled it up, and chilled it until we arrived.

Upon learning the pizza plan, I set to work making sauce. Without enough time to make Inas vodka sauce, my favorite for pizza, I turned to a faster sauce I hadnt made in years: Marcella Hazans other tomato sauce. Unlike her famous one, this one calls for sautéed onions, crushed garlic, white wine, fresh parsley, and a pinch of crushed red pepper flakes. After 20 minutes of simmering, its done.

    Hope you love it, too.

Why Cant Homemade Spaghetti Sauce Be Homemade

When I was a kid, I spent a lot of time in the kitchen cooking. It was fun and satisfying to see my mom make such delicious meals. It was always great, but as I got older, I developed a strange fixation on cooking. If I could just make a perfect meal, I felt like I could finally do what I loved most. I wanted to be the kind of cook who could make their own spaghetti sauce. I eventually learned that cooking was a skill that wasnt for everyone, and I learned to live with that. However, I still felt that it was possible to make your own spaghetti sauce. Then I got married and had a kid, and the whole situation changed. Between cooking, cleaning, washing dishes, and trying to get him to eat, I could never find the time to cook anything for myself. In addition to that, I knew that my time and energy would be best used elsewhere, not in cooking. It was just impossible for me to do.

Low acid tomato sauce needs a boost of acid to be considered safe for water bath canning.

As the last of the seasons big tomato crops roll in, you may be contemplating the many wonderful ways in which to preserve the harvest for use during the long winter months ahead. You may recall a time when your grandmother would pull out a yellowing scrap of paper on which a generations-old family recipe for the “best spaghetti sauce”ever was scrawled in faded ink. Banishing the troops from the kitchen, shed spend a long day whipping up gallons of the stuff, filling gleaming Mason jars and dropping them into a water bath to process.

Youve got the recipe. Youve got the tomatoes. Its time to carry on that long-standing family tradition of canning that coveted sauce just like Grandma did.

Thing is, you probably cant. At least not in the same way.

Times have changed and so, it turns out, has the tomato. Historically, the tomato was considered to be a high acid vegetable. Acidity is essential for safe water bath canning. Because boiling water doesnt get hot enough to kill some of the bacteria in canned produce, we rely on that acid content to get the job done.
