Superhot Hot Sauce Recipe
A homemade hot sauce recipe made with a variety of superhot chili peppers, including Carolina Reapers, 7-Pot peppers and Scorpion peppers. Extremely hot! Not for the faint of heart. For true chiliheads only.
OK, my friends. It is time to reveal one of the hottest hot sauces I have ever made in my own kitchen. Yes, it is homemade and it is crazy hot. Crazy hot in a good sort of way, the way only a serious chilihead can enjoy. Or any true heat lover.
I grow a big variety of chili peppers every year. I love a range of heat and flavors, from flavorful sweet peppers all the way up to superhots with their incredible heat.
I use them in so many ways, and one of my favorites it making homemade hot sauce. I do enjoy milder sauces that focus on flavor over heat, but every now and then, I want some seriously heat in my hot sauce. Thats when this hot sauce comes in a hot sauce made from superhot chili peppers.
Were talking Carolina Reapers, Scorpions, 7-Pot Chili Pepper varieties. A big variety.
Lets talk about how to make superhot hot sauce, shall we?
Safety And The Carolina Reaper
First, this is not your average pepper. Have you ever chopped up a jalapeno and then accidentally rubbed your eyes? It is terrible. It is a whole different ballgame with this pepper and you dont want to play. Use gloves when handling this pepper. If you dont, you may regret it.
We also put this in your oven to broil for a short while and you need to be a bit careful with this, as well. The peppers are hot! When you heat them up, they give off fumes. Make sure you have some ventilation handy and be careful of having any kids or pets around.
Seriously, people. Use your common sense and have a bit of respect for this pepper.

8oz. or 1/2lb. Bhut Jolokia Pods, or Ghost Pepper Flakes
8 – 8oz. Cups of Water
1 – 8oz. Cup of Vinegar
1 – Medium Onion Chopped Fine
4 – Pieces of Fresh Garlic from a Garlic Clove Chopped Fine
1 – Tablespoon of Garlic Powder
4 – Tablespoons of Sugar
Put All Ingredients in a Large Pot on Medium Heat Until it Starts to Boil.
Lower Heat to Simmer, and Cook for 3-4 hours. Stir Occasionally.
You can Use a Potato Masher, or Hand Blender in the Sauce to make it all Really Fine if you wish.
Once Done Let it Stand for 1 Hour, Then put it in your Favorite Sterilized Bottle or Mason Jar etc.

Be Warned, This makes a Really Hot Ghost Pepper Sauce.
Note:
You Can Substitute the Ghost Pepper or Bhut Jolokia Pepper with Carolina Reaper Pepper, Trinidad Scorpion Pepper, Scotch Bonnet Pepper, Habanero Pepper or any other Hot Pepper you like.

Cooking With Carolina Reaper
This sizzling variety is far too pungent to be eaten raw, and even preparing fresh ones with bare hands can cause skin burns, so cooking them in a dish like a hot sauce is the best way to go. If you do prepare them raw, we recommend wearing gloves when working with them and avoid touching other parts of your skin, especially your face or eyes.
These peppers also emit fumes whilst cooking that can make breathing difficult, so be sure to open as many windows as possible and use a fan to fight the fumes. Or even better, try cooking the peppers outdoors, preferably on the grill.
How Long Will My Carolina Reaper Hot Sauce Keep

This hot sauce should keep a few months easily in the fridge, or even longer. Its all about the acidity. To be technical, target level pH for shelf stable foods is below 4.6 pH, but should probably be lower for home cooks, around 3.5 or so, to account for errors. This particular sauce measured 4.3 pH for me, so if youd like it to last even longer, add more vinegar or a citrus to lower the pH. Sauces made with fermented chili peppers will last even longer.

Are Carolina Reapers Hotter Fresh Or Dried
And yes, Carolina Reaper chili is hotter when fresh than when dried. Carolina peppers are hotter after being dried than before being picked. This is because the heat of dried peppers is transferred to air, which is warmer than water. Dried peppers tend to retain their heat longer than fresh peppers. However, this is only true if the peppers were picked fresh. If the pepper was picked dry, both the temperature of drying and the time of exposure to heat will be the opposite. So, if I pick a Carolina pepper and put it in my mouth, Ill get a slightly hotter pepper than if it was fresh picked! This is why you should always check the label of any product you purchase. You want to make sure that the product is fresh and hot. That way, youre not getting a hot pepper that has already been cooked. Also, keep in mind that many brands of chili peppers contain preservatives that can cause the chili to become hotter or even burn your mouth.

Would You Eat A Reaper
Absolutely! I regularly eat reapers, though I respect them enough to use them sparingly. I have once taken a solid bite of a whole reaper and can attest that the heat is extreme. My mouth flamed and eyes watered, and it took at least 30 minutes for the heat to subside.
