How To Make Ghost Pepper – Carolina Reaper Hot Sauce

A homemade hot sauce recipe made with a variety of superhot chili peppers, including Carolina Reapers, 7-Pot peppers and Scorpion peppers. Extremely hot! Not for the faint of heart. For true chiliheads only.

OK, my friends. It is time to reveal one of the hottest hot sauces I have ever made in my own kitchen. Yes, it is homemade and it is crazy hot. Crazy hot in a good sort of way, the way only a serious chilihead can enjoy. Or any true heat lover.

I grow a big variety of chili peppers every year. I love a range of heat and flavors, from flavorful sweet peppers all the way up to superhots with their incredible heat.

I use them in so many ways, and one of my favorites it making homemade hot sauce. I do enjoy milder sauces that focus on flavor over heat, but every now and then, I want some seriously heat in my hot sauce. Thats when this hot sauce comes in a hot sauce made from superhot chili peppers.

Were talking Carolina Reapers, Scorpions, 7-Pot Chili Pepper varieties. A big variety.

Lets talk about how to make superhot hot sauce, shall we?

Safety And The Carolina Reaper

First, this is not your average pepper. Have you ever chopped up a jalapeno and then accidentally rubbed your eyes? It is terrible. It is a whole different ballgame with this pepper and you dont want to play. Use gloves when handling this pepper. If you dont, you may regret it.

We also put this in your oven to broil for a short while and you need to be a bit careful with this, as well. The peppers are hot! When you heat them up, they give off fumes. Make sure you have some ventilation handy and be careful of having any kids or pets around.

Seriously, people. Use your common sense and have a bit of respect for this pepper.

Cooking With Carolina Reaper

This sizzling variety is far too pungent to be eaten raw, and even preparing fresh ones with bare hands can cause skin burns, so cooking them in a dish like a hot sauce is the best way to go. If you do prepare them raw, we recommend wearing gloves when working with them and avoid touching other parts of your skin, especially your face or eyes.

These peppers also emit fumes whilst cooking that can make breathing difficult, so be sure to open as many windows as possible and use a fan to fight the fumes. Or even better, try cooking the peppers outdoors, preferably on the grill.

How Long Will My Carolina Reaper Hot Sauce Keep

Sauce Showdown Three Carolina Reaper Pepper Hot Sauces Go Head

This hot sauce should keep a few months easily in the fridge, or even longer. Its all about the acidity. To be technical, target level pH for shelf stable foods is below 4.6 pH, but should probably be lower for home cooks, around 3.5 or so, to account for errors. This particular sauce measured 4.3 pH for me, so if youd like it to last even longer, add more vinegar or a citrus to lower the pH. Sauces made with fermented chili peppers will last even longer.

The best ph meters that I recommend are from Thermoworks. Get yourself a ph meter from Thermoworks today. I am a happy affiliate.

Are Carolina Reapers Hotter Fresh Or Dried

And yes, Carolina Reaper chili is hotter when fresh than when dried. Carolina peppers are hotter after being dried than before being picked. This is because the heat of dried peppers is transferred to air, which is warmer than water. Dried peppers tend to retain their heat longer than fresh peppers. However, this is only true if the peppers were picked fresh. If the pepper was picked dry, both the temperature of drying and the time of exposure to heat will be the opposite. So, if I pick a Carolina pepper and put it in my mouth, Ill get a slightly hotter pepper than if it was fresh picked! This is why you should always check the label of any product you purchase. You want to make sure that the product is fresh and hot. That way, youre not getting a hot pepper that has already been cooked. Also, keep in mind that many brands of chili peppers contain preservatives that can cause the chili to become hotter or even burn your mouth.

How Does Each Pepper Taste

Descriptions of the Apollo pepper suggest that it tastes like a combination of its parent plants, which means that it should have a blend of their savory and fruity qualities.

It is important to note that most people have only experienced the Apollo pepper in the context of a hot sauce, so its hard to determine the exact flavor profile. The Carolina Reaper is known for the subtle fruity quality in the ripe peppers flavor.

The producer of this exclusive hot pepper is Smokin Ed Currie. His South Carolina-based Puckerbutt Pepper Company has developed a hybrid from red habanero and Naja Viper pepper, another pepper that was once known as the hottest pepper in the world. All he wanted to do was to develop a sweet pepper with a little more strength, and before he knew it, he set a record! The chilli has inherited a scorpion-like tail from Naja Viper and Trinidad Scorpion. It is a red pepper with a total length of about 1.5-2 inches and is the sweetest hot pepper you will find. The Carolina Reaper is not only one of the hottest chillies in the world, but one of the most flavourful and makes one very tasty hot sauce, check out the recipe below.

PuckerButt Purgatory Carolina Reaper Hot Sauce Review

Pepperoni pepper is as low as around 500 when it comes to Scoville heat units, whereas for Carolina Reaper, one of the most pungent peppers in the world, the value is as high as 2,000,000 SHU. Basically, it is really hot and guess what we did.

Youre right, we added it to our sauce. Not much, as there is only 1.4% of dried pepper , yet it is extremely powerful .

Use at your own risk. Spiciness appears over time.

If youre a spicy hot sauce fan with a taste for sweetness, this recipe is the perfect Carolina Reaper hot sauce recipe for you! The banana adds a sweetness to it that isnt overbearing but helps to mellow out the spice slightly so you can get more enjoyment out of your hot sauce.

Hot sauces can very easily become too much for some people and if overdone in the mixing process, can spoil the flavors of the reapers themselves. Banana helps balance this out and enables you to enjoy a delightful and sweet hot sauce that still has that kick youre looking for.

Can I Use Other Peppers For This Recipe

For sure. We have made this hot sauce with both Ghost Peppers and Carolina Reapers. It would work fine for most spicy peppers. So, if you want to use habaneros, they should be fine. Use your best judgment on the size and adjust accordingly. Some Jalapeno peppers are really big and three times the size of a Reaper or Habenero. Adjust accordingly.

    Would You Eat A Reaper

Absolutely! I regularly eat reapers, though I respect them enough to use them sparingly. I have once taken a solid bite of a whole reaper and can attest that the heat is extreme. My mouth flamed and eyes watered, and it took at least 30 minutes for the heat to subside. When I normally eat reapers, I cook them into foods, use them for making hot sauces, or dehydrate them for making chili powders, which is how I usually consume them.

I also enjoy making reaper jelly, which works great as a spread or a glaze for grilling meats.

How Do You Use Fresh Carolina Reaper

The Carolina Reaper peppers have a sweeter and fruitier flavor than most peppers, which is why they are perfect for adding to any dish without altering the taste of what you are cooking. They are also great for stir frying, marinating, or adding onto chili without changing the overall flavor. You can also use them to make a delicious sauce for your favorite dish! The Carolina reaper is a pepper that has long been used in South Carolina, USA. Its name comes from the fact that the plant produces a fruit that resembles a red-hot poker. This fruit is called the Carolina pepper, because it was once used to play poker in its native state. Today, however, this fruit has become a popular ingredient in many dishes around the world.
