Low Carb Spaghetti Sauce
This spaghetti sauce has no added sugar, but is full of flavor. Find a tomato puree that has an ingredient list of one thingtomatoes. Yes, tomatoes have some naturally occurring sugars, but as long as there is not sugar listed in the ingredients, youre golden and will end up with a deliciously low carb spaghetti sauce.
Plus, it is heartyfull of meat and petite diced tomatoes. The kids dont even mind the diced tomatoesbut they have to be petite diced so they are not so noticeable.
How Do You Make Homemade Spaghetti Sauce
Its simple! Sauté onions and garlic in olive oil, add a couple tablespoons of tomato sauce and heat it up for a minute or so, then add the tomatoes.
Add the dried spices: oregano, thyme, bay leaf, a tablespoon of sugar, and red pepper flakes.
Stir well and simmer for at least one hour, but up to three hours. Just before serving, remove the bay leaf, and stir in a little butter, and some fresh basil and parsley.
Serve over your favorite pasta with a sprinkle of freshly grated Parmesan cheese. Buon appetito!
How To Freeze Meat Sauce
Freeze the homemade spaghetti sauce separately and then make fresh spaghetti noodles when youre about to eat it. Defrost the sauce in the refrigerator for 1 day, or, add to a large pot, cover, and heat on medium to medium-low until thawed.
To make this spaghetti sauce for meal prep, freeze the sauce in gallon freezer bags. Lay them down flat so you can stack them flat or upright side by side in the freezer.

I use four different forms of canned tomatoes to make this homemade spaghetti sauce: tomato paste, crushed tomatoes with their juice, tomato sauce, and diced tomatoes with their juice.
Although homemade spaghetti sauce requires a nice long simmer on the stove, most of that time is hands-off. You could also use a slow cooker to simmer the spaghetti sauce on low for 8 hours.

Transfer Cooked Pasta To Sauce
There are a couple of ways to get your pasta from the pan to the sauce. The easiest is to grab a set of tongs for long, skinny pasta, or a metal spider to fish out short pasta shapes, and transfer them directly to the pan with the warm sauce. Alternatively, you can drain your pasta through a colander or fine-mesh strainer, making sure to save some of the pasta water.

How To Make This Spaghetti Sauce Your Own
- If you have a garden full of tomatoes, thats wonderful! You can easily substitute peeled fresh tomatoes for the crushed and diced tomatoes. Roma tomatoes or another meaty variety work best. Youll need about four pounds.
- Add more veggies: Chopped bell peppers or mushrooms can be added. Sauté them with the onions. Or stir in a few handfuls of baby spinach right before serving.
- I like to serve this sauce with homemade meatballs or baked turkey meatballs. Frozen meatballs are so handy. Just add them to the sauce about halfway through the simmering time so they get heated through.
- If you would like to make a spaghetti sauce with meat, sauté ground beef or turkey, or Italian sausage with the onions, and then continue the recipe as directed.
- If you happen to have a rind of Parmesan cheese, put that in the sauce as it simmers to enhance the flavor.
- Make this sauce vegan or Whole30 simply by omitting the butter and sugar.
- Dont have any fresh herbs? Simply add a tablespoon of dried basil and parsley instead.

Part of the appeal of this olive oil and garlic pasta is that its very simple and so delicious! That said, there are ways to dress it up so here are some ideas:
- If you like a little heat add a pinch or two of red pepper flakes when you add the garlic to the oil.

- Olive oil use for sauteing.
- Lean ground beef I recommend 85% lean ground Angus beef.
- Salt and pepper to season the beef and sauce and highlight its flavors.
- Onion and garlic these build a flavor foundation for the sauce. Always use fresh.
- Canned crushed tomatoes Ive actually done a side by side taste taste with several brands and Hunts is best. If you want to puree a can of San Marzano tomatoes that would be delicious too.
- Tomato Paste this adds lots of tomato flavor and helps thicken up the sauce.
- Fresh basil and fresh parsley this gives the sauce so much fresh flavor. Fresh basil in spaghetti sauce is a must in my book.
- Dried oregano since you wont be using much we go with dried, but feel free to substitute fresh if youve got it .
How To Make Spaghetti Sauce: Step

In a pot or braiser, add a couple tablespoons of extra virgin olive oil. Heat over medium/medium-high until just shimmering. Add chopped onions, garlic and finely grated carrots. Cook, stirring regularly for 5 minutes or so.
Now, add in crushed tomatoes and a little bit of water . Season with kosher salt and black pepper to your liking. Stir in dry oregano, paprika and fresh herbs . Bring this party to a boil briefly, then lower heat.
Cover and let the sauce simmer for 15 to 20 minutes . You should end up with a gorgeous sauce that is the perfect thickness. Add a bit of fresh basil or parsley if you have some left.
If you’re after the best tasting pasta, add your just cooked pasta to the sauce and cook for another 5 minutes or so to allow the pasta to absorb the flavors and goodness of the sauce!

Suggestions For Spaghetti Sauce With Fresh Tomatoes
- Fresh tomatoes are obviously best, but what if you dont have fresh tomatoes on hand? What if tomatoes are out of season? Dont worry! You can use a couple of 28 ounce cans of crushed tomatoes.
- If you want to add some extra flavor from your garden, you can add diced red bell pepper, diced green bell pepper, and/or fresh chopped carrots. If you like a chunky homemade garden spaghetti sauce, just chop up any veggies you like and add them while sautéing the onions.
- This sauce is thick, hearty and rich on its own, but you can for you meat lovers, you can add ground beef or chopped smoked sausage to the sauce.
- To thicken your sauce, slow and steady is your ticket. Last time I made this I had it simmering for 8 hours . Trust me, the longer you can let it simmer, the better! If you are finding that the water isnt evaporating as quickly as you would like or it isnt thickening up how you want it to there is an easy fix. Just add some tomato paste, about a tablespoon at a time, until you reach the consistency you are looking for.
- Make a double batch of this glorious sauce and freeze it in a freezer safe Tupperware-type container, a large freezer-safe Ziploc bag or a glass jar. If you do go the glass jar route, make sure to leave an inch or two of space at the top of the jar so the sauce doesnt expand and break. When freezing, make sure to cool the sauce completely in the fridge before freezing.The sauce will stay nice and fresh in the freezer for up to six months.
Variations Serving And Storage
Serve with Parmesan cheese and chopped salad on the side. This is the best cheap and quite healthy spaghetti I have ever had anywhere!
You can also add:
- Olives: I love adding pitted Kalamata olives to garlicky pasta like in this chicken and whole wheat spaghetti. So easy as they come from a jar and add a zest and flavour. I dont even chop them.
- Chicken: Shredded or cubed cooked chicken breast or flavorful leftovers of honey garlic chicken or lemon chicken for extra protein.
- Ground turkey:Pre-cooked ground turkey with salt and pepper is good enough. And ups the protein content.
- Anchovies or sardines: OK, dont call me weird but I love salty canned fish with pasta. So good! Its an European in me.:)
Store: Refrigerate spaghetti leftovers in an airtight container for up to 2 days. To reheat, add to a pot with a splash of water and simmer on low.
