How To Make Chili

Select Your Chilies. First, select and measure out your chili peppers by weight. Four ounces is good. You can choose any type of pepper to make a good chili-garlic paste, though Thai chiles are traditional in some regions. Red, fresh, vibrant peppers are ideal. Consider cayennes, red jalapenos, red serranos, or Fresno peppers to make this sauce.

Add Ingredients to a Food Processor. Add the peppers to a food processor along with 4 garlic cloves, 1 teaspoon sugar, 2 tablespoons white vinegar, and a bit of salt and pepper.

Process Until Smooth. Next, process to form your sauce.

Simmer the Chili Garlic Sauce. Pour all of the ingredients into a pot and simmer them for 10 minutes at medium heat to meld the flavors.

Refrigerate Until Ready to Use. Finally, cool and adjust with a bit more salt and pepper to your personal tastes. Store in a sealed jar in the fridge until ready to use.

Boom! Done! Your homemade chili-garlic sauce is ready to use. It really is very easy to make, and I like it so much better than anything from the grocery store. It’s absolutely delicious.

All you need is a heavy-bottomed saucepan, your collection of ingredients, and 15 minutes until this fantastic sauce is drizzled over everything in sight. Follow my simple step-by-step instructions below to become a master at making garlic chilli sauce!

Be sure to finely mince your garlic and grate your ginger

  • Add to your cold saucepan: Avocado oil and minced garlic. Turn heat on to low to infuse the oil with garlic flavor. Simmer for about 5 minutes.
  • Continue to bloom your oil: Now add ginger and salt to the pan and gently stir cook for 2 minutes.
  • Initial seasoning: Now its time to add your Chili flakes, sugar, sesame seeds, sesame oil, and 1Tbsp of avocado oil. Continue to stir and simmer for 3 more minutes.
  • Additional seasoning: Add the coconut aminos, vinegar, and Sichuan peppercorn powder now. Gently stir everything together, bring the sauce back to a simmer and turn off the heat.
  • Cool to room temperature: Your chilly garlic sauce is now ready to be devoured. Grab some paleo egg rolls, and start dipping or pour your sauce into glass jars and seal. Store in the fridge for up to a month.

    My secret for getting the authentic flavor of Huy Fong is to use red jalapeno peppers. Thats what Huy Fong uses, and they bring out that bright red, hot, peppery hue, and the right level of spiciness. Red jalapeno peppers are quite special and might be hard to find. You are likely to see them at Mexican grocery stores. You might be able to find them in regular grocery stores when theyre in season: March to April and late July to August.

    If you cant find them though, you can use other types of chili peppers. The result wont taste the same as the Huy Fong brand, but it will still be absolutely delicious. Weve made versions with many different peppers and shared them with friends, and we were surprised to find that everyone had their own favorite version.

    NOTE: If you plan to use super spicy peppers , its important to blend them with less spicy peppers so your sauce wont be too hot.

    Adjusting The Heat Level

    I often make this with medium-hot level chili peppers, though realistically you can make this recipe with any type of pepper. Use sweet peppers for a no-heat version that can still be used in many, many recipes.

    Go with ghost peppers or above – see my list of superhot chili peppers – for a seriously HOT version. Best case is to use a good variety for both heat and flavor.

    Wear gloves if needed when working with very hot peppers.
