Cooking The Sauce: The Quick And The Red

You see, when I was cooking down my beefsteak-tomato purée, I had to cook it a long, long time to get rid of all of its excess water, and by the time it was done, it was sooooo delicious: dark red, intensely sweet, and oh so rich. I just kept going back to it with a spoon.

To get that flavor into my sauce, I consulted several cookbooks, and settled on the idea of turning a portion of the purée into a tomato pasteâlike extract in the oven, called estratto in Italian. Its a technique described well by Paul Bertolli in his fantastic Cooking by Hand, and by Rosetta Costantino in My Calabria, and, while its traditionally done in the southern Italian sun, a low oven is the easy alternative.

Because so much evaporation is required to reach the concentrated stage I was going for here, I used only paste tomatoes for this portion of the recipeâId rather let the small portion of beefsteaks in the batch contribute their water elsewhere than have to cook it all off here. Overall, a little less than half of my tomatoes went toward this component .

The method is simple: Pour the purée into rimmed baking sheets or baking dishes , and set them in a low oven, stirring from time to time, especially as it begins to thicken, until a rich, sweet extract is formed. Dont even think of taking a shortcut with store-bought tomato paste here: This stuff is way more flavorful than any canned tomato paste Ive ever tried.

Preparing Fresh Tomatoes For Sauce

Once I’d settled on using a mix of tomatoes, the next step was deciding on how to prep them. Most folks agree that an abundance of skin or seeds in a tomato sauce is not a good thing, but there’s more than one way to remove that stuff from a sauce.

Some recipes call for discarding the seeds altogether, but, as I’ve already mentioned, I like the flavor of the jelly the seeds are suspended in too much to do thatin fact, it has a tartness that I think is essential to creating what will ultimately be a sauce that has a good balance of sweet and tart flavors.

As for the skins, one option is to score the tomatoes, quickly blanch them, and then peel off their skins, a method Kenji describes in his article on peeling and dicing tomatoes. This is fine for small quantities of sauce, but I felt strongly that I wanted to select a method that would work for large batcheswe are doing this in peak tomato season, so we might as well make a lot, and peeling each tomato individually isn’t practical.

The method I know best is one I used when working on farms in Italy, where we would make vats of sauce each week in the peak of summer. The tomatoes are cut into chunks, cores, skins, stems, seeds, and all dumped into a pot and set over high heat until they dump their juices and come to a boil.*

** In fact, in Italian, this watery, fresh-tomato purée is called a passata .

Once we have our tomato purée, the next question is what to do with it.

Best For Baby Food: Green Sprouts Fresh Baby Food Mill

Because of how they work, food mills are great tools for making baby food. However, the large portions that most food mills produce are unreasonable for babies, even if you’re making enough to last a day or two.

The Green Sprouts Fresh Baby food mill is the solution. It’s a tiny model that can make a fresh, single portion of baby food that can be eaten straight out of the appliance.

Operation is simple and straightforward, since you only need to remove the grinding disc, place the food you want to puree , and place the grinding disc back. The sieve holes are small enough that you can puree most seeded foodstuffs such as apples, and the bowl is large enough to comfortably fit safety spoons, so you can feed your baby as soon as youre done.

How Do You Use A Food Mill

For most manual top-crank food mills, place cooked food into the mills bowl and turn the handle so that the blade sweeps through the food, separating skin and seeds and sending purée through the grinding disc. Unless the manufacturers instructions say otherwise, insert the removable disc so that the convex part faces up. Food mills almost always work best if you first cook the food until it is soft. If it still jams up, try reversing the direction youre spinning the crank every few turns.

Electric food mills can work in the same way by toggling a switch or pushing a button. Continuous feed food mills, either manual or electric, work similarly, but may have parts designed and arranged differently so that they can handle high volumes.

The Most Important Factors To Consider

Making tomato sauce
  • Efficient mashing and strainingWhen using a food mill, youd want to be able to mash your food easily and push it through the strainer while leaving out seeds, skin, and other unwanted parts of the fruit or vegetable. For this, look for food mills that have a fine or superfine grind.
  • Grinding discsLook for a food mill that has interchangeable grinding discs to give you different options such as coarse , medium , fine , and super-fine .
  • Handles or hooksIts important to consider a food mill that you can use while being rested on top of a bowl or a pot with the use of built-in or collapsible legs or hooks. This makes it easier for you to focus on milling. Make sure you get plastic or wooden handles for better grip, and as for the hooks most food mills have 2 or 3 legs.
  • Easy cleanup and assemblyFood particles will tend to get stuck in between parts of the food mill. Food mills made of stainless steel tend to be easier to clean and dont get stained as much as plastic food mills. Further, those that can be disassembled can be cleaned easier in case small seeds and parts of the skin get stuck in between its small crevices. They have a quick-release button to disassemble in case you need to make a new batch of sauce too.

Making tomato sauce with a food mill – Denise Calabrese

Food mills are designed to remove both skin and seeds, but how efficiently they do so depends on the grinding disc size. Discs with holes larger than 2 millimeters will likely let some tomato seeds through, but will give you a chunkier sauce. Ultra-fine discs will produce a thinner purée free of seeds.

Q: Which One Is Better: Food Mill Or Food Processor

How to Make and Can Tomato Sauce

A: The food mill is the better one here as it is a straightforward, mechanical, and non-electric machine that can mash the food by straining out seeds and skins. In comparison, the food processor does not strain them out and keeps those seeds and skins in the final mixture, which can ruin the taste of the food you are preparing.
